Dog park fun and healthy meals

Hi guys!  One more day until the weekend!!  Is anyone else ready for Friday?  I sure am!  I was up bright and early for a class at the gym at 5:45 AM… it never gets easier waking up at 5 AM, but it is always worth it and makes my day so much better!

Yesterday it was 65 degrees in Dallas.  Yes, 65 in January.  It is very strange, but I will take it.  We had to take advantage of the warm weather and head to the park with the pups! So we loaded up the car (2 humans + 5 dogs = a very exciting car ride).

The usual green smoothie for breakfast yesterday!

Dinner a couple nights ago was roasted acorn squash with red quinoa, sauteed kale, onions, and garlic (seasoned with lemon juice, balsamic, chili powder, salt, and pepper).

I simply just roasted the squash in the oven, sauteed the veggies on the stovetop, and cooked the quinoa in vegetable brother.  Then put it all together!  So simple, healthy, delicious and filling!  

The makings of last night’s dinner.  Sweet potatoes chopped, oiled, salt and peppered, and ready to roast in the oven!  Fresh green beans washed and edges trimmed ready to be cooked (sauteed with onions and garlic). 

Paired with salmon my husband grilled!

Happy Friday party people!!!! Woo the weekend is finally here and we are getting ready for a dinner party at our house tonight (my sister has called me everyday this week to add an extra guest to the party).  The more, the merrier.  Time to get to work!

Here’s a little look at my busy Thursday!

5AM alarm goes off for my early morning workout class (body pump, ofcourse)… This one was not amused.  Riley is not a morning person (dog) at all.  If I get up before 7am, I usually have to pick him up and carry him to the door or he will not get up.  Hey, I don’t blame him…sleep is good 🙂

Morning yawns and stretches. 5 more minutes mom, please.

Gym followed by a healthy breakfast omelette.  Cook a few handfuls of spinach, whisk 1 egg and 2 egg whites together (add salt, pepper, chili powder, and garlic powder) and pour mixture over spinach.  Cook for a couple minutes (left picture) then flip (right picture) and continue cooking for 1-2 more minutes until golden brown and both sides.

I think every omelette should be served with avocado (salt and pepper) slices on top and a side of sliced bananas.  

I could eat this meal multiple times a day and be happy.

Looking through my new smoothie book for some new recipes to try.  I thought these both looked good!

So off to the grocery store I went to stock up… party food on the top, fresh foods are covered (so many strawberries, bananas, and 4 pineapples…I sure do love my fruit).

Quick lunch of mixed greens, candied pecans (sauteed in coconut oil and tossed with stevia off the heat), strawberries, and balsamic vinaigrette. 

Enjoyed my salad with a side of my favorite Trilogy Kombucha.

My best friend, Lissa, sent me this poster and my husband framed it and hung it for me!  Love it.

Riley so happy to go on a long walk.

Callie was excited too!  She is such a good girl.

How could you not be happy with this weather in January?? 64 degrees on our walk… I just can’t believe it, but I love it!
