Christmas in Indiana Part 2

Good morning!!  I hope your Wednesday is off to a good start!  I just got back from an early class at the gym so I am feeling great!  Exercising will always be my favorite way to start the day.  It just sets me up to make healthier choices throughout the day and puts my mind in a good place.  

So back to where I left off yesterday with my recap of our trip to Indiana.   Sunday morning we opened presents!! My mother-in-law is the best gift giver ever.

And we played a bit of ping pong…my husband has to go easy on me.. he is a lot better than me. 😉

A few hours later, we gathered in the dining room for Christmas dinner. 

We had a huge delicious meal of steak, swordfish, mashed potatoes, rice stuffing, green bean casserole, cornbread, and a pear and walnut salad.  So delicious!

My brother-in-law got me the game Taboo for Christmas so we decided to play that night.  We were laughing hysterically and someone, who I won’t name, may or may not have peed his/her pants. 😉 

My mother-in-law’s mom was a huge Cubs fan so my mother-in-law got us all shirts for a picture for her holiday card this year.  I know, dad, I told her it was against all my morals to wear a Cubs shirt.  🙂

That wraps up our trip to Indiana for Christmas!  We had such a fun and relaxing time with my in-laws over the weekend.   I am sad the holidays are coming to an end, but it is always nice to come home and get back into a routine.  I am soaking up our time at our house now because it won’t be long until we are officially in Nashville!

Cancun Mexico Trip With Jonny

Hi friends!!  I hope you Tuesday is off to a good start.  My started on a rather….icky note due to a furry little guy thinking it was okay to potty inside last night… My dogs are very well behaved and potty trained, but every once in a while.. I won’t name any names (eh hem… Riley…) one of the pups decides he isn’t going to wait until he gets to go outside.  Fortunately the accident was not on carpet… unfortunately I walked right into it my gym shoes this morning in the dark while getting ready to run on my treadmill.  So yeah.. it has been one of THOSE days already and its not even 9am.  

But let’s focus on the positive, shall we?  My husband and I just got back from the most amazing vacation ever in Cancun, Mexico!!  After a hectic morning last Wednesday (my husband forgot his backpack at home when we were on the way to the airport) and a flight connection from hell (for some reason my name was under our reservation twice and my boarding pass wouldn’t let me board our connecting flight to Mexico… they worked to fix it for 20 minutes… meanwhile my husband is on the plane freaking out that I am not going to get on and I’m freaking out thinking he is going to Mexico without me… they finally got it fixed with about 1 minute to spare..).  Needless to say, we were more than ready to get to Mexico and our resort when we finally arrived late Wednesday afternoon.  

We took a short shuttle ride to our hotel, Riu Palace Las Americas.  This was the first time my husband had stayed at an all-inclusive resort so he was pretty skeptical.  I had been to Cancun and all inclusive resorts quite a few times over the years and think it is the way to go for a relaxing, stress-free vacation in the sun.  This resort is absolutely stunning and did not disappoint!

I have stayed at Riu resorts before and while they are all pretty nice, this one was exceptionally nice.  It is also an adults-only resort so I think they definitely helped with the peaceful atmosphere and everything is geared towards adults so that is nice.

There are 5 or 6 restaurants in the resort and none of them require reservations, which is always nice.  There is one buffet and the rest are sit-down dining.  

The food was amazing.  So fresh and tasty.  My husband was so skeptical that the food wouldn’t be good at an all-inclusive, but even he raved about it.  On our last day he said, “well I didn’t have one bad meal.” so I think that explains how good it was!

The resort was beautifully decorated with lots of lights for the holidays.  We went to the nightly show (different every night) most nights, but our favorite was the star impersonations show.  They did Brittney Spears, Elvis, Beyonce and more.  It was amazing!

I am proud to say that all 4 mornings we were there we made it to the gym!  We also played lots of games/sports during the day.  My husband loved the ping pong tournament… until a guy almost 3 times his age beat him. 🙂 🙂 🙂

Speaking of the weather.. it was amazing!  In the 70s and 80s every day except for a little scattered rain on Sunday.  We weren’t too upset though… we just sat under covering and read our books!

The pool is more our kind of place, but we did take a couple walks on the beach.

The entertainers asked us if we walked to play water volleyball… we said sure why not.  They later told us it was tequila volleyball.  Every time you missed the ball, they poured tequila in your mouth… Tequila is not my thing so I tried my hardest. 🙂

Thursday night we went the theater before dinner for a little Black Jack.  Thankfully it was fake money. Gambling stresses me out. 😉

Thursday and Friday nights we went to the Japanese restaurant because we loved it so much! 

We may have had that sushi platter times 3! 🙂 So yummy!

Love this guy!!  So grateful for time away from work and our crazy schedule to spend quality time together.  It is so important to us.

Weekend Recap Continued…Breckenridge, CO for the weekend!

Good morning!!  Who else is feeling a little exhausted today?  My little pup Riley was up all night (not sick), but just fidgeting and not wanting to lay down so needless to say, I did not sleep much.  I made a curry dish last night and he licked the bowl and we are thinking that he might of had an allergic reaction to it.  Eeek.  No more table scraps for that little guy.  

Anyway, back to our Colorado trip.  After a good night’s rest, we woke up Saturday morning ready for a nice hike.  My dad had just visited Breckenridge a couple months ago and suggested a couple hikes to us.  One hike he suggested was the McCullough Gulch.  He said it was pretty steep, but we could do it.  It was only about 3 miles so we decided to give it a try.  He said to drive all the way to the end of the road to park and start at the trail head.

Well the only problem was that the road was closed for repairs so we had to park at the end of the road and start our hike there.  My husband kept insisting that the hike would be too long because we added the extra road to it, but I kept thinking the trail head wouldn’t be too far down the road.

I was wrong.  He was right.  We walked over 2 miles just to get to the trail head, but at this point I was determined to complete the hike.  There is a beautiful lake at the end of the trail.

I made him drink water and eat a snack about every 10 minutes so it would lighten the load. 🙂

When we were down in town the morning of our hike, we saw hikers in shorts and thought they were crazy.  Well… little did I know I would have preferred shorts for about 90 percent of the hike.  But when we got to the very top and turned the corner to see the lake, it was FREEZING!!! That’s why I am wearing my husband’s patagonia in this picture. 🙂

Then he decided he knew a “shortcut” and took us off the path…. into a swamp.  20 minutes later, we were backtracking to find said path.

Thankfully we found it ;).  We were both hurting by the time we finally made it to the car.  Our hike that was supposed to be 3 miles ended up being over 9.5 miles.  So we celebrated.

We cleaned up and headed out for a drink before dinner.

Then we made our way to Blue River Bistro for dinner.

I got the beet salad with salmon and my husband got the ahi tuna special with udon noodles.  We both agreed that this was the best meal of the trip.  

Sunday morning we headed to the local coffee shop, Cool River Coffee House (we did this Saturday morning too) for coffee and breakfast.  We ate our breakfast outside as we watched people (and their doggies) take a morning stroll.  

After breakfast we wondered around town and did a little shopping before stopping in a couple bars to watch some football.  After a couple hours, we were hungry again so we stopped at CB & Potts for lunch.  They have a nice outdoor area and we just couldn’t get enough of the beautiful weather.  I’ll let you guys guess which meal was mine. 😉 

We had such an amazing time in Breckenridge and even if you don’t like snow sports, I would highly recommend visiting in the off months because it is absolutely beautiful.  The town is so cute and quaint and the people are very friendly.  We will definitely be back!

Lake Burton Trip With Friends Part 2

Good morning!!  Hope your day is off to a good start!  I have plans hang out with my mom and sister today so it should be a good one! But first I had to stop in and finish up my recap of our lake trip with our friends! 

Saturday consisted of more boat time and docking up at our favorite little island for some fun in the sun and fetch with the pups!  Riley would stay in the water all day if he could.

We went to the La Prades for dinner and like usual, it did not disappoint.  Rachael and I split the salmon and the grouper (I think) and both were delicious! 

Rachael convinced me to try using her lipstain and I kinda liked it.  I usually am just a chapstick/lipgloss kind of girl, but the color is growing on me!

We had a flight on Sunday night that kept getting delayed (thankfully it didn’t get cancelled) so we were able to grab dinner with our friends at Carrabbas at the airport, which was a great ending to our trip!

Lake Burton Trip With Friends Part 1

Hi guys! Happy Wednesday! Woo, we made it to the half way point!  This week has been physically and emotionally draining on me, but my mom comes into town today so I am really looking forward to seeing her and spending some time just hanging out around the house.  Yesterday I was able to squeeze in a last minute cupping session (you can read about my first one here) to help ease the pain in my neck and back.  It was glorious and the marks are not near as bad as the last time so I think that means my circulation is better?  Who knows.. but I did leave feeling relaxed and rejuvenated.  

Two weekends ago we were in Georgia at the lake for a long weekend with some of our best friends.  We had friends come from Atlanta, Boston and Nashville to spend the weekend with us.  We are so blessed to have such amazing friends that will travel so far to spend time with us.  🙂 Today I just wanted to do a little recap of our fun weekend with our friends. 

My husband and I arrived early on Thursday morning after our flight Wednesday night was cancelled (that has never happened to me before).  We grabbed our rental car and groceries and headed to the lake! We took a short boat cruise before our friends arrived.  Did I mention Riley got to come?  And he gave me so many kisses because he was so happy.  This dog just LOVES the water.

Friday morning started bright and early with a workout crafted by my bestie, Rachel.  If you can’t tell, it was SO hard.  We were all dying by the end, but it was a nice way to start our day.

We spent most of the day on the boat cruising around and playing with the pups!

Friday night we had dinner at home that consisted of grilled chicken, salmon, asparagus, and roasted potatoes and sweet potatoes! so so so good!

We hung out on the boathouse after dinner before taking an evening boat cruise to the marina when we got word that Sammy Kershaw was playing a concert on the lake that night.  He is an old favorite of mine so I was really excited!

Lake Burton Part 2

Good morning!  I hope your week is going well! Can’t believe tomorrow is Friday already!  I love a short week! 

Today I am going to (hopefully) finish up the recap of our trip to Lake Burton last week.  So let’s see…I will pick up right where I left off.

Saturday evening we took a boat ride (or two) to get my mother-in-law out of the house for a bit.  My father-in-law planned to have her two best friends come to the lake for the week to surprise her.  (They both live out of town.)  Getting her out of the house around dinner time was a bit of a challenge (she likes to prep for dinner ahead of time).  Her friends were bringing dinner with them for everyone too.  She had an idea something was up, but she had no idea what it was.

She realized two people were on the boathouse, but she couldn’t figure out who they were….

Until we got closer…. and then this sequence of excitement occurred.  

It was the best reaction EVER!!!! She saw her two best friends marching along…

She is a hard one to surprise so it was really fun to see her so happy!

We spent some time hanging out with everyone before the next surprise came along! 

Over the last couple months, I put together this box with envelopes number 1-60 for my mother-in-law’s birthday.  Inside each card was a note that read, “I love Cathy because….” from 60 of her friends and family.  She was shocked.  It was so fun for her to read them all out loud and discuss how she knew each person.  We all love her very much and were so glad we could make her birthday so special this year.

Saturday night was the firework show on the lake.  We headed out around 9pm to the middle of the lake with all the other boats.

Then the show began.  It was beautiful as always. 

Sunday included more fun…. like the boys jumping off the boathouse!

Then my husband, brother-in-law, Riley and I headed out on the jetskis to the marina for a drink and some corn hole.  (Yes, Riley loves to ride on the jetski.)  We had a fun afternoon just chatting and relaxing in the sun. 

We made it home in time for dinner.  Every night we had a TON of food options (my mother-in-law’s friends brought enough food to feed an army :)).  This night I had grilled shrimp, corn, and a sun dried tomato bean and arugula salad.  It was all sooo tasty!

Then we sang to the birthday girl and cut this massive chocolate cake her other friends from Atlanta brought!  It was almost too pretty to cut….almost.

Sunday night we went out for a night boat cruise.  The boat at night is so peaceful.

And we wore our festive glow sticks (I forgot to pull them out of my bag for Saturday night.). Even Riley got some. 😉 

I spent Monday and Tuesday reading, walking, jetskiing, boating, napping, and puzzling before heading home on Tuesday evening.  It was the most wonderful week at the lake and it always seems to go by SO fast.  Until next time…

The Last of Our Family Lake Weekend

Happy hump day!  How are you all doing?  I’m just glad this week is a short one as we settled back into our usual routine.  I am still adjusting to getting up early (I slept in as much as I could over the weekend and took quite a few naps), but I am sure it won’t take too long to adjust.  I am really looking forward to a weekend at home so we can get some things done around the house and hopefully get some boat time in too.  

I have a few more pictures from our family reunion over the weekend at the lake so here we go! 

Riley and I started Saturday with a walk/run down to Lady Bug Lane (I totally want to live on this street).  The mornings were nice and crisp with a little breeze so we made sure to get our exercise in early before it got too hot.

Then we enjoyed breakfast on the boat house in the sunshine while I did a little reading.  P.S. I finished my book, “Luckiest Girl Alive” and loved it!  I highly recommend it if you haven’t read it.

My sister sent me this picture over the weekend of our Callie girl and I just love it.  She thoroughly enjoyed her time with her aunt, uncle, and cousin while we were away.  She is obsessed with them.

Lunches were fruit and lots of different salads (black bean, quinoa, tuna and bean, etc.).  

Saturday night we had reservations at the restaurant at LaPrades marina.  We took a little boat cruise to get there.

I got the salmon for dinner with green beans and a baked sweet potato with a salad to start.  It was all so yummy! 

The lighting was horrible, but I got in some baby time with our little niece (well, she is actually my husband’s cousin’s baby, but anyway..), Abby.  She is so precious and just loves everyone, especially little Riley (our pup).  

After dinner we went to one of the rental houses that had a huge fireplace outside to play Catch Phrase.  We always die laughing from this game and it is so fun with lots of people.

Sunday started with another long walk/run with the pup.  Love these family signs.

Then we all pulled numbers out of a bowl for the Indy 500 race.  I lost.  My husband won.

It did come in handy for some family pictures! Every year, my husband’s aunt Nancy makes shirts for the cousins to remember the weekend (Thanks Aunt Nancy).  This year they were red! 🙂

We definitely miss the mountains living in Dallas now, but at least we get to visit them often!  We had such a wonderful weekend with family playing games, eating yummy food, and just relaxing! Can’t wait for next year!
