Cancun, Mexico Couples Trip Part 3 … The FOOD!!!

Hey friends!!!  

Today’s post will wrap up my recap of our trip to Cancun.  I saved the best for last because today is all about the FOOD!  When I typically think of an all-inclusive, I think of cafeteria-style food.  ugh!  But I promise you the food was anything but that!  It was spectacular!!  You will see why I went to the gym every morning after reading this post! 😉

Our typical morning began with a gym session followed by breakfast at the buffet.  I am not huge on breakfast food so I didn’t have a huge variety of foods, but what I did have was amazing.  They have a ton of fresh juice options and I always opted for the cactus/celery juice.  I know, I know… it sounds disgusting, but I promise it was amazing.  I also took this time to hydrate before being in the sun all day.  My favorite part of breakfast was the massive amount of fresh fruit available.  It was all so delicious and juicy.  I also stocked up on eggs either over easy or scrambled or both!  And to make my breakfast a little more festive, I topped my eggs with fresh guacamole and pico! yum!

My bestie, Lissa, always watches our pups while we are out of town.  They absolutely love her and it is so reassuring to get pictures and updates during our trip letting us know how they are doing.  It gives me such piece of mind to know they are in good hands.  

Lunch usually occurred around 2pm after a few hours at the pool.  The buffet was the lunch restaurant so we always tried to get a seat by the edge so we could people watch. 🙂

My lunch usually involved more fresh fruit, a piece of fish (or 2) and lots of cooked veggies.  And more guac… always more guac!

For dinner we had the option of the buffet or 5 sit down restaurants.  We tried 3 of the sit down restaurants and had the buffet a couple of the nights for dinner.  The first night we went to the Japanese restaurant.

They brought out two of these sushi boards for us to start with and then we asked for two more.  Eeeekk.. it was so yummy.

I got ahi tuna ceviche and it was amazing.

I got the mahi for my entree, which was good as well.  I love fresh fish, especially when someone else prepares it, so I definitely had my fair share of seafood on this trip.

The last night we had dinner at the steakhouse and I got the grilled salmon, which was some of the best salmon I have ever had.  It was sooo good!

Even the nights we had dinner at the restaurants, we usually finished up the evening with dessert at the buffet since there were so many options.  Exhibit A below… when you love chocolate but can’t make up your mind… you get everything and try a bite of it all.

I had to end the recap with the picture of the delta crew loading guitars onto our plane to Nashville.  Little Big Town was on our flight back to Nashville and I was in total fan girl mode.  I didn’t ask for a picture since it was late and I didn’t want to be annoying, but that is just another reason I LOVE living in Nashville.  You get to see stars in their natural day to day life, which is pretty neat!

Cancun, Mexico Couples Trip Part 1…The Pool, The Beach, and All The Activities

Good morning!!! I am so excited to share our recent trip to Cancun, Mexico with you all!  We had such a great time!  My sister and her boyfriend came with us, which made it even more fun!!

I always joke around and put Riley in my suitcase while I am packing because I hate leaving my pups, but this time he seriously did this on his own…. multiple times.  It about had me in tears, yall.  Fur babies are just the best!

We were all up and at ’em very early on Wednesday for our flights.  We had a short layover in Atlanta before arriving in Cancun.  Our travel was uneventful and we made it to our resort around noon, which was nice because we had the afternoon to hang out.  

We decided to take this trip because my sister and her boyfriend both had spring break from graduate school at this time.  (She is in her last year of law school and he is in his last year of his MBA.)  We looked at a LOT of resorts, but ultimately chose the Riu Palace Las Americas again.  My husband and I vacation here at the end of 2016 and loved it so we decided not to risk it and go with one we both loved.  It is an all-inclusive (!!!) and it is adults only.  The service is wonderful, the resort is very clean, and the food is phenomenal.

Last Hawaii Post… But Certainly Not the Least! Hiking in Maui!

Happy Friday!!! Woo!! We have almost made it to another weekend!!!  We only have a few plans this weekend, which I am all about, but I am sure the plans will pile on as the day goes on. 🙂

One of my favorite outdoor activities is hiking!  When we were living in Utah we frequently woke up on the weekends with hiking being at the top of our priority list for the day.  After being in Dallas where there is no hiking, we sure are happy to have a few hills in Tennessee.  But they are nothing like the mountains in Hawaii!

My sister’s boyfriend’s friend happened to be in Maui the same time we were there.  He takes a family vacation to Maui ever year and knew all the good hiking trails… or so we thought. 😉

Once we arrived at Iao Valley State Park , we parked and headed for the path.  We followed the path until the end, which isn’t very far.  Then we were led over a guard rail to the “real” hike.

The hike began quite easy, but got difficult really quickly.  There was a lot of brush and MUD.

Once we got going it was a pretty neat hike, but way way wayyyy too muddy for my liking.  🙂

On Friday we did the hike that was near our condo we stayed at.  We had been eyeing it all week long so we decided to give it a go.  From the bottom (and in this picture) it doesn’t look steep at all… but I can assure you that it was very very steep.  It was almost like steps up onto rocks the entire time.  The top is about an hour and a half up to the windmills.  We made it about halfway before turning back. 🙂  My husband was a little winded. 😉

Hiking/walking/running are some of the best ways to explore a new place and get a little exercise!  We had such a fun time!!   Although I have probably 500 more pictures of Hawaii, this is officially my last little recap of our vacation!!! We really enjoyed our time on all our adventures and would highly recommend a trip to Maui!  I can’t wait for our next adventure!!

Maui Ocean Center and the Haleakala Crater at Sunset

Hey guys!! How was is your Labor Day weekend going?  I am soaking up the last few hours of vacation in Georgia before heading back to Nashville.  Today I am continuing on with my recap of our Hawaiian vacation!  

We heard great things about the Maui Ocean Center and since we were staying so close to it, we walked over one morning to explore.  We got to see all different types of fish.

My favorites are the colorful ones.  I said, “That orange one looks like nemo.”  My little brother was quick to let me know that the orange fish was in fact NOT nemo. 🙂

Another activity we knew we wanted to do in Maui was drive to the top of the Haleakala Crater.  The best time to go is either sunrise or sunset.  Since the sunrise spots fill up quickly, we opted for the sunset drive and a little more sleep in the morning (it is about a 2 hours drive up so you have to get up around 3am to make it there on time).  We saw this pretty rainbow on the drive.

In about 2 hours you drive from sea level to 10,000 feet in elevation above the clouds!!

The roads are windy and small so if you get car sick, you should take some Dramamine.

We drove up and up and up and finally made it to this parking lot where visitors come to watch the sunset.

We actually hiked up another 10 or 15 minutes to be at an even high vantage point.  If I hadn’t been there I would think these pictures were fake!

Trip to Maui continued… When in Hawaii, You Must Attend a Traditional Luau

Woo!! Its Friday!!! Who else is doing a happy dance today?  I am hoping today flies by quickly so we can get out vacation at the lake started!  Speaking of vacations… I am continuing on today with my recap of our vacation to Hawaii!

When we first began planning our trip to Hawaii we immediately that we wanted to attend a traditional luau.  Unfortunately with our lack of preparation, all of the best luaus were all booked up.  But, fortunately we were able to get on a waiting list and we found out the day before that there was availability for us the following evening!  

We read all the reviews online and were able to get a table at the Old Lahaina Luau.  We were on our way!

We were greeted with mai tai’s (the traditional Hawaiian drink) when we got there.

It is hard to see in this picture, but my sister and I were given little white flowers that we were to put behind our right ears symbolizing that we were taken.  If you are single, you put the flower behind your left ear.

We ate a buffet style dinner with all the local Hawaiian dishes (so yummy) and had some yummy drinks too.  After dinner we relaxed and watched the show.  They performed many traditional Hawaiian dances and chants.  It was really fun to see!

By the end, we were exhausted!  I think we all fell asleep in the Uber ride home. 😉

Vacation in Maui Continued… The Road to Hana

Good morning!!!  How are you guys doing today?  I am thankful we are getting close to the weekend…although it feels like I still have quite a bit to do before then.  Today I am going to recap the next part of our Hawaiian vacation! 

On Monday morning we had planned to wake up early and get on the road to tackle the Road to Hana .  We knew this would be a long day, but after some research we knew this definitely had to be on our itinerary.  

Hana is a very small little town, but there is a reason they say to do the “road to Hana.” This adventure reminds me of the saying, “It is not about the destination, it’s about the journey.”  The road is beautiful and windy and lush.  It is even a little scary at times.  There are tons of stops along the way with short hikes, waterfalls, caves, and other sites to see.  We packed a cooler full of snacks and drinks and headed out around 9am.  Our first stop was this overlook with HUGE turtles and great surfing.  No, we didn’t surf.. we just watched!

The next stop was this short little hike to a couple water falls.

We opted for the easy hike after we realized the hard one included crossing a creek.  We are adventurous, but not that adventurous. 😉

The park had stairs down to a beautiful beach with a cave.  So neat!

We stopped at a few more places along the way with waterfalls and swimming holes.  It was truly an amazing experience.  We made it all the way to Hana (about 2 hours with no stops) and had lunch at a little cafe on the beach.  We ate poke (raw fish – tuna) and burgers and then piled in the car for the long ride back through the curvy roads.  If you ever make it to Maui, I highly recommend this tourist attraction!  I will be back soon with more Hawaii recaps!!

Aloha!!! Recap of our Trip to Maui Part 1!

Good morning!!!  Well I promised you a recap of my recent trip to Hawaii so here it is!  We have been thinking about taking a family trip to Hawaii for a few years now and it was finally time to turn this idea into action!  We decided that since we would just be there for one week, we would just stay in Maui the whole time so we didn’t have to do any more traveling when we got there!  

My husband had a bachelor party in Chicago the weekend we had planned to leave for Hawaii so he headed up there Thursday while I stayed in Nashville until my flight early Saturday morning.  I took a 4 and a half hour flight to LA then connected on a 5 hour flight to Maui.  It was a longggg day!  But Maui is 5 hours ahead of Nashville so it was just one really long day.  I made it until 8 pm (2 am Nashville time) then I passed out hard.  

My dad and little brother arrived a week before us so they picked me up at the airport with a lei! 🙂  We headed to the condo we rented for the week, which was right on the beach. 🙂

After unpacking I got to spend some time with my favorite 10 year old. 🙂

After a little while we took a short little walk on the beach.  The weather was amazing the entire time we were there!

My husband, sister and her boyfriend arrived later Saturday night.  I was already asleep by the time they got in.  With the early bed time and the time change, I was up at 5 am the next day.  We slept with the windows open and awoke to the waves cravings.  It was so peaceful.

Sunday night we had plans to go out to dinner before our evening activity.  We chose Mala Ocean Tavern and it did not disappoint.  I got a teriyaki dish with rice, veggies and fish.  

We caught the beautiful sunset outside the restaurant before we left.

After dinner we headed over to the Hyatt Regency for the Tour of the Stars.  We got to go on top of the building and see all the stars through the huge telescopes.  We even got to see the international space station flying by while we were up there!  It was really a neat thing to get to experience!

Christmas in Indiana Part 2

Good morning!!  I hope your Wednesday is off to a good start!  I just got back from an early class at the gym so I am feeling great!  Exercising will always be my favorite way to start the day.  It just sets me up to make healthier choices throughout the day and puts my mind in a good place.  

So back to where I left off yesterday with my recap of our trip to Indiana.   Sunday morning we opened presents!! My mother-in-law is the best gift giver ever.

A few hours later, we gathered in the dining room for Christmas dinner. 

We had a huge delicious meal of steak, swordfish, mashed potatoes, rice stuffing, green bean casserole, cornbread, and a pear and walnut salad.  So delicious!

My brother-in-law got me the game Taboo for Christmas so we decided to play that night.  We were laughing hysterically and someone, who I won’t name, may or may not have peed his/her pants. 😉 

My mother-in-law’s mom was a huge Cubs fan so my mother-in-law got us all shirts for a picture for her holiday card this year.  I know, dad, I told her it was against all my morals to wear a Cubs shirt.  🙂

That wraps up our trip to Indiana for Christmas!  We had such a fun and relaxing time with my in-laws over the weekend.   I am sad the holidays are coming to an end, but it is always nice to come home and get back into a routine.  I am soaking up our time at our house now because it won’t be long until we are officially in Nashville!

Cancun Mexico Trip With Jonny

Hi friends!!  I hope you Tuesday is off to a good start.  My started on a rather….icky note due to a furry little guy thinking it was okay to potty inside last night… My dogs are very well behaved and potty trained, but every once in a while.. I won’t name any names (eh hem… Riley…) one of the pups decides he isn’t going to wait until he gets to go outside.  Fortunately the accident was not on carpet… unfortunately I walked right into it my gym shoes this morning in the dark while getting ready to run on my treadmill.  So yeah.. it has been one of THOSE days already and its not even 9am.  

But let’s focus on the positive, shall we?  My husband and I just got back from the most amazing vacation ever in Cancun, Mexico!!  After a hectic morning last Wednesday (my husband forgot his backpack at home when we were on the way to the airport) and a flight connection from hell (for some reason my name was under our reservation twice and my boarding pass wouldn’t let me board our connecting flight to Mexico… they worked to fix it for 20 minutes… meanwhile my husband is on the plane freaking out that I am not going to get on and I’m freaking out thinking he is going to Mexico without me… they finally got it fixed with about 1 minute to spare..).  Needless to say, we were more than ready to get to Mexico and our resort when we finally arrived late Wednesday afternoon.  

We took a short shuttle ride to our hotel, Riu Palace Las Americas.  This was the first time my husband had stayed at an all-inclusive resort so he was pretty skeptical.  I had been to Cancun and all inclusive resorts quite a few times over the years and think it is the way to go for a relaxing, stress-free vacation in the sun.  This resort is absolutely stunning and did not disappoint!

I have stayed at Riu resorts before and while they are all pretty nice, this one was exceptionally nice.  It is also an adults-only resort so I think they definitely helped with the peaceful atmosphere and everything is geared towards adults so that is nice.

There are 5 or 6 restaurants in the resort and none of them require reservations, which is always nice.  There is one buffet and the rest are sit-down dining.  

The food was amazing.  So fresh and tasty.  My husband was so skeptical that the food wouldn’t be good at an all-inclusive, but even he raved about it.  On our last day he said, “well I didn’t have one bad meal.” so I think that explains how good it was!

The resort was beautifully decorated with lots of lights for the holidays.  We went to the nightly show (different every night) most nights, but our favorite was the star impersonations show.  They did Brittney Spears, Elvis, Beyonce and more.  It was amazing!

I am proud to say that all 4 mornings we were there we made it to the gym!  We also played lots of games/sports during the day.  My husband loved the ping pong tournament… until a guy almost 3 times his age beat him. 🙂 🙂 🙂

Speaking of the weather.. it was amazing!  In the 70s and 80s every day except for a little scattered rain on Sunday.  We weren’t too upset though… we just sat under covering and read our books!

The entertainers asked us if we walked to play water volleyball… we said sure why not.  They later told us it was tequila volleyball.  Every time you missed the ball, they poured tequila in your mouth… Tequila is not my thing so I tried my hardest. 🙂

Thursday night we went the theater before dinner for a little Black Jack.  Thankfully it was fake money. Gambling stresses me out. 😉

Thursday and Friday nights we went to the Japanese restaurant because we loved it so much! 

We may have had that sushi platter times 3! 🙂 So yummy!

Love this guy!!  So grateful for time away from work and our crazy schedule to spend quality time together.  It is so important to us.

Weekend Recap Continued…Breckenridge, CO for the weekend!

Good morning!!  Who else is feeling a little exhausted today?  My little pup Riley was up all night (not sick), but just fidgeting and not wanting to lay down so needless to say, I did not sleep much.  I made a curry dish last night and he licked the bowl and we are thinking that he might of had an allergic reaction to it.  Eeek.  No more table scraps for that little guy.  

Anyway, back to our Colorado trip.  After a good night’s rest, we woke up Saturday morning ready for a nice hike.  My dad had just visited Breckenridge a couple months ago and suggested a couple hikes to us.  One hike he suggested was the McCullough Gulch.  He said it was pretty steep, but we could do it.  It was only about 3 miles so we decided to give it a try.  He said to drive all the way to the end of the road to park and start at the trail head.

Well the only problem was that the road was closed for repairs so we had to park at the end of the road and start our hike there.  My husband kept insisting that the hike would be too long because we added the extra road to it, but I kept thinking the trail head wouldn’t be too far down the road.

I was wrong.  He was right.  We walked over 2 miles just to get to the trail head, but at this point I was determined to complete the hike.  There is a beautiful lake at the end of the trail.

When we were down in town the morning of our hike, we saw hikers in shorts and thought they were crazy.  Well… little did I know I would have preferred shorts for about 90 percent of the hike.  But when we got to the very top and turned the corner to see the lake, it was FREEZING!!! That’s why I am wearing my husband’s patagonia in this picture. 🙂

Then he decided he knew a “shortcut” and took us off the path…. into a swamp.  20 minutes later, we were backtracking to find said path.

Thankfully we found it ;).  We were both hurting by the time we finally made it to the car.  Our hike that was supposed to be 3 miles ended up being over 9.5 miles.  So we celebrated.

We cleaned up and headed out for a drink before dinner.

Then we made our way to Blue River Bistro for dinner.

I got the beet salad with salmon and my husband got the ahi tuna special with udon noodles.  We both agreed that this was the best meal of the trip.  

Sunday morning we headed to the local coffee shop, Cool River Coffee House (we did this Saturday morning too) for coffee and breakfast.  We ate our breakfast outside as we watched people (and their doggies) take a morning stroll.  

After breakfast we wondered around town and did a little shopping before stopping in a couple bars to watch some football.  After a couple hours, we were hungry again so we stopped at CB & Potts for lunch.  They have a nice outdoor area and we just couldn’t get enough of the beautiful weather.  I’ll let you guys guess which meal was mine. 😉 

We had such an amazing time in Breckenridge and even if you don’t like snow sports, I would highly recommend visiting in the off months because it is absolutely beautiful.  The town is so cute and quaint and the people are very friendly.  We will definitely be back!
