Happy Thursday ya’ll!!! I am currently sipping some coffee trying to stay awake after an early morning Body Pump class at the gym!  Have any of you done the new release?  It is good, but hard!  


I haven’t been cooking or doing anything too exciting this week because I am still trying to get back to feeling 100%.  I have a an appointment for a spinal decompression (I don’t really understand what it is, but it came with a massage groupon my husband bought me) today so I am hoping that helps my back feel a little better.  I will report back about it tomorrow!  

Every once in a while I end up with a ton of screenshots on my phone of quotes or recipes I want to save for later so I thought I would share those with you guys today! 

This Shrimp and Lentil-Herb Salad looks so good!! I love lentils, but I don’t cook them much.  Do you?

I used to make banana “ice cream” for dessert quite a bit, but haven’t in a while.  The date sauce looks delish!!

My sweet tooth is in full force…

Morning ya’ll!  Happy Saturday!! I hope your weekend is off to a fantastic start!  I’ve had a relaxing morning with a body pump class and some lounging around.  Not sure what the rest of the day will consist of, but I know my husband has some projects in the works. 


I don’t know what it is, but I have had the biggest sweet tooth lately.  Don’t get me wrong, I like my sweets (chocolate), but I can usually resist temptation and keep the sweet snacking to a minimum (a few days a week).  There is nothing wrong with having a sweet treat every day, but for me, I feel my best when I don’t indulge daily because usually a handful of chocolate chips leads to another and another and another…you get the point.  🙂

Today I thought I would show you some of my favorite “healthier” options for when your sweet tooth is in full force.  Next time you have a sweet tooth, try one of these options before reaching for that cookie! (My mom wanted me to show you guys her Valentine’s cookies… she’s so cute). 


One of my favorite easy ways to satisfy a sweet tooth is dates.  I love them plain, but they are also delicious with a little peanut butter or almond butter on top!  Another bonus is they are super easy to travel with if you need a snack at work, on a plane ride, or on a roadtrip.  

This picture does not do this sweet treat justice.  Chocolate chia seed pudding.  I followed the same recipe as my regular chia seed pudding just added a couple tablespoons of dark chocolate cocoa powder.  

The topping choices are endless!  I prefer unsweetened coconut, dark chocolate chips, and chopped almonds. 


The last one is another play on the 3 ingredient chocolate truffles.  I customized the fillings and toppings to have a lot of variety and choices. Dark chocolate was always the base.


Some I filled with almonds, coconut and even peanut butter.


Then topped them with a little more dark chocolate and some toppings.  Sea salt is my favorite! 

Just freeze and they are ready to go!  The peanut butter filled ones were the favorite among my husband, sister and my sister’s boyfriend.

Flashback Friday via Rayandtaynutrition

Morning ya’ll!! Happy Friday!! How are you doing today?  Are you guys ready for the weekend?  We don’t have much on the agenda over here, but that is just fine by me! 


You may or may not know that my friend Rachael and I started an Instagram account (rayandtaynutrition) a while ago following our yummy and nutritious eats!  We both kind of let it slip a bit with my wedding and Rachael starting a health coaching business with her sister and life just got crazy busy!

I still post on our page occasionally and still love connecting with other like-minded individuals (which I love doing through my blog as well), but wanted to show you some of my favorite recipes and food pictures from the past year on our Instagram page!  Sometimes I lose track of my recipes and forget about them so this way I can bring them out of hiding and share them with all of you! One of my favorite juice recipes!

This is another favorite!  I really need to get out the old juicer more often… it is just quite the pain to clean.  

I always have fresh cut up fruit on hand in my fridge.


As soon as I get home from the grocery store, I wash my fruit so it is ready to go when I need a snack!


This watermelon is making me crave summertime.  I can eat a whole watermelon by myself in one day.  🙂


We hosted a challenge for everyone to go vegan for 1 month.  Although I eat this way often, it was a challenge and definitely made me more aware of the non-vegan choices I make.  Today, I am all about moderation.  🙂

Then we hosted a 3 day raw vegan challenge.  Now that was hard.. mostly because I like to “cook” dinner.  It is always fun to have a challenge to try to  test your will power though!
