Foodie Friday!

Happy Friday!  I can’t start this post without mentioning what occurred in Dallas last night.  My heart just aches for the families who lost their loved ones.  I pray that our world will be more peaceful.  Let’s all spread love, not hate.  

So last week at the lake, my mother-in-law made this delicious veggie quinoa salad.  I will have to post the original recipe when I get it from her, but I couldn’t wait to get home to make my own version!

Veggie Quinoa Salad 

Ingredients

1 1/2 cups steamed green beans

1 1/2 cups fresh (or canned) corn 

3 cups cooked quinoa 

1/2 cup fresh flat leaf parsley 

1/2 cup sliced almonds 

Dressing

1/2 cup extra virgin olive oil

1/4 cup fresh lemon juice 

1 teaspoon of honey 

1 tablespoon spicy mustard 

1 teaspoon salt 

1/2 teaspoon pepper 

Start by steaming fresh green beans (you could use canned, but I prefer fresh) and chop into bite-sized pieces.  Cut fresh corn off the cob (I like it raw, but you could steam it) and add to bowl.

Next, mix up all ingredients for the dressing.

Add cooked quinoa (cook in water/broth according to package directions) and sliced almonds (I buy them pre-sliced) to the bowl with veggies.  Chop fresh parsley.

Toss quinoa and veggies in the dressing.  Then add the fresh parsley.

Mix it all up!  Add extra salt/pepper if needed.  This salad is perfect by itself or as a side dish.  It will keep for a few days in the fridge.  It just gets better as the dressing marinates! Enjoy!!

Saturday talks

Hi guys! I hope you are all enjoying your weekend and staying warm!  To my friends that got hit with lots of snow, I hope you are enjoying it!  I have to admit, I kind of miss the snow a little bit since we moved to Dallas, but I don’t miss having to drive in it.  I prefer watching the snow from inside my house bundled up on the couch with lots of blankets, a toasty fire, and a cup of warm hot chocolate. 🙂

I am off to a body pump class at the gym and then I have to get ready for Riley’s Therapy Dog exam today (Riley and I are training to be a Dog Therapy team). Let’s hope he passes 😉

Some snow pictures from my mom, dad, and best friend in Nashville.  So pretty!

This is the lovely site I came home to the other day… I thought someone had broken into our house… nope.  The dog we were watching knocked this big picture (with the glass and frame) off of the ledge (that most dogs are scared of going near) and it fell down the stairs.  It was not fun to clean up, but I am just happy that no dogs were injured in the process.  After lots of vacuuming and mopping, I will still be wearing shoes in my house for a while 🙂

Smoothie with spinach, flaxseed, banana, coconut water and frozen mango.  Yum!

And another smoothie with the same ingredients as the previous one plus some frozen berries! 

My go-to easy dinner when the hubs is out of town.  Chopped salad topped with a veggie burger (I buy them frozen) topped with avocado.  SO easy and never gets old!

Another yummy meal with red quinoa (cooked in vegetable broth), corn, black beans, onions, mushrooms, and tossed with fresh cilantro!  

But don’t forget the homemade guacamole (avocado, onion, garlic, salt, pepper, lime juice, and fresh cilantro)!!

You may have seen my chia seed pudding recipe on the blog a while ago, and this is why I love chia seeds!  16 grams of protein for every 3.5 ounces!  So good for you!

Roasted butternut squash and quinoa lettuce wraps

Good morning, friends!! I hope your Wednesday is off to a great start!!

So you know those times when you have a bunch of random leftovers/food in your fridge and your don’t know what to make for dinner?   Sometimes you can just throw them in a piece of lettuce and go with it.  Sometimes it works, sometimes it doesn’t.  

I am a huge advocate for not wasting or throwing away food.  I recently heard my husband tell my sister, “Taylor will make me stuff my face before I throw away uneaten food.”  While my intention is definitely not to stuff myself (or my husband), I take pride in buying only what we need and coming up with creative ways to use up the food we purchased.  So often that means coming up with meals from the limited options left in the fridge.  So in comes the Roasted butternut squash and quinoa lettuce wraps. 

Roasted butternut squash:

  1. Peel and chop the butternut squash.
  2. Toss with olive oil, salt and pepper and roast at 450F for 30-45 minutes depending on your oven and the size of your squash pieces.
  3. Toss every 10-15 minutes to avoid burning.
  4. When squash are almost done, drizzle honey over all the pieces and place back in the oven for 5-10 more minutes.

Red quinoa: 

  1. Boil 1 cup of vegetable broth (chicken stock or water will work too).
  2. Add 1 cup of quinoa (rinsed and drained) to boiling water and bring back to a boil.
  3. Once it comes back to a boil, reduce to simmer (covered) for about 10-12 minutes.  
  4. Season with salt, pepper, and a little olive oil (or butter).

Wash lettuce leaves and spread out on a plate. There is just no way to make a piece of lettuce look pretty in a picture…

Spoon mixture onto lettuce, wrap it up, and enjoy!  Adding sliced avocado doesn’t hurt either 🙂

Just some more ways I ate the butternut squash… on a kale salad with tofu and with the quinoa, avocado, and tofu.  Easy easy easy and used up all my leftovers.

My favorite comfortable shoes for running some errands.  Riley likes them.. and Callie.. well she may be a little scared of them 😉
