Weekend Recap 1.11.16

Happy Monday everyone!  We had a really nice weekend over here with fun, relaxation, and some productivity so it’s a win in my book!  And here Monday is again.. it always comes way too fast.  I managed to pull myself out of bed this morning to take a 6am body pump class so my week is off to a great start already!


Here’s a look at the rest of our weekend.

Saturday omelette after the gym.  I really should branch out a bit with my breakfasts.

But hey, if it ain’t broke, don’t fix it ;).

We watched this sweet boy for the weekend.  He is a sweetheart.

This one had spinach, flaxseed, pineapple, banana, mango, peach and coconut water.  Loving this combo right now.

Easy dinner with spiralized zucchini with pesto, grilled salmon, and a spinach salad.  Delicious.

Sunday morning breakfast while planning a big trip we have coming up in a couple months!


Riley wanted to be held like a little baby the entire time.  So tired.

So for our wedding we had guests sign flat tree rounds (made by my stepdad) instead of a guest book, and I have been wanting to display them.  I showed my husband the kind of shelves I wanted to put them on and he said he could make them so we headed to his favorite store. 


So excited about going to Lowes 😉


We got home and he got to work… shelves in progress.  I will show you a completed picture when they are hung with the guest logs on them. 


I used this stain and might do one more coat.

After lots of walks and games of fetch, they finally decided to rest. 

This is Bennie.  Don’t be fooled by his sweet face… he is a whiner.  Like all day and night…. 

As I was making my coffee this morning, I looked over and saw this.  Callie is guarding her food so Bennie can’t have any (Bennie has no interest in her food at all).  She would not move from this spot.  She has been known to “block out” Riley from the food as well.  We are still learning how to share over here.


Monday morning smoothie after body pump at 6am!  This is the same smoothie as the one up top, but with strawberries added to the mix!

It’s Friday!! a little bit of this and a little bit of that.

Happy Friday party people!!!! Woo the weekend is finally here and we are getting ready for a dinner party at our house tonight (my sister has called me everyday this week to add an extra guest to the party).  The more, the merrier.  Time to get to work!


Here’s a little look at my busy Thursday!

5AM alarm goes off for my early morning workout class (body pump, ofcourse)… This one was not amused.  Riley is not a morning person (dog) at all.  If I get up before 7am, I usually have to pick him up and carry him to the door or he will not get up.  Hey, I don’t blame him…sleep is good 🙂

Morning yawns and stretches. 5 more minutes mom, please.


Really mom?  It is SO early.


Fine, if you insist, I’ll pose for you.  But you must carry me downstairs.


Gym followed by a healthy breakfast omelette.  Cook a few handfuls of spinach, whisk 1 egg and 2 egg whites together (add salt, pepper, chili powder, and garlic powder) and pour mixture over spinach.  Cook for a couple minutes (left picture) then flip (right picture) and continue cooking for 1-2 more minutes until golden brown and both sides.

I think every omelette should be served with avocado (salt and pepper) slices on top and a side of sliced bananas.  

I could eat this meal multiple times a day and be happy.


Riley was so excited to go on a car ride yesterday morning…


Until he found out he had to go get a shot at the vet… Mom, please don’t make me!


Looking through my new smoothie book for some new recipes to try.  I thought these both looked good!

So off to the grocery store I went to stock up… party food on the top, fresh foods are covered (so many strawberries, bananas, and 4 pineapples…I sure do love my fruit).  


Quick lunch of mixed greens, candied pecans (sauteed in coconut oil and tossed with stevia off the heat), strawberries, and balsamic vinaigrette. 

Enjoyed my salad with a side of my favorite Trilogy Kombucha.  


My best friend, Lissa, sent me this poster and my husband framed it and hung it for me!  Love it.


Riley so happy to go on a long walk.

Callie was excited too!  She is such a good girl.

How could you not be happy with this weather in January?? 64 degrees on our walk… I just can’t believe it, but I love it!


The pups sure love this weather too 🙂

Carrot orange juice to kick off 2016

Hi guys!! Happy Thirsty Thursday!! Are you guys thirsty?  I sure am!


I’m sure you would like a post about a yummy cocktail I made, but today I’ve got something even better!  In all honesty, I don’t do cocktails.  I’m a wine and champagne type of girl.  But to kick off the new year on a healthy note, I pulled out the old juicer and got to work.  

I really should juice more often, but it is quite the process with cleaning the fruits and veggies, peeling ones with thicker skin, and cleaning each part of the juicer.  The actual juicing of the fruits and vegetables, now that is the easy part! 



I am ready to make another batch.  This juice is tangy, but well-balanced with the carrots.  And the ginger is so good for an upset stomach while adding yummy flavor too.  You just can’t beat a homemade juice… so much healthier and more flavorful than anything you can find in the grocery store. The color is pretty great too 🙂


Started the day with a glass of the carrot orange juice and a big smoothie (spinach, banana, frozen berries, mango, and a little orange juice for a smoothie consistency).  

I saw this on social media the other day and really liked the message.  All those little choices throughout the day really add up.  Fuel your body right because you only have one  🙂


I don’t often eat greek yogurt, but my husband needed some for a recipe so I am using up the leftovers.  I told you I don’t let food go to waste 😉  This was a snack of greek yogurt with craisins and a little drizzle of honey.  


Okay, so my husband… he is a funny guy.  He really enjoys all his toys (gopro, drone, boat, etc.) and recently ordered a bunch of fun extras for his gopro because he got a really good deal on them.  One of the gopro additions is a body strap to hold the gopro so you can video from your chest (yes, he has the dorky head mount too…).  I came in the door the other day to find him like this… and he asked me if I thought it was okay to wear it to his tennis practice with a new tennis group.  No honey, it is not okay.  I’m not sure that would make the best first impression 😉


He seriously keeps me laughing all day.  He recently shaved off his beard (it needed to go), but kept a creepy mustache with “handle bars.”  He came downstairs after shaving and tried to keep a straight face.  As soon as we made eye contact, we both died laughing.  I don’t have a picture, but trust me, you do not want to see that mustache.  

While the hubby was at tennis, I caught up on the craziness on The Bachelor.  This show… it is just too much 😉


And another clean-out-the-fridge kind of dinner… omelette (1 egg 3 egg whites, sauteed broccoli and cauliflower) topped with avocado and a side of burnt (oops) kale chips (olive oil, salt, pepper, lots of nutritional yeast) and roasted sweet potatoes.  It did the job!
