Saturday musings

Hi ya’ll!!  How are you guys doing today?  I want to say thank you so much for all the love from my blog post yesterday about my grandma.  I really appreciate it.

Today I thought I would keep it light and show you what has been going on in my world the last couple days.  Here we go…

This was my view outside at work the other day.  A huge storm came shortly after.  It has been raining in Dallas all week.  😦

My momma is the sweetest.  She sent my husband and I this card to celebrate our 6 month anniversary.  She also sent us a giftcard to our favorite restaurant.  She is the best!

My husband picked up this popcorn from Trader Joes the other day… I may have eaten almost the whole bag in one sitting.  Oops.

While we were waiting for my mother-in-law at the airport in the cellphone lot, Riley wanted to look out the sunroof.  🙂

And Callie wanted to drive.  😉

My mother-in-law and I made these breakfast cookies yesterday and they are amazing.

I had two this morning with a smoothie and was full until lunch.

So our dining room chairs needed some work.  We decided to recover them while I continue to convince my husband to build me a new table and chairs.  The old covers were dirty and worn out.

My mother-in-law and I headed to the store on Friday to look for new fabric.  Dallas has a huge fabric district with lots of stores close by with tons of fabric options.   We looked at a few and ultimately decided on the beige to keep it simple.

My mother-in-law was the project leader and made our idea happen.  She is so great at all projects.

The end result.  I know it doesn’t look much different than the before, but trust me, in person it makes a huge difference.

The dogs were not fans of the staple gun.

My husband really loves to use his drill. Men love their tools.  🙂

Last night we went to Bistro 31 for dinner and it was amazing as always.

We got the tuna tartar for an appetizer and did not disappoint.  It had spicy mango and avocado alongside the tuna… to die for!!

I am so predictable and got the grilled salmon and veggies, but it was delicious!!  I love perfectly grilled salmon.

Today started bright and early with a 5 mile run, but somebody did not want me to run…

I wasn’t really feeling a run today, but knew I would feel better if I did.  So I turned on a show (How to Get Away With Murder) and ended up running 5 miles and watching the whole thing.  Love when that happens!!

My run was followed by a large smoothie with spinach, flaxseed, banana, mango, kiwi, strawberries, and orange juice and a couple of the breakfast cookies we made yesterday!

Salads Don’t Have To Be Boring

Hi everyone!  We have made it to the halfway point of the week!  This week has been pretty busy, but is flying by!

It is no secret that I love salads.  A lot.  But, I totally understand that not everyone likes them.  I think the main reason people get bored with salads is that they never change up the greens, toppings, and dressing.  I would get bored too if I ate the same salad everyday.  Instead I like to switch my salads up often so they always taste exciting to me.  Today I thought I would show you some of my favorite salad combinations that I have posted to rayandtaynutrition (instagram) to hopefully inspire you to keep salads in your meal rotation.

Weekend Recap 2.29.16

Good morning everyone!  Ah.. Mondays always seem to sneak up so fast!  We had a very relaxing and productive weekend over here so I can’t complain! Lots to do today so I’ll get right to it!

This morning started off bright and early with a 6am body pump class followed by a big bowl of fresh kiwi, peaches and grapefruit and a bowl of overnight oats (recipe to come!).

There was some dog park action this weekend to wear out the pups (we were watching 4 pups). 

Some rooftop lounging occurred, ofcourse!

I made a big batch of kale and purple cabbage salad with a warm vinaigrette to have throughout the weekend. I love using kale as the base of my salads because I can dress them ahead of time and the kale does not wilt like spinach. 

A lot of my meals this weekend looked like this… eating up the leftover quinoa burgers!

Sunday morning started with a 5 mile run while catching up on “How to Get Away With Murder.”  Do any of you guys watch this show?

After my run, we had to run out to our boat (we keep it at the marina about 20 minutes from our house) to do a couple things to get it ready to be put in the water in a couple weeks!  I watched as my husband did all the work 😉

As we waited for the marina workers to get back from lunch (we needed to renew our boat slip and lift agreement), we stopped into Bass Pro Shop to waste some time.  My husband was in heaven… me, not so much.  I did enjoy browsing the boat toys.. I think we may need a few new ones for this summer. 🙂

The rest of our Sunday looked a lot like this…. me + 4 dogs on our small couch.

Tuesday talks and kale salad repeats

Good morning yall!  I hope everyone is having a great week so far!  Ours is rather calm, which is nice before we have a visitor and lots of plans for the weekend.  Grab a cup of coffee and let’s chat!

Much needed cup of coffee today.  I’m not sure why I am so exhausted, but I can’t seem to wake up today.

All of the doggies were super tired last night and took a little nap before bed.  Ahh sibling love… just melts my heart.  (These two have come a long way.. it took quite some time for them to even go near each other).

Have I mentioned I love kale salads? 😉  I always make a huge bowl of washed, chopped, and massaged kale to have for the week so the prep work is already done.  Here are a few ways I have been eating the kale salad the last couple of days.  

Lunch Monday was kale salad with avocado, craisins, pecans and balsamic dressing and a side of roasted sweet potato fries.

Dinner was simple with a kale salad with the same toppings and a veggie burger for some staying power.  (My husband loves this meal, which is always a plus).

Weekend Recap 1.4.15

Good morning!! The holidays have finally come and gone… It is always sad when they come to an end, but it is nice to get back to a routine and some normalcy.  Is everyone headed back to work today?

My Monday morning started bright and early at the gym with you guessed it, a Body Pump class.  I am so so so sore from the class I took on Saturday after not having been to a class in about two weeks.  Needless to say, this morning’s class hurt…like real bad.  

We had a really nice weekend filled with fun and relaxation.  You can see the rest of our weekend in my last posts, but here’s the rest!

Sunday morning started nice and healthy with some fresh fruit (pineapple and pears) and yummy smoothies.  This one had mango, pear, pineapple, spinach, frozen berries, and a little bit of orange juice.

I’m not sure if I have mentioned this on the blog before, but my dog Callie does not like toys.  Not only does she not like them, she is terrified of them.  If you put one in front of her, she will run as far away as possible.  But guys, we made some progress this weekend… we caught her gently playing with this stuffed toy… progress not perfection 🙂

Most of Sunday was spent finishing up taking down our Christmas decorations… so much work.  I told my husband we might not have Christmas next year 😉

Sunday evening, I felt the urge to move a bit (especially since I was SO sore) to shake out my muscles a bit so I headed to my treadmill for a short, easy run while catching up on some shows.

My cute dad sent me this text.  He is trying to do more cooking at home.  SO proud of him!! (Side note: his name is Dad Nashville in my phone because he lived in Switzerland for about 4 years and had different cell numbers… I should change that now that he is back for good :)).

After the gym this morning, I whipped a big filling breakfast omelette (1 egg, 4 eggwhites, leftover broiled tofu, topped with avocado).  YUM!

I am off to go pick up a bridesmaids dress with my sister for our cousin’s wedding later this year!  Then I am off to a much needed massage thanks to my hubby!
