Weekend Recap 10/22/17 Friends in Town, A Finished Project and a Charity event

Hi friends!!!  We made it half through the week!  I am headed out of town today for work until the end of the week, but I thought I would pop in and catch up with all of you first!

How was your weekend?  Too short like mine? ;). The previous weekend my in-laws were in town for a couple days and so we could all go to the Monday night Titans versus Colts football game.  My in-laws live in Indianapolis so they were excited to come down and watch the Colts.  We all got to go in the suite with my husband’s company so that was nice too since it was a little chilly!

You guys.. I just had to show y’all this.  I am obsessed with honey crisp apples.  I used to only buy cheaper apples, but once you get a taste of the more expensive ones aka honey crisp apples, you can’t ever go back.  I was excited last week when they were on sale so I did have to spend over $10 on a couple apples!  Well last Friday I asked my husband to stop by the grocery store for a couple of things.  He took this picture as proof that the store was sold out of my favorite apples because he knows that I would have questioned him. :). He (and I for that matter) think it is ridiculous to spend a ton of money on apples so he had to have proof he wasn’t just getting the cheap ones to save money. 😉 Who else loves honey crisp apples??  Aren’t they the best?

Friday night my husband took me on a little date night for some sushi and wine.  Afterwards it was so nice outside we actually walked about a mile back home so we could enjoy the night.

Later Friday evening our friends, Mary and Luke, from Cincinnati arrived and we caught up for a couple hours before heading to bead.  Saturday morning was an early one.  My mom does a lot of charity work during her retirement and one of the events she organized this year was the Food Panty day where we got enough food delivered to sort and organize to pass out to 250 families.

My mom recruited my two besties and we all got the privilege of wearing these beautiful orange vests because we were assigned “table captains.”  🙂

After the event we met up with our friends for lunch at House.

After a few hours we got ready for dinner and drinks with friends.  We had dinner at Sea Salt. It was really tasty, but the entree portions were pretty small.  I got this harvest salad to start and the grouper for my entree.

Afterwards we headed to a few bars downtown to meet us with some friends and listen to some live music.  We stayed out for a couple hours and then called it a night!

We spent the majority of our Sunday cleaning the house, meal prepping and finally finishing our new dining room table!!!  I am going to share all about it in a separate post soon!! I can’t wait to show you guys pictures!!  I am off to East Tennessee so I will see you all soon!! Have a great Wednesday!!

Tri-Colored Spiralized Salad With Orange Zest Vinaigrette

Happy Friday!!! Who is ready for the weekend?  Do you have any fun things planned?  We are headed out of town tonight for a friend’s wedding and I can’t wait!  I love weddings!  But before I start packing (yeah..still haven’t started) I have a new favorite recipe to share with you all!  

Even though it is technically fall, the 82 degree weather yesterday hardly leaves me craving warm soup.  This recipe is perfect for the in between summer/fall season when you just aren’t quite ready for hearty warm meals, but are still feeling festive!

I am all about my spiralizer these days.  It is such a simple kitchen gadget, but it can make boring vegetables so much more fun.  I think I got mine on amazon for around $30.  

Tri-Colored Spiralized Salad With Orange Zest Vinaigrette

Serves 2 as a meal or 4 as a side dish.

Ingredients:

1 beet, peeled

1 cucumber

1 apple 

1/4 cup dried cranberries 

1/4 walnuts 

goat cheese (add to your liking) 

 

Orange Zest Vinaigrette 

3 garlic cloves 

zest and juice of 1 orange 

2 TBL onion, chopped 

1 TBL honey 

1/2 cup olive oil

1/8 cup red wine vinegar 

1 tsp salt 

1/2  tsp pepper 

 

Directions: 

After peeling the beet and washing the cucumber and apple, spiralize all 3 and add to a bowl.

Next, add all vinaigrette ingredients in the food processor and blend until mixed.  You will have extra salad dressing.  You can store it in the fridge for up to a week.

Pour vinaigrette over spiralized ingredients and toss.

Next, add walnuts, dried cranberries and goat cheese and toss.

Add orange zest strips for some extra color!

This salad is the perfect light fall meal and looks beautiful next to fall table decor.  ENJOY!!!

Fall Favorites

Fall is my favorite season.  Although, fall in Dallas is quite different than fall in the Midwest, I still enjoy the typical fall traditions.  Today I wanted to share my favorite things about Fall and then I want to hear yours in the comments!

1.Colors.  I used to not be a huge fan of fall colors, but overtime, I have grown to love them.  I love the orange, red, yellow, and gold that fall brings.img_2806

2. Leaves.  Along with the fall colors, I just love when the leaves fall.  They are nowhere near falling here in Dallas, but hopefully soon!img_2810

3. The weather.  Like I stated before, fall in Dallas is the the typical fall.  Fall in Dallas can come rather late and as of right now, we are still experiencing temperatures in the high 90s-100s.  I can’t wait for the brisk fall morning walks with my pups.img_2808

4. Pumpkin spice lattes.  Need I say more?img_2816

5. Fall decorations.  This past weekend I brought out my fall decorations and picked some more up at Home Goods and Target.  My favorites are shown throughout this post.img_2807

6. Pumpkin carving.  I love to have pumpkin carving contests and I love roasting the seeds.  I always make some sweet and some salty.img_2818

7. Halloween.  I don’t really love dressing up (more like I don’t love trying to figure out what to wear), but I love putting my pups in costumes.  They love it, I swear. 😉

8. The beginning of the holidays.  I love Fall because I know the holidays are right around the corner and for me that means lots of downtime with family and friends.  img_2817

9. Warm food.  I love soups, chili (sweet potato), and oatmeal in the fall.
