Weekend Recap 2.15.16 Part 2!

Good morning!  How are you doing today?  I am a little tired from the long weekend… does that ever happen to you?  I know I should be more rested since I had a longer weekend, but sometimes that just means I do more and end up starting the week a little tired.  Hopefully my coffee will kick in soon. 🙂

Since my post yesterday only covered part of my fun weekend, I will share the rest with you today!  

I found this on my phone from Saturday afternoon and couldn’t stop laughing.  Otis is such a hoot!

Saturday night we had some friends over and started the night off with some champagne and a fire!

Followed by a delicious dinner of grilled salmon, chicken, tempeh, asparagus, salad and roasted butternut squash and apples (chili powder, cinnamon, olive oil, pecans).  SO yummy! We followed dinner by playing Cards Against Humanity.  So many laughs.

And ofcourse we had to have dessert!  Brownies and this amazing chocolate pie with a pretzel crust (my sister brought and her bf brought it)!

Call me crazy, but I LOVE mango skins.  More than the actual mango.  The skin actually has a ton of nutrients!

Our friends that were visiting love Trader Joes so they made sure to stock up before driving home.  I stocked up on some goodies too! Pecans, shredded coconut, dates, and dried mangoes!

Stocked up on lots of fruits and veggies!  The pineapple at my grocery store has been on sale (.99c) from the usual price of $3.99 so I have been buying in bulk, chopping, and freezing for smoothies.  This is a great way to save money for smoothies as frozen fruit can be expensive!

Sunday, my husband surprised me with red roses (my favorite!).

With this really nice card. 😉  (I call my husband “Bunny” and I have no idea why, but I have for years.)

Then we begun the really fun part of our Valentines Day. 😉  We cleaned all the carpets and rugs in our house…. twice.

Riley and Callie were not happy with the noise from the carpet cleaner. 

We took a quick break to make some lunch.  I used the brown rice tortillas from Trader Joes to make a wrap!  I added avocado, tempeh, and kale salad with craisins, pecans, quinoa and raspberry vinaigrette.

Dinner was so simple with lots of leftovers. We are huge leftover fans! So easy.

That just about concludes our long weekend.  Off to get lots of work done before heading out tonight on a little getaway!  See you all tomorrow!

Dinner, friends, games = party!

Good morning guys!  I hope you are having a fantastic weekend!!  We have had such a great weekend already!!

On Friday night,my sister and her boyfriend helped host a dinner party at our house with 5 other friends.  We were laughing all night enjoying drinks and yummy food and had the best time.

We started the night with this black bean and corn dip serviced with chopped veggies and crackers.

Huge salad of mixed greens, craisins, and sugared pecans (toast with coconut oil, then mix with stevia) drizzled with balsamic vinaigrette.

Lots of sides… rolls, roasted broccoli, sauteed mushrooms (with balsamic and chili peppers) and roasted potatoes with parmasean cheese.

Our yummy spread.  My sister and her boyfriend made pork tenderloin two different ways.

After dinner, we played Cards Against Humanity… my sister and her boyfriend got it for us for Christmas.  If you haven’t played this game, well…let’s just say, it is very inappropriate (and funny) ;).

It was late and dark and so windy so it was really hard to get a good picture with the drone, but hey, we tried! 🙂

Black bean and corn dip and dinner party planning

Happy Saturday!!! I hope your weekend is off to a fantastic start!  We had a big dinner party/game night at my house last night and it was so much fun.  I will share pictures soon!

I really love to entertain.  I love everything about it.  The shopping, the prep, the food, the company, and sharing our home with friends.   I could spend hours in the kitchen chopping fruits and vegetables listening to music or watching a show and I would be so happy… I know, I am a strange one. (I NEVER buy pre-cut food… not because of the price, but I seriously enjoy cutting it… yes, even the harder ones like pineapples and grapefruit).  

But, another thing that comes with my A-Type personality is stress.  I hate feeling overwhelmed and stressed worrying about everything for a party and making sure everything is just perfect.  It never is and never will be.  Something that really helps me to relax is to plan ahead.  I am a huge planner and am constantly making lists I can’t even keep up with.  Don’t judge my horrible handwriting 😉

I make a plan of what I am going to make then make a grocery list from that.  I shop a couple days early and get everything organized.  

A night before the dinner party, I wash veggies, chop veggies (for appetizers and sides) and make anything ahead of time that I can. 

The makings of a delicious black bean and corn dip (avocado will be added before guests arrive).

Black bean and corn dip: 

  1. Drain and rinse 2 cans of black beans 
  2. Add (2 cups) frozen corn (or fresh) and let thaw.
  3. Chop 1 red bell pepper and add to the mix.
  4. Chop 1/2 onion (any kind you like) and add to the mix.
  5. Add dressing and toss.

Dressing for dip:

  1. Chop 3 cloves of garlic.
  2. Add 3 TBL red wine vinegar to garlic.
  3. Add 6 TBL lime juice to mixture.
  4. Add 1 TBL of honey to mixture.
  5. Add 1/4-1/2 Cup of extra virgin olive oil to mixture (your preference).
  6. Season to taste: salt, pepper, chili powder, and paprika.
  7. Pour over bean mixture, stir, and refrigerate until serving (This dip gets better as it marinates in the dressing).  
  8. Add chopped avocado (as much as your want) right before serving.
  9. Enjoy!

More chopping to do!

The more planning you do ahead of time, the better.  I like to feel relaxed when guests arrive and not spend the entire time in the kitchen.

We are all happy it is the weekend!!!! 

This isn’t the prettiest smoothie there ever was, but it is the tastiest!!  This one had spinach, flaxseed, banana, strawberries, peaches, pineapple, and a little orange juice!  Delicious!!!

Riley loves to chase the tennis ball up and down the stairs.. too cute.

Callie likes to watch and cuddle mom.  I don’t mind one bit 😉
