Weekend Recap Continued…Breckenridge, CO for the weekend!

Good morning!!  Who else is feeling a little exhausted today?  My little pup Riley was up all night (not sick), but just fidgeting and not wanting to lay down so needless to say, I did not sleep much.  I made a curry dish last night and he licked the bowl and we are thinking that he might of had an allergic reaction to it.  Eeek.  No more table scraps for that little guy.  

Anyway, back to our Colorado trip.  After a good night’s rest, we woke up Saturday morning ready for a nice hike.  My dad had just visited Breckenridge a couple months ago and suggested a couple hikes to us.  One hike he suggested was the McCullough Gulch.  He said it was pretty steep, but we could do it.  It was only about 3 miles so we decided to give it a try.  He said to drive all the way to the end of the road to park and start at the trail head.

Well the only problem was that the road was closed for repairs so we had to park at the end of the road and start our hike there.  My husband kept insisting that the hike would be too long because we added the extra road to it, but I kept thinking the trail head wouldn’t be too far down the road.

I was wrong.  He was right.  We walked over 2 miles just to get to the trail head, but at this point I was determined to complete the hike.  There is a beautiful lake at the end of the trail.

So we walked… and walked… and walked…

I made him drink water and eat a snack about every 10 minutes so it would lighten the load. 🙂

When we were down in town the morning of our hike, we saw hikers in shorts and thought they were crazy.  Well… little did I know I would have preferred shorts for about 90 percent of the hike.  But when we got to the very top and turned the corner to see the lake, it was FREEZING!!! That’s why I am wearing my husband’s patagonia in this picture. 🙂

The long, steep hike was definitely worth the views at the top.

And then we headed back down the mountain.

Then he decided he knew a “shortcut” and took us off the path…. into a swamp.  20 minutes later, we were backtracking to find said path.

Thankfully we found it ;).  We were both hurting by the time we finally made it to the car.  Our hike that was supposed to be 3 miles ended up being over 9.5 miles.  So we celebrated.

We cleaned up and headed out for a drink before dinner.

Then we made our way to Blue River Bistro for dinner.

I got the beet salad with salmon and my husband got the ahi tuna special with udon noodles.  We both agreed that this was the best meal of the trip.  

Sunday morning we headed to the local coffee shop, Cool River Coffee House (we did this Saturday morning too) for coffee and breakfast.  We ate our breakfast outside as we watched people (and their doggies) take a morning stroll.  

After breakfast we wondered around town and did a little shopping before stopping in a couple bars to watch some football.  After a couple hours, we were hungry again so we stopped at CB & Potts for lunch.  They have a nice outdoor area and we just couldn’t get enough of the beautiful weather.  I’ll let you guys guess which meal was mine. 😉 

We had such an amazing time in Breckenridge and even if you don’t like snow sports, I would highly recommend visiting in the off months because it is absolutely beautiful.  The town is so cute and quaint and the people are very friendly.  We will definitely be back!

Weekend Recap 10.17.16.. Coors Tour, Dinner in Golden, Concert at Red Rocks

Happy Monday!  Where does the time go?  I can’t believe another weekend is coming to an end and another work week is beginning.  As much as I love the weekends, I am always grateful when Monday morning rolls around and I can get back into a routine.  I am one that really craves routine and I like being on a schedule most of the time.  

So when I left you guys last week, My husband and I were about to leave Denver to head to our home for the weekend in Breckenridge, but we made a few fun stops along the way.  On Friday afternoon, we picked up our rental car and headed towards Golden, Colorado, which is between Denver and Breckenridge.  We had some time to kill before dinner so we decided to take the free tour of the Coors Brewery.

I’m not a beer fan and never have been, but the tour was pretty neat.  We learned a ton of cool facts about Coors and learned that the company is known for a whole lot more than just beer.  They are very big on recycling and giving back to the community.  

Each of these kettles holds 200,000 (12 ounce) bottles of beer!

Coors is very proud of their quality control system and wants to make sure every single beer is perfect.  The three enemies of beer are: age (unlike wine that gets better with time), light, and heat.

 And the best part of the tour = free beer at the end! (My husband got mine too :)).

After the tour, we headed to dinner at Indulge Bistro and Wine Bar.

We got the mussels to split for an appetizer!  Sooo good.

My husband got pizza for dinner.

And I got this salad.  One of the best salads I have ever had.

After dinner we walked around the town for a bit and stopped to grab a coffee and some chocolate before leaving.  

I just can’t get enough of the mountains.  Fun fact:  My husband and I lived in Salt Lake City, UT for 2 years and we went up to Park City to ski or hike in the mountains a few times each month.

Next stop: Red Rocks!  Red Rocks is a concert venue in the middle of the mountains!  It is by far the coolest place I have ever been for a concert.   We absolutely love country music so when we found out Brantley Gilbert was playing Friday night, we hopped right on it.  I will say however that I was definitely not aware of how rock/edgy he is as an artist.  We still had a blast.  You have to climb soo many stairs to get to your seats.

The amphitheatre also looks out over all of Denver.  Such a fun setting.

After a few hours of music, we hit the road for Breckenridge.  We arrived around midnight and as soon and our heads hit the pillows we were out.  I will continue my recap tomorrow as this post is getting longggg!

Denver Day 2

Happy FRI-YAY!!!  It’s a beautiful day in Denver and I finally got a good night of sleep so I am ready to enjoy the weekend!  We are headed to Breckenridge tonight with a really fun stop along the way… I will fill you all in on Monday!  

Let’s back up to yesterday.  My husband had to work during the day so I spent the day reading, working out in the amazing gym at our hotel, getting caught up on some work, and watching a couple shows before my husband got back.

Once my husband got back to the hotel we changed and quickly headed out.  We did a little walking before we stumbled upon, Earls, a cute restaurant with some outdoor seating.  The weather was amazing last night so we grabbed a table outside and ordered a couple drinks.  Wine for me, beer for the hubs.

Their were so many options to choose from on the menu, but my husband choose the Dynamite roll to start.

I chose the warm kale salad with grilled salmon for my entree.  It was heavenly.

My husband got this sticky rice bowl that comes steaming to the table and the waitress mixes in a spicy sauce.  He loved his meal too.

We did a little more strolling around after dinner and then called it a night.  I am off for a quick run before we get packed up for our weekend adventure.  I hope you all have an amazing weekend!!

Hi From Denver, Colorado!

Hi friends!  How is your week going?  I originally typed out “Happy Wednesday” to start this post off, but thankfully realized it is now Thursday.  With the amount of traveling I have been doing and the lack of sleep I have been getting (thanks to a cough that is sticking around), I have no idea what day it is.  

Yesterday my husband and I woke up super early to catch a flight to Denver.  My husband travels to Colorado occasionally for work and he asked if I would join him this time.  Hey, you don’t have to ask me twice! 🙂 After we landed, he was off to work and I headed to the hotel downtown to check in.  I had lots of blogging plans, shopping plans, and gym plans yesterday, but as soon as my head hit the pillow, I was out for over 4 hours.  Guess I needed some sleep. 😉 I eventually did make it down to the hotel gym for 45 minutes of walking on the treadmill.  I am in a weekly step challenge through fitbit so I try to get moving as much as I can.  

After a quick shower, my husband and I headed out to walk to a nearby Indian restaurant for dinner.  We ended up at a place called Little India.

And if you can’t tell by my outfit, it was freezing in Denver yesterday… in the 40s!  And for this Dallas girl, that is quite chilly!  Thankfully today it is supposed to get to the 70s!

 My husband got the Chicken Tikka Masala and I got the Vegetable Biryani.  My husband liked his, but I loved mine.  Warm food on a cold night = the best!

After dinner we headed back to the hotel to catch our new favorite show, Designated Survivor.  Are any of you guys watching this??  We really like it so far!  I am off to the gym for a bit, but I will see you all soon!  

PS. We have some plans here for the weekend, but would love some more input on restaurants/bars/things to do in the Denver area.  We are also headed to Breckenridge for the weekend to explore so any tips there would be great too!
