Last Days in the Cayman Islands

Happy Friday yall!!! We are doing the Friday dance over here!!  My best friend is in town visiting and we have lots of fun things on the agenda this weekend starting with brunch with my sister today let’s get right to it!

So on the last full day in the Caymans, I looked out the window to see this… It’s all about the teamwork. 🙂


The boys resorted to climbing the coconut trees when they could no longer get anymore coconuts down.

A lot of our meals were made up of salad, lots of grilled veggies, grilled fish and meat.  And roasted potatoes.  Lots of potatoes.

On the last night (only 4 of the 7 of us were left) we decided to bike to a nearby restaurant and have drinks and appetizers on the beach.


Kaibo is a restaurant with some outdoor seating on the beach and lots of tasty options.

We all split some fresh ceviche and some other dip I can’t remember and both were amazing.  I had a cocktail with champagne and the boys had beergaritas!

And then our trip finally came to an end. 😦    My husband, my sister’s boyfriend, and I had a 6 hour layover  in Miami on our way home (I did not book the flights…) and we decided to get out of the airport and head to South Beach for lunch.  We decided on News Cafe and I had to have one last glass of champs with my salad.  I got the spinach salad with smoked salmon.  yum!

We wandered around for a bit before heading back to the airport.

It was so nice to be home (I missed my bed!), but we were all sad to leave.  We had such an amazing time in the Cayman Islands and are really hoping to make it an annual friends trip!  I hope you all enjoyed my vacation recaps as much as I enjoyed writing them and looking back on our relaxing trip! Cayman Islands Days 4 & 5

Hi everyone!!  I have a couple more days of pictures from our recent trip to the Cayman Islands so I thought I would continue the recap today!  Today is quite crazy as I am so busy and didn’t get much sleep thanks to staying up wayyy too late with my sister planning something fun last night and an early morning body pump class today.  

The next few days in the Cayman Islands consisted of a lot of this…. boys trying to get the coconuts out of the trees.

Then cracking them open to get the coconut water out for some serious fruity cocktails hydration.  (which by the way, is no easy task)  I may or may not have broken my bottom permanent retainer eating the coconut… oops!

So proud of the coconuts! 


Okay, this puzzle looks way easier in the picture, but it took us forever!!! I get my love of puzzles from my momma. (She goes to bed at 8pm, but if there is a puzzle in sight, she has been known to stay up until 3 am trying to finish it). 🙂


Near the house that we stay at is a beach called Rum Point.  We would frequently hang out there in the water, on the lounge chairs, and play volleyball.  The boys played probably 100 games. 😉  They made us girls play against other people who we there in two different times and we won both games!  Although my sister and I preferred to sit on the side lines and watch while sipping our drinks. 😉

Wednesday night my husband and I biked over to Starfish point to see the sunset. 

It was truly breathtaking.

Cayman Islands Over the Edge

Happy hump day! How is everyone doing today?  We are halfway through the week, which is always a good thing!  Come on Friday!! Today is actually my Friday so I am very happy!  My best friend is coming into town tomorrow so life is pretty great right now! 

Okay, enough rambling, let’s get right to it!  When we were in the Cayman Islands, the closest real grocery store (not just a convenient store) was about 45 minutes away from the house we stayed at.  We made 2 trips to stock up on food because we planned to cook most meals at the house because with 7 people, it is just easier to not have to figure out driving, cabs (or lack thereof), and it saves a lot of money.  

We were staying at our friends’ boss’s house in the Cayman Islands (so nice of him to let us use it for the week) and he also offered to buy us dinner one night (beyond generous!) so we made a reservation (which we definitely didn’t need) at a nearby restaurant on the beach called Over The Edge Cafe.

I started with the greek salad and got  the tuna with veggies for my entree.  It was all delicious!!  

These cuties got the mahi mahi and the lobster and raved about their meals as well!

We had such a nice dinner out and it was nice not to have to think about cooking!  And let’s be honest, this was the only time we dressed up and the girls wore makeup the whole trip… this night was needed and so fun!

Cayman Islands Day 2 on the Pirate Ship

Good morning ya’ll!!  How was your weekend?  I can’t believe it is already Monday… where do the weekends go?  We are back on American soil and I am happy to be back into my normal routine and beyond happy to be back with my pups! 

Today I am going to recap last Monday in the Cayman Islands, which was probably the highlight of the trip.  While we were in the Cayman Islands, we stayed at a house about 45 minutes from Georgetown (the biggest town on the island) so we wanted to get out and explore a little bit one day.  We all wanted to enjoy some adult beverages so we took a cab (so expensive) to town.  My sister and husband found a “booze cruise” on a pirate ship so we were all excited, but intrigued to see what exactly this would be.  The price of alcohol (and food for that matter) was very expensive on the island so we were all pretty excited for an open bar.  😉

We arrived in Georgetown a couple hours before our boat cruise so we did a little shopping then grabbed a drink and some appetizers at a restaurant overlooking the ocean. (My sister and her boyfriend in the picture.  I have 100000 pictures of them after this trip.) 🙂 

We asked the pirate ship organizer on the phone – “how are we going to find you in Georgetown?” and he responded – “it’s a 70 ft pirate ship, you can’t miss it.”  The ironic thing is that we actually couldn’t find it and wound up walking to the area where the boats unload freight and we got in trouble. 😉  We walked down the beach a bit farther and found our boat!  At this point we were a little worried this cruise was for children…. 


But we decided to roll with it. (My sister and I both bought new hats for this trip and ended up buying the exact same hat and we didn’t find out until we both put them on that morning…great minds think alike.) 😉

And then the pirates handed us rum punch and all was okay. 🙂


My sister with one of the pirates.  (The boat holds like 20-30 people, but for some reason no other groups signed up for the pirate ship cruise on this specific day so we had the entire boat to ourselves!!!) 🙂 


The pirates made us recite random things and “scrub the deck”.  We were all just wanting to hang out so we were a little concerned the cruise would be like this… 

But then… things got really funny when this guy…

and they held hands when they got ice cold water poured over them!  🙂 I have really great videos of this that I am sure they would not like me sharing with the world. 🙂 They better be nice to me… 😉 


We spent the rest of the day on the boat just relaxing and drinking some more rum punch!


Then we all had to walk the plank….

I enjoyed just hanging out on the plank… the water was so beautiful.

We did a little snorkeling too, but again no pictures of that because my phone would have ended up in the water.  Oh, and we practiced our “titanic” poses.

That wraps up our time on the pirate ship!  We all had a blast (and were very responsible… don’t worry, mom)!!! I will be back tomorrow to show you all some more fun from our trip!! Have a great Monday everyone!
