Thursday thoughts

Happy Thursday yall!  The weekend is near!  Anybody else ready for this week to be over? 🙂 

I just got home from another early morning body pump class and boy am I sore.  Ouch! 


Sometimes you just need a little pick-me-up.  My go-to at Starbucks is a triple grande skinny vanilla latte.  So good!

I just love fresh cut pineapple.  It’s my favorite.


Yummy snack of greek yogurt, craisins and honey.  The honey makes it so good!

I’ve been on a big tofu lately.  I love to top my salads with it for lunch.


And on top of brown rice and veggies for dinner!  With avocado, ofcourse!


I saw this on instagram the other day and it is way too true.  I may or may not have gone a full week without washing my hair… thank goodness for dry shampoo.

Weekend Recap 1.11.16

Happy Monday everyone!  We had a really nice weekend over here with fun, relaxation, and some productivity so it’s a win in my book!  And here Monday is again.. it always comes way too fast.  I managed to pull myself out of bed this morning to take a 6am body pump class so my week is off to a great start already!


Here’s a look at the rest of our weekend.

Saturday omelette after the gym.  I really should branch out a bit with my breakfasts.

But hey, if it ain’t broke, don’t fix it ;).

This one had spinach, flaxseed, pineapple, banana, mango, peach and coconut water.  Loving this combo right now.

Easy dinner with spiralized zucchini with pesto, grilled salmon, and a spinach salad.  Delicious.

Sunday morning breakfast while planning a big trip we have coming up in a couple months!

So for our wedding we had guests sign flat tree rounds (made by my stepdad) instead of a guest book, and I have been wanting to display them.  I showed my husband the kind of shelves I wanted to put them on and he said he could make them so we headed to his favorite store. 


So excited about going to Lowes 😉


We got home and he got to work… shelves in progress.  I will show you a completed picture when they are hung with the guest logs on them. 


I used this stain and might do one more coat.

After lots of walks and games of fetch, they finally decided to rest. 

This is Bennie.  Don’t be fooled by his sweet face… he is a whiner.  Like all day and night…. 

As I was making my coffee this morning, I looked over and saw this.  Callie is guarding her food so Bennie can’t have any (Bennie has no interest in her food at all).  She would not move from this spot.  She has been known to “block out” Riley from the food as well.  We are still learning how to share over here.


Monday morning smoothie after body pump at 6am!  This is the same smoothie as the one up top, but with strawberries added to the mix!

It’s Friday!! a little bit of this and a little bit of that.

Happy Friday party people!!!! Woo the weekend is finally here and we are getting ready for a dinner party at our house tonight (my sister has called me everyday this week to add an extra guest to the party).  The more, the merrier.  Time to get to work!


Here’s a little look at my busy Thursday!

5AM alarm goes off for my early morning workout class (body pump, ofcourse)… This one was not amused.  Riley is not a morning person (dog) at all.  If I get up before 7am, I usually have to pick him up and carry him to the door or he will not get up.  Hey, I don’t blame him…sleep is good 🙂

Morning yawns and stretches. 5 more minutes mom, please.


Really mom?  It is SO early.


Fine, if you insist, I’ll pose for you.  But you must carry me downstairs.


Gym followed by a healthy breakfast omelette.  Cook a few handfuls of spinach, whisk 1 egg and 2 egg whites together (add salt, pepper, chili powder, and garlic powder) and pour mixture over spinach.  Cook for a couple minutes (left picture) then flip (right picture) and continue cooking for 1-2 more minutes until golden brown and both sides.

I think every omelette should be served with avocado (salt and pepper) slices on top and a side of sliced bananas.  

I could eat this meal multiple times a day and be happy.


Riley was so excited to go on a car ride yesterday morning…


Until he found out he had to go get a shot at the vet… Mom, please don’t make me!


Looking through my new smoothie book for some new recipes to try.  I thought these both looked good!

So off to the grocery store I went to stock up… party food on the top, fresh foods are covered (so many strawberries, bananas, and 4 pineapples…I sure do love my fruit).  


Quick lunch of mixed greens, candied pecans (sauteed in coconut oil and tossed with stevia off the heat), strawberries, and balsamic vinaigrette. 

Enjoyed my salad with a side of my favorite Trilogy Kombucha.  


My best friend, Lissa, sent me this poster and my husband framed it and hung it for me!  Love it.

Callie was excited too!  She is such a good girl.

How could you not be happy with this weather in January?? 64 degrees on our walk… I just can’t believe it, but I love it!


The pups sure love this weather too 🙂

Weekend happenings

Hi guys!! Happy Sunday!  I hope you are all doing well and enjoying your (hopefully) long weekend!  We sure are over here.  We are hoping to catch a movie today, but before we do, here’s a look at our Saturday!


My dad sent me this picture from his lakehouse in Tennessee.  Isn’t the view gorgeous?


Saturday morning started off nice and early with a doggie walk and then my favorite Body Pump class.  It was so crowded…like no more equipment or space kind of crowded.  While I do love the enthusiasm of the new year resolutions and people wanting to get in shape, I do kinda look forward to February once the overcrowding at the gym has died down a bit.  🙂


Refueled with a veggie scramble after the gym (sauteed broccoli and spinach, then added one egg and two egg whites and cooked for a couple more minutes.  Added salt, pepper, chili powder, avocado, and nutritional yeast before eating).

Do you guys use this stuff?  I love roasting kale in the oven with olive, salt pepper and some nutritional yeast.  It is high in B vitamins and can be used in a variety of ways.  I sometimes use it in the place of cheese in recipes.

Then we had some spiralizing to do.  My husband is making some kind of chicken stuffed peppers with pickled veggies on top from this book and needed to get the veggies pickled for Sunday (it takes 24 hours).  


Then we went to get a much needed car wash and my husband really wanted me to show you guys some pictures 😉 

Callie and Otis just love playing together.  It’s adorable.

Saturday night we were going to go get sushi, but the restaurant we wanted to go to was packed so we opted for a little hole in the wall thai place and it did not disappoint.
