We’ve been cooking!

Hey friends!! Two blog posts in one week… who am I? I am trying to get better organized over here and part of that is planning more time for blogging because I sure do love it.

Here is last week’s bump update! Last Thursday was 32 weeks and today marks 33!! Under the 50 day mark now!!! EEEEEK!

I should also mention that we are now at the point in pregnancy where I literally cry at everything and I mean everything. The other day my MIL sent us the sweetest letter just talking about how much love we will have for our baby and how are lives are about to change for the better and I sobbed so hard. But, I also cried the other day thinking about how much I love my dogs. Pregnancy hormones are intense yall! LOL

Jonny made my first mother’s day really special by surprising me with some beautiful flowers, a really sweet card and some antacids… LOL. 🙂

Everyone always asks what my pregnancy cravings are and I still haven’t had any like really weird cravings or something I crave every day. But I will say, I have been craving cereal and I haven’t eaten cereal since I was a little girl. I am loving honey nut cheerios with sliced bananas so I guess that is a strange craving for me!

I bought these frozen acai packets so we could make smoothie bowls so I have been loving those lately. I typically add the frozen acai packet, frozen mixed berries, peanut butter, vanilla protein powder and almond milk. I will top the bowl with unsweetened coconut, peanut butter and granola. Someone is always watching me when there is food involved..

Speaking of granola… I found this at Target the other day and I really like it. I’m not grain free, but I also don’t love granola that has tons of oats so this one was right up my alley.

Jon and I made homemade summer/garden rolls with veggies and shrimp the other night and they were a big hit. We used rice paper, cucumbers, fresh basil, lettuce, carrots, rice noodles and shrimp!

We used a store bought peanut sauce.. it wasn’t my favorite. I am still on the hunt for a good store bought peanut sauce or a good recipe that doesn’t require a million ingredients. Let me know if you have one you like!

I have been making a lot of wraps/lettuce wraps with cooked veggie burgers chopped up, lettuce, tomato and dijon mustard. This makes for an easy lunch or quick dinner. And I am still using my air fryer frequently for sweet potato fries.. my fave!

My husband and I love fish tacos and we have been trying to perfect ours at home and have realized that less is more with all the toppings. Our favorites of the moment are: corn tortillas, blackened fish (typically cod), lettuce, fresh cilantro, sliced avocado, and this Diablo Verde (creamy cilantro sauce) that we get from our local HEB grocery store. They are sooo good. We usually make enough to have them for multiple meals because we love them so much.

My husband has a big sweet tooth and loves brownies and ice cream so I have been making a batch every week or two. My trick is to top with chocolate chips straight out of the oven and then spread the melted chocolate all over the brownies after a few minutes. It hardens up and makes the brownies extra decadent. Yum!
