Cauliflower Fried Rice with Shrimp… an Easy, Healthy, and Delicious Meal

Happy Friday Friends!!!!  Are you ready for the weekend?  I sure am!!  I have lots of girl time planned with my besties because my husband is on a boys trip at the lake this weekend.  My husband and I went to a movie on Tuesday night this week (they have $5 movie night on Tuesdays at a theater near us) and decided to see Crazy Rich Asians.  Have any of yall seen it?  We both thought it was pretty good and want to see it again because there are so many good one liners. 🙂 

You guys know that I am terrible about measuring/making exact recipes, but I thought I would share a yummy meal I had with you guys this week!  I have used cauliflower rice (ground up cauliflower) quite a few times to make a similar dish, but this time I went the easy route buying already riced cauliflower instead of using the food processor to make it myself.  It is 100% worth the extra few bucks to have this step done for you.  

I started by cooking up some chopped onion, mushrooms, and garlic in a pan on the stove.  Next I add some chopped carrots and red bell pepper.  While those were all cooking down I put the cauliflower rice in a pan with a little oil to start browning it up a bit.  After the veggies were cooked I added some frozen edamame to the pan with the veggies and let them heat up for a minute.  Once the veggies and the rice were almost finished, I combined them in the bigger pan and created a hold in the middle with the spatula to add in 4 scrambled eggs.  I let them cook for a few minutes, mixing them every so often with the veggies and rice.  When everything was mixed together I seasoned it all with salt, pepper, and fresh chopped parsley.  Then I topped it all with leftover shrimp we cooked the night before (seasoned with salt, pepper, onion powder and chili powder).  I added a few dashes of tamari and dinner was ready!

My husband and I both really like this meal and we usually make enough to have leftovers the next day too!  Yum!!

  1. Oh and for the questions— easy week night meals are usually some type of pasta, fish with veggies, or for me a massive salad! I celebrated my sister in laws birthday with her this weekend, which was a blast. And best movie I’ve seen recently was A Simple Favor!
