Weekend Recap… Friends on Repeat

Hi friends!!  I hope you all had a great weekend!!  We sure did!!  We had a great combination of relaxation and productivity.  It even snowed a bit (it didn’t stick) in Nashville on Sunday.  I am starting a new chapter of my life today in a different career path and I am pretty excited about it.  I’m sure it will take a while to adjust back to working full time and learning a lot of new things, but I am grateful for this opportunity and am excited to switch things up a bit.  

So let’s go back to Friday.  Friday night my husband and I met our friends Rachael and Eric for dinner at Thai Esane.  The restaurant is beautifully decorated and has lots of charm!

These are our two best friends in Nashville so you will be seeing a LOT of them on the blog.  They are two of the nicest, funniest, laid back humans you will ever meet.  Aren’t they such a pretty couple?

We started out with edamame and spring rolls and I got the garlic vegetables with tofu.  It was delicious! 

Saturday morning Jon and I took the pups on a walk in park.  It was sunny, but a little chilly.

On Saturday evening my husband and I went to Rachael and Eric’s house for dinner and games.  We grilled out and just chatted for hours.  Our high school friend stopped by for a little while and it was so fun catching up.  I was a bad blogger and didn’t take any pictures. 😦

On Sunday we tried out a new church, grocery shopped, meal prepped and went to about 6 open houses in the neighborhood we want to live in.  We came home to this. 🙂  Riley loves my dad, it is so sweet.

A little while later Rachael (yes, we saw each other 3 days in a row) came over for a quick workout from the Ashy Bines plan.  It was a burner!!  Do you guys notice Callie two inches from me?  This is all day every day.  She is my little shadow.

For dinner last night we made a bunch of salmon (broiled in the oven) to top a kale salad.  We added red onion, dried cranberries, avocado, pecans, hard-boiled eggs, and balsamic vinaigrette.

After dinner I finished up this blog post and hit the hay early for a good night’s sleep!

Let’s Go Predators…He’s a True Fan Now

Good morning!!  I hope your weekend is off to a good start!  It is unusual for me to post on a Saturday these days, but I was busy running around all over town yesterday that this post just never got finished.  I hope you all had a good week and have a fun and relaxing weekend planned.  We have a couple plans, but hope to keep it low key before a very busy upcoming week. 

Thursday night, my dad, husband, brother, and I had plans to go to the Predators game.  We decided to have dinner at Amerigo’s before the game. I really should just not even show you my pictures of dinner out because you all know what I ordered. 🙂  On my weekend recap, I will have something other than salmon for you to see. 😉

When Nashville finally got a hockey team in 1998, my dad bought season tickets so my sister and I grew up loving hockey and going to a lot of games.  My husband played for fun in college, but never followed any professional team… until he met me.  Well, my dad got him a Predator’s jersey for Christmas so now he is a true fan! 🙂 

Before the game, my little brother always likes to “play” hockey at this cute little practice rink they have set up in the lobby.  My husband loves playing with my little brother (especially XBox since I told him he was not allowed to have one in our house ;)… it really is the cutest.  

My dad is kinda awesome and always gets us great seats!

We had two sets of two seats so we all took turns sitting with each other throughout the three periods of the game.  I got to sit with this guy first! 🙂

Next up was this little cutie pie.  He was all decked out from head to toe in Predator’s gear.  He gets really into the games and loves dancing when the music starts playing during the breaks.  Everyone around us loved the entertainment.

The Predators won the game 4 to 2!  It was such an intense game, which made it so fun!  We will definitely be attending quite a few Predators games while living in Nashville!

After the big W, we headed home.  You can’t see it in this picture, but Jon likes to hold Jacob’s hand in crowds or when crossing the street.  He will be a really good dad one day. 😉

Last Weekend in Dallas

Good morning!  How are you?  We are busy bees around here getting everything settled.  I have a couple more days before I start my new job in Nashville so I am soaking it up.  

Let’s rewind to our last few days in Dallas.  I always have help when I do my laundry…isn’t that nice? 😉  Callie is hiding in “her” corner, but didn’t want to miss out on the picture. 🙂

Friday evening we decided to go bowling.  I bowled terrible the first game, but did great the second game.

Callie gets professionally shaved a few times per year, but we usually shave Riley ourselves.  We definitely underestimated how long it would take and Riley was less than thrilled when we were still shaving away 4 hours later… yeah, next time I will pay the $50 to have someone else do it. 🙂

Then Riley found a new hang out spot.  This is in our garage.  You do not want to see what it looks like right now.

Sunday night we went to Meso Maya with Jon’s aunt and uncle and some family friends for dinner.  I had the salmon (are you surprised?) with fried brussel sprouts.  🙂

When Mimi comes to town, the dogs get whoopie pies.  Aren’t they so cute? 

The first morning my mom was in town, she and Jon walked to the local bakery for some morning treats.  Don’t they look sooo good?

On Monday, Jon, my mom, and I met my sister for lunch at La Madeleine.  It hit the spot!

When we got home, we got all of our clothes packed up for our road trip the following day. Then we needed a nap. 😉  This is where Riley chose to lay.  Can’t blame him.. my head is comfy. 😉

On Monday night, we all went to Yucantan for dinner.

We Made It!

Hi friends!!  How is your Wednesday going?  My mom, the pups, and I made it to Nashville yesterday afternoon.  Although the drive is long, it is pretty easy.  These two were very good in the car.

They were a little unsure of their new home, but quickly settled in and have been sniffing and exploring all morning.

After settling in (minus the 6 suitcases of clothes I have yet to put away), my husband and I (he flew to Nashville yesterday) headed out to dinner with my dad and his girlfriend at Green Hills Grille.  I got the Mediterranean salad and it was soo good!

I was able to pack all my pantry stables so this morning was overnight oats for breakfast after a quick strength workout.

What I Will Miss About Living In Dallas

Hey guys!

Well the time has finally come… we are on our way to Nashville, TN.  This is not quite the final move (waiting on house to sell), but we will be officially living in Nashville this week.  Thankfully we will be staying at my dad’s house until we find a new house so we won’t have to move our things twice.  He is REALLY excited to have 4 new roommates (us and our pups). 😉

As we get ready for a new adventure in Nashville with a new home, new careers, new friends and a place to explore, I can’t help but get a little emotional thinking about our time in Dallas.  It was a very quick two years in Texas.  A lot has happened in the past two years.  We found out we were moving to Dallas a month after we got engaged.  We were excited, but very nervous moving while planning a wedding and starting new jobs.  A year later, we were married and life returned to normal in Dallas.  We had a lot of great times and a lot of very very trying times over the last two years, but those times have helped us get to where we are today.

There are SO many things I will miss about Dallas and our time here so today I wanted to share some of those with you!

  1. My sister and her boyfriend.  These two made our time in Dallas so special.  We had so many puppy dates, dinner outings, boating days, and a whole lot of fun.

2. Flexible work schedules.  While in Dallas, just worked part time as a Wellness Coach and my husband’s job allowed him to work from home when he wasn’t traveling.  This meant we got to see each other a lot, have lunch dates together, and be with our pups often.  

3. Ability to travel frequently.  With no kids, flexible work schedules, the southwest companion pass, and  amazing flights around the world (Dallas is such a great place to be for easy travel), we were able to travel a LOT.  My husband and I share a passion for traveling and seeing new places and our time in Dallas allowed us to take advantage of this passion.

4. The WEATHER.  Have I mentioned the weather in Dallas on here before?  It is amazing.  I would be happy never seeing snow again in my life… unless I am skiing.  The summers sure are hot here, but I’d take that any day over cold winters.

5. Our boat and the lake.  We were fortunate enough to be able to buy a boat soon after we arrived in Dallas and it was probably our best purchase yet.  The only reason we bought a boat was because of the 20 minute commute to the lake (Ray Hubbard) we kept it at.  This meant we were able to get a lot of use out of our boat including week night rides.

6. Our neighbors.  Good neighbors are hard to find and we are lucky that quite a few of ours became our friends.  

7. Our home in Dallas was my favorite one yet.  We lived among other young professionals who all were at the same stage of life as us.  It had a LOT of stairs (4 stories to be exact), but hey, my butt looks better for it. 😉 Our rooftop deck didn’t hurt either. 🙂

8. Our neighborhood.  Our house has a walkability score of more than 90.  If you aren’t familiar with that term, it means that you can walk to almost anything.  We walked to Trader Joes, a few coffee shops, our favorite restaurants and bars, the vet, the convenient store, the list goes on and on.

9. Our normal walking path.  We walk the dogs almost every day (especially in Dallas with the nice weather).  We walk to get coffee/breakfast on the weekend mornings.  We walk to get happy hour on pretty summer nights.  I sure will miss our walks in Dallas.

10. Speaking of the dogs, Dallas is extremely dog friendly.  There are patios at almost every restaurant and bar around here and tons of dog parks too.  Have you guys heard of Mutts?  It is a dog park that serves food and drinks for people while the dogs run around.  Isn’t that such a great concept?

11. We have made our rounds to the parks in town and while there are a few great ones, White Rock Lake definitely tops my list.  It has a beautiful running path, a huge dog park (the dogs can get in the lake too), and lots of sail boats drifting by.

12. When someone asks how we like Dallas, one thing I always point out is the amount of activities, festivals, concerts, and things going on ALL THE TIME.  There never is a dull moment here.  This may not be new to you, but moving from Cincinnati where there wasn’t much going on, this was a huge difference to me.  There are a lot of unique little areas of the city that have their own style (Bishops Art District, Deep Ellum, Lower Greenville, Uptown, Highland Park, etc.).

13. The fun activities I will miss in Dallas include: Top Golf, Studio Movie Grill, Billy Bob’s, Bowl & Barrel, the Arboretum and Stars Games.

14. The food!  While I do love Mexican (Fernandos is my favorite), there are a lot of restaurants in Dallas that I will miss.  These include: HG Supply Co, Bistro 31, R&D Kitchen, Thai Thai, BBbop, Sushi Axiom, Meso Maya, Origin, Eureka, Cedar Grove.  My husband would probably pick Tacos Y Mas (after Thai Thai, our favorite takeout food), which is a little taco stand within walking distance from our house.

15. I sure will miss the charm of Dallas.  It is so full of character.  The people are friendly.  The drivers are horrible.  The door is always open.  Dallas takes a LOT of pride in the community by supporting local shops (lots of local coffee shops and local breweries), which is really important to me.

16. St. Paddys Day in Dallas.  There is a huge parade and parties all day long in our neighborhood.   They shut down the main street for the day and there are people everywhere!  It is really fun!  Our first year here, my sister’s client invited us to be on a float in the parade!

We are so sad to see our time in Dallas come to an end, but are ready for our next adventure in Nashville!  We will definitely be back to visit soon!  See you soon from Nashville!

Foodie Friday…I’m Sticking to the Plan

Hi friends!!  Woo the weekend is here!!  We will be spending it getting a few things packed up for Nashville, but other than that we will just be enjoying the last weekend in Dallas. 

So I told you guys about this January challenge I am doing.. well, it is going great!  The workouts have been hard, but a nice change from my usual routine.  But the biggest change I have made is being so much more prepared.  I have been taking the time to meal plan, make a strategic grocery list, and food prep so that when it comes to meal time, there is no stress and no one gets hangry.  

I am probably in the minority that LOVE kale, but one thing I do not like about it is washing/chopping/massaging it.  I have made it my mission to do this as soon as I get home from the grocery store and then I store it in a big bowl in my refrigerator to use throughout the week.  This has made my life a whole lot more simple.

For example, kale chips last night.  Just a little olive oil, salt and pepper.  My favorite.

And roasted veggies.  Sweet potatoes and carrots are at the top of my list!

When my husband is out of town for work (usually two nights a week), I usually make a big piece of salmon and eat half each night for dinner.  It is perfect because then I only have to cook once.  My current favorite way to enjoy salmon is to use a dry rub.  I mix salt, pepper, garlic powder, and lots of chili powder (I like spice) and top the salmon with it.  If my husband is out of town, I just use my indoor grill pan (I may or may not have started a fire in our outside grill once…).

I have also been really good about prepping a few days worth of breakfast at a time.  I just store overnight oats in these glass containers and then top them with blueberries or banana slices in the morning and I am ready to go!!  This is especially convenient after an early morning at the gym when I come home super hungry!

Good morning!  I just got back from the gym and am enjoying a nice warm cup of coffee.  This day is definitely starting on the right track!  Who else is getting excited for the weekend?  It is our last official weekend in Dallas so I am ready to soak it all up!  My momma comes on Sunday so I am excited for that too!
