Happy Friday ya’ll!! Who’s excited for the weekend!?!? I sure am! Another weekend at home filled with some fun and lots of relaxing = my kind of weekend!! We have plans to go to a baseball game, a hot air balloon festival, spend some time on the lake and a sushi date night! So excited!
This week has been quite a productive one with lots of cleaning, organizing and getting stuff done around the house that I have been putting off for months. Oops. I finally got around to cleaning out my closet and was able to fill two trash bags full of clothes to donate. Such a good feeling!!
Today’s post is all about gooood food and there has been a lot of it lately. 🙂
Brussels sprouts. Do you guys like these? I love them! My husband could do without so I eat them a lot when he’s out of town. This week I tried some that came frozen and you just steam them up (they are already seasoned) and they were SO delicious!
Easy lunches are the best. Earlier this week I whipped up a quick green smoothie and had it alongside two rice cakes. One was topped with avocado and one was topped with a lentil dip. Yum!! A little sweet and a little salty = the best!
A couple nights ago I was getting ready to make dinner and realized we were running really low on groceries so I searched the pantry and found lentils. I think lentils are such an underused item. I cooked the lentils and cooked up veggies I had on hand (carrots, onions, spinach, and zucchini) along with some garlic, lemon juice, salt, pepper, and fresh parsley.
It was quite tasty and I had leftovers for a few lunches this week, which is my favorite!
The kale at my grocery store has looked great lately, but yesterday it did so I grabbed a few bunches! Last night I made a huge kale salad topped with almonds, craisins, beets, hard-boiled eggs, and avocado. Oh, it sure hit the spot! I just love salads with lots of goodies on top!
Lastly, breakfast this morning was vanilla greek yogurt topped with sliced bananas and chopped walnuts. And coffee, always coffee. Which reminds me… time for cup number 2!
You guys didn’t think I could end a post without a picture of the pups, did you? 😉 These cuties were VERY excited for their walk yesterday!
