Cayman Islands Day 1

Hi everyone!!  It feels like so long since I have written a blog post even though it has been less than a week.  We have been spending time with our friends and soaking up the sun in the Cayman Islands.  We are having a blast!  It is so beautiful here.  Island life is pretty amazing.  

Let’s back up to last Saturday when our adventure began! 

Saturday morning we did some last minute packing and cuddling with the pups before heading to the airport.  I forgot to buy a book for the trip so I grabbed one at the airport that I can return later and get 50% money back.  Have any of you used this service?  I think it is such a great idea.  You can return to almost any airport in the US.

We got really lucky on both of our flights with an empty seat beside us. 


On the next flight, my husband entertained this baby for 2 hours.  🙂


We finally arrived Saturday night and made the short drive to our house for the weekend.  


Sunday started bright and early (the sun rises so early here) with a peaceful bike ride around the island. 

We also kayaked, but my phone is no allowed near water so no pictures of that.

Then there was a lot of this going on.  Sunshine + a good book = heaven. 


Attempting to eat healthy on vacation so we can enjoy our fruity cocktails. 😉

Happy Mother’s Day to My Two Favorite Ladies

Happy Mother’s Day to all the moms out there!! I am in awe of you all and you truly deserve to be celebrated each and every day!

We arrived in the Caymen Islands last night with our friends.  We are off soaking up the sun and relaxing, but I just had to pop in real quickly to acknowledge two very important people in my life.

My momma and my mother-in-law.  They are both such a huge part of my life and I am so lucky to have them both.  They are both exceptional role models and exemplify the true meaning of selflessness.  They are actually getting together for lunch today as my mother-in-law is driving through Nashville.   I wish we could be with them today, but we are certainly thinking of them both!  Love you both to pieces!

Five Things Friday

Hi guys!! Happy Friday!! yay!  This week has been a long one and I am so happy it is finally Friday!!  How was your week?

I have been so busy running around like crazy getting ready for our upcoming trip tomorrow so I apologize for the lack of posting yesterday.  Today’s post will be organized in groups of 5!  Here we go! 

Five Things Making Me Happy 

  1. Target sales!  Yesterday I stopped by Target to get a new hat for our upcoming trip and ofcourse, ended up buying a lot more stuff.  Target is having BOGO 50% on shoes… and my favorite nice sandals are on their last leg so I purchased 2 new pairs!  (forgot to snap a picture).
  2. My puppies.  They love to cuddle and are just the sweetest.
  1. My neighbor is fostering a little lab puppy mix.  I played with it for 20 minutes last night and fell in love.  It is like 3lbs.  ahh!!
  2. My hubby is getting back from a work trip tonight!!  He has been gone all week so it has just been me and the pups.  So excited to see him! 
  3. Going to the Caymen Islands tomorrow with our friends!!! Can’t wait! 


Five Ways I Take Care of Body/Treat Myself

  1. Rodan & Fields skin care.  I started using Rodan & Fields last year per my sister’s recommendation and have never looked back.  I ran out of it for a few weeks and my skin was a mess.  I have tried a lot of different skin care regimens, but nothing works for me like Rodan & Fields.  
  2. Massages.  I get a massage every once in a while, but I use my massage chair at home a few times a week.  It helps my back a lot and it is so relaxing for me.  
  3. Daily Physical Therapy at home.  If you remember, I have been dealing with back/neck issues for a couple years now.  I see a Pain Management doctor (I have seen every type of doctor and done every treatment from acupunture to massage to facet injections to chiropractic work to dry needling to physical therapy) regularly and he encouraged me to do Physical Therapy at home every day.  I have been doing should/back exercises religiously and am really hoping it starts to make a difference soon.  My left side of my back needs strengthening. 
  4. Daily walks with my pups.  As you know, I love to exercise (strength training and running), but I also love my low impact walks around our neighborhood.  My pups get SO excited for our walks and I do too! 
  5. Getting my nails done.  I do not get my nails done regularly, but I like to treat myself before trips/special events.  The nail salon I go to gives you free champagne and a neck/head massage.  It is the best!  Got this bright red yesterday! 


Five Things You May Not Know About Me 

1. My husband and I lived in Salt Lake City, UT for 2 years and went to Park City to ski or hike almost every weekend.    

2. It has always been a dream of mine to adopt.  I would love to have biological children as well, but I definitely believe everything happens for a reason.  I believe every child deserves to feel loved and be loved.

3. I eat avocado at least once a day.  Can’t. Get. Enough.

4. Miranda Lambert is my favorite female country artist.

5. Hockey is my favorite sport to watch.  I don’t love watching sports (I like people watching better), but I really enjoy hockey games.  I just love the fast pace of the games.  (Go Predators!)


Five Shows I Am Loving Right Now

  1. Shades of Blue.  One of my friends suggested this show and I have been watching a couple episodes every night.  Jennifer Lopez is amazing.  
  2. Nurse Jackie.  My husband and I started watching this because we needed a new show to get into.  It is good, not great.  
  3. Scandal.  Still loving this show, but will it ever end?
  4. Quantico.  Every time I think I know who the “bad guy” is, they throw you for a complete loop!  It definitely keeps me guessing!
  5. Real Housewives of Dallas.  Okay, I lied.  I am not loving this show at all.   It is pretty horrible and I actually do like some of the other Real Housewives shows.  I feel like I have to watch because I live in Dallas and I like seeing places they go that I know, but ugh, I just don’t love the cast.  At all.  


Fives Recipes I Want To Try 

  1. Megan’s Broccoli Cauliflower Chickpea Bowl with Tahini Lemon Sauce.  This is my type of meal!  The more veggies, the better!
  2. Michele’s Deviled Avocado Egg Salad.  I am loving hard boiled eggs lately.  And Avocado makes everything better.
  3. Moncia’s Protein Muffin Bites.  I love the simplicity of this recipe.  These would be perfect for a quick snack on the go. 
  4. Gina’s Prickly Pear Margarita.  Need I say more? I’m feeling thirsty. 😉 
  5. Tina’s No Bake Lemon Coconut Protein Bars.  I love lemon and coconut so why not put them together in a protein-packed snack?  yum!

The Colors of the Rainbow aka All the Veggies

Happy Hump Day!  How’s your morning going?  Mine is going pretty good… I am counting down the minutes until we leave for a vacation on Saturday, but until then, lots to do! 

I’ve never really understood those people that don’t like vegetables.  I have always loved them.  All of them.  There isn’t a vegetable I don’t like.  I like them raw, steamed, grilled, roasted, sauteed, you name it.  I guess that is a good thing because I have never had a problem getting my daily recommended dose of veggies in each day (2-3 cups).  

Last night I was craving veggies so I decided to see what I had on hand and turn in into a stir-fry (the easiest way for me to get in tons of veggies).  So I got to chopping!

Broccoli, mushrooms, zucchini, corn, carrots, and red bell pepper.  


I threw all the veggies in a big skillet with grated carrots and cabbage for extra crunch.  


Sauteed everything for about 5-8 minutes (I like my veggies to have a little crunch left). 


Added 3 of my favorite spices!  I like my veggies with lots of flavor!


No sauce needed.  I just squeezed lots of fresh lemon juice onto the veggies.  PS this lemon/lime juicer is my favorite kitchen gadget.  Lots of juice + no seeds = yes!


Ofcourse, sometimes I will add Bragg’s Aminos or tahini or a homemade sauce, but last night, I just wanted the veggies plain.  


And they were delicious! (sorry for the terrible lighting in the pictures!)  The cabbage honestly makes it taste like you are eating rice noodles with the veggies.  My grandma got me hooked on cabbage years ago and now it is always on my weekly grocery shopping list.

Consistency in Sleep Patterns and Popsicle Testing in Progress


Hi ya’ll!  Happy Tuesday! How is your week going so far? Yesterday was very productive for me… until I hit the 3pm slump… do you ever hit that point where you either need a lot of caffeine or a long nap?  The latter won yesterday.  I’m not usually much of a nap person, but ever since I started my job that requires me to be at work at 6am, I have been a nap person.  Like I really need a nap after that early wake up call.  I started getting used to the early mornings for a while, but for whatever reason, I am really struggling lately to stay awake come mid afternoon.  

A few months ago my doctor advised me to develop consistent sleep patterns.  She said it was important to go to sleep and wake up around the same time every day.  While I see the importance in this, it is very hard for me to want to wake up around 5 am on the weekend days.  During the week, on the days I don’t work, I do attend an early morning Body Pump class at the gym to maintain my normal early morning wake up time.  I don’t sleep in late on the weekends, but sometimes 7 or 8am sounds realllllllly nice compared to 5am.  I also am guilty of staying up later on the weekends, which definitely doesn’t help my case.  I truly believe sleep is one of, if not the most important aspect of health.  When we are tired, we crave sugar to help us stay awake.  When we haven’t had enough sleep, our workouts suffer.  When we are exhausted, we over-compensate with caffeine, which can interfere with sleep, starting the vicious cycle over once again.  

Tell me, how many hours of sleep do you get per night?  Are your sleep patterns similar on the weekends to what they are during the week?  What are your tips for getting a good night’s rest?

Watermelon popsicles in the making!!  I love making my own popsicles for hot summer days when I need a refreshing, cool snack.  I am experimenting with a few different combinations so I will report back when I have a winner (or two!). Have you ever made home-made popsicles?  Favorite recipe?

This is my go-to easy lunch when I am at home.  A big salad with sweet potato fries.  This salad had kale, romaine, chopped almonds, hard boiled egg whites, avocado and lite raspberry dressing.  Yum!!

Weekend Recap 5.2.16

Well, it is here again.  Monday, that is.  It always seems to sneak up on us, doesn’t it?  We had crazy thunderstorms around here last night so the coffee is flowing already.  

Another weekend roundup coming atcha.  After work on Friday we loaded up the pups (our 2 plus 3 extras) and headed to the dog park to (hopefully) tire them out.  My husband played fetch with this one while the others just roamed around. 

This girl never leaves my side… she ventures out maybe 10 feet away, but then runs back quickly.  She acts like there is an invisible fence around me and she can only go so far or it will zap her.  When she starts going a little farther away from me than normal, my husband and I always joke and say “beep beep beep” as if she is going past her invisible fence.  She is quite the character. 


Friday night we decided to go to our favorite restaurant, HG Supply Co, for dinner.  There was a 45 minute wait so we put our name in then ventured across the street to the Blind Butcher for a drink on the patio while we waited.  


We had a giftcard from our anniversary that we wanted to use.  (Thanks Mimi!!!)


My husband got the pulled pork tacos and I did the “build your own” bowl with mushroom and cashew quinoa pilaf, honey-garlic brussels sprouts, guacamole, and grilled salmon.  We both raved over our meals.  

Saturday morning started bright and early with a whole body circuit at home for me while my husband played tennis.  After lunch we had some shopping to do.  My husband and I both had a couple things to get for an upcoming trip.  He was way more successful than I was.  He also snapped the below picture of me in front of this cute sign…


After some shopping, we headed home to tackle a home project… a leaking toilet… of the joys of homeownership. 😉 

Saturday night was spent relaxing on our rooftop deck with all the pups.  


Sunday we had plans to meet our friends for a boat day.  We all met at our boat around 10am then headed out.  The boys all turn turns wakeboarding and skiing while the girls enjoyed the sunshine.  We had so much fun that I didn’t end up snapping any pictures the entire day.  Oh well… 

All in all, it was a great weekend with lots of fun.  Today started out with a 6am Body Pump class that I had to sprint into the gym for because of the crazy rain.  Time for some more coffee!! Have a great week everyone!
