Memorial Day Weekend at Lake Burton

Hi ya’ll!  How was your Memorial Day weekend?  I hope it was spent relaxing and remembering those who have served for our freedom!  We arrived back home yesterday and it sure is nice to be home after a long travel day.  We had an amazing long weekend with family and mostly good weather!  Even though we are back to our normal routine today, I still have more pictures to show you from our time at the lake! 

Friday morning started out bright and early with a long walk/run with my little buddy, Riley.  Every morning he was so excited for his walk at the lake, but yesterday morning, I had to drag this little guy out of bed.  A few days at the lake really tires him out!

After a quick shower, my mother-in-law and I headed into town to scope out the Farmer’s Market.  Here are some of our finds! The Georgia peaches were out of this world! 


My mother-in-law made this amazing quinoa salad for lunch.  It had snap peas, corn, chives, parsley and a yummy dressing.  I will have to get the recipe for you guys!  It was so tasty!

Dinner Friday night was a simple salmon nicoise salad.  The salmon had a delicious lemony mustard marinade that made it so tasty.

Lake Burton… we have arrived!

Good morning and happy Friday!! woo! Are you guys excited for the long weekend?  I have to admit, I have been on vacation since Wednesday so I just had to ask my husband what day it was… that is when you know that your vacation is going well!  Riley and I just got back from a run and had some breakfast and now we are just hanging out talking to you fine people before we head into town to go to the Farmers Market (love!!!)! 

Let’s back up a little bit to Wednesday afternoon.

We headed to the airport with our favorite little travel buddy.  He loves to fly.

After a quick flight, we arrived in Atlanta and grabbed our rental car before making the 2 hour drive to my in-laws lake house.  My mother-in-law had dinner ready for us when we arrived, which was so nice!  We had a salad, roasted cauliflower, and halibut.  So yummy!


Thursday morning, I headed out for a run with my husband and pup.  They ditched me halfway so I finished up by myself.  So humid here.  


After cooling off and relaxing for a bit, I cooked up some breakfast for my husband and I.  This little guy was hoping for some droppings.

Fresh berries, egg scramble with veggies, and ofcourse, avocado on our festive plates!


After breakfast we spent lots of time outside playing fetch.  Riley is obsessed with water and would swim all day if he could.  Sometimes I have to go in there to get him because he refuses to listen to me.  🙂

Thursday afternoon was spent relaxing with my sidekick and reading this book.  Have any of you guys read it?  Remember on our trip to the Cayman Islands I told you about the airport book rental… well I actually exchanged the book I got for that trip at the Atlanta airport when we arrived on Wednesday and got 50% back and then purchased this one!  Just love the concept of “read and return.”

Thursday evening we got ready to head into town (about 30 minutes) for dinner.  Kisses for my baby, first! 🙂


We went to one of our favorite restaurants for dinner.  Fortify has a farm to table concept and is always delicious!

I got the Halibut for my entree and my husband got the Grouper and we both raved about our meals!

Wordy Wednesday

Good morning friends!  I am getting ready to head to the airport with my husband and small pup, Riley for a family reunion (my husband’s side) in Georgia at my in-laws lake house!  (Thanks to my sister and her boyfriend for watching Callie!)  I may or may not have internet, but if I do, I will be sure to pop in while I am away.  

I have lots to chat about today so bare with me, this post is a lot of random thoughts thrown together.  

Because of all the traveling my husband and I have been doing, I have been trying not too buy too many groceries because I hate wasting food.  It is one of my biggest pet peeves.  I have been trying to use up all of the food in my house before we leave for our trip so meals have been a little random (but very tasty) around here.  Here is a peak at some of my recent meals:

Salad with hard boiled egg white (I don’t like the yolk), red pepper, fresh raw corn, roasted sweet potatoes and avocado.  A surprisingly yummy combination.  


Zucchini noodles to the rescue!  I like mine with sauteed mushrooms, onions and garlic with pesto topped with avocado (because it makes everything better!). 


Leftover grilled salmon and veggies for a quick salad topper for lunch on the go. 


Another random (but easy) meal of a mixed salad, roasted sweet potatoes, and zucchini noodles with red peppers and onions mixed with pesto! Delish!


Last week my sister and I picked up dinner from Eatzis.  Have you guys ever been here?  It is a little market with different stations (salad, pasta, grill, bakery, etc.) that you can get fresh food from or choose a packed item (sushi, sandwiches, salads, desserts, etc.).  Why is salmon always better when someone else cooks it? 


A couple weeks ago we went to an event at the dog park and our dogs (and Otis) loved the food samples, frisbees, balls, and bandannas. They were worn out for days.  

Do you guys get fruit flies in your kitchen when the warm weather rolls in?  They have been extra bad at my house recently, but last year I learned a trick to keep them away and it works wonders!  In a small bowl, add a few drops of dish soap (any kind) and about 1/2 cup of vinegar (I use apple cider).  Leave the bowl by your fruit on the counter and within a day or two, all the fruit flies will be in the bowl and no longer flying around your fruit!  It is amazing! 

So you guys know how I love Body Pump classes.  Well, I have been doing an at-home version lately when my schedule doesn’t allow for me to take a class.  I downloaded an interval time app on my phone and set it to 10 rounds of 4 minutes with 20 second breaks in between.  I just do exercises that target that specific area for the 4 minutes and then onto the next when the time beeps.  

The rounds from Body Pump: Warm up, squats, chest, back, triceps, biceps, lunges, shoulders, abs, booty (I add this round in!)  It ends up being a great workout in the comfort of my own home!  

Do you guys have a favorite protein powder you use in smoothies, baking, post-workout shakes?  I really like Sun Warrior Vanilla protein powder, but it makes my stomach hurt a bit when I don’t bake with it.  I like that it is plant-based and doesn’t taste chalky, but I find my tummy hurting shortly after drinking it raw in a shake or a smoothie.   Does this happen to anyone else?

So I really need a new bathing suit.  I left my favorite top in the Caymen Islands (whoops) and most of my bathing suits are getting a little old.  Where is your favorite place to bathing suit shop?  I usually go to Target because I like to try things on rather than buy online, but I am willing to buy something online if I can return it.

Weekend Recap 5.23.16 Part 2

Hi guys! I hope your day is going well so far!  Today is my Friday this week (hallelujah) so I am pretty happy about that!  Tomorrow, we head to Georgia! 

Yesterday’s post got rather lengthy so I decided to post the rest of the weekend recap today so here we go! 

Friday night we went to Remedy for dinner.  I got the beet and grapefruit salad with grilled salmon.  It was delicious!! My husband doesn’t love this restaurant because the portions are pretty small, but I don’t mind!

After dinner we met up with my sister, her boyfriend, and some friends at Henderson Tap House for a $1 glass of wine for ladies night! 


After a drink, we decided to head over to Deep Ellum.  It is a really unique part of town not too far from where we were so we all hopped in an Uber.  Not sure how I ended up in the back with 3 boys… 


We went to a couple different bars and had a blast dancing  listening to the live music.

Saturday morning we woke up bright and early for a boat day.  My husband brought his drone and got a lot of really cool pictures and videos of the boys wakeboarding.  He programmed the drone to follow us while the boys took turns on the wakeboard and tube.  So neat! 


Please note the pirate flag that my husband hung on our boat… we got it as a souvenir on the Pirate Ship in the Caymen Islands.  That will not be staying on the boat for long. 😉

Time always seems to go by so quickly when we are on the boat.   After about 4 or 5 hours, we headed back to the marina.


Saturday night we had dinner at our house.  We grilled salmon, zucchini and corn on the cob.  My sister also made us some fruity shots to celebrate the birthday girl.  Rachael, were you making a wish in this picture? 😉


Saturday night we surprised Rachael with Jason Aldean concert tickets!!  He is so good in concert so we just couldn’t miss it!  My husband has seen him at least 6 or 7 times.

Sunday was very low key with a long walk with the pups, a few naps, and some murder show watching.  Isn’t Cooper the cutest in the baby swing?

That wraps up our fun weekend!! So happy I got to spend so much time with my best friend!  We always have a blast together and I can’t wait for our next reunion!!

Weekend Recap 5.23.16… Rachael visits & a day full of doggies

Good morning!  How was your weekend?  Too short as always?  I could have used an extra day, but hey, this week is a short one for me because we are heading to the lake for a family reunion over the long weekend.  

Let’s back up to Friday.  My best friend, Rachael, came into town really late on Thursday night.  Friday morning I headed to the gym bright and early then came home to get ready for brunch with my sister and the pups.  We went to a new restaurant called Eureka and sat on the patio.  

These two prefer their mommas’ laps.  🙂


We ordered some cocktails to start along with roasted brussel sprouts, which were to die for! I got the kale salad and the other girls got the tacos and we all loved our dishes! 

After brunch, we headed to Mutts, a local dog park with a bar attached to it.  (Such a great concept!)  The pups ran and ran and ran.  My friend Rachael even brought her pup to Dallas for the weekend (she is my best friend from high school in Nashville where I grew up).  As you can see, Riley is in his happy place… chewing on a stick (his favorite).  

And just in case the pups hadn’t had enough activity already, we headed to the Katy Trail Ice House to enjoy the beautiful weather for the afternoon.  There were lots of doggies there and great people watching. 🙂

This little girl came up to us and just started chatting away.  She loved all 4 pups we had with us.  She asked if she could walk Riley and just walked him around the picnic tables and sat with him until she had to leave.  When she was about to leave she asked if I had a penny.  I said, “sure, but why do you need a penny?”  She said, “so I can buy a puppy.” I said, “what puppy do you want to buy?” And she said, “THAT one” and pointed to Riley.  I said “that is so sweet, but you cannot buy my puppy! LOL”  Kids are the cutest!! 


We hung out for a few hours before heading to my sister’s apartment to hang out on their rooftop patio.  Ahh life is good! 


The pups finally started to get a little tired. 😉

Last Days in the Cayman Islands

Happy Friday yall!!! We are doing the Friday dance over here!!  My best friend is in town visiting and we have lots of fun things on the agenda this weekend starting with brunch with my sister today let’s get right to it!

So on the last full day in the Caymans, I looked out the window to see this… It’s all about the teamwork. 🙂


The boys resorted to climbing the coconut trees when they could no longer get anymore coconuts down.

A lot of our meals were made up of salad, lots of grilled veggies, grilled fish and meat.  And roasted potatoes.  Lots of potatoes.

On the last night (only 4 of the 7 of us were left) we decided to bike to a nearby restaurant and have drinks and appetizers on the beach.


Kaibo is a restaurant with some outdoor seating on the beach and lots of tasty options.

We all split some fresh ceviche and some other dip I can’t remember and both were amazing.  I had a cocktail with champagne and the boys had beergaritas!

And then our trip finally came to an end. 😦    My husband, my sister’s boyfriend, and I had a 6 hour layover  in Miami on our way home (I did not book the flights…) and we decided to get out of the airport and head to South Beach for lunch.  We decided on News Cafe and I had to have one last glass of champs with my salad.  I got the spinach salad with smoked salmon.  yum!

We wandered around for a bit before heading back to the airport.

It was so nice to be home (I missed my bed!), but we were all sad to leave.  We had such an amazing time in the Cayman Islands and are really hoping to make it an annual friends trip!  I hope you all enjoyed my vacation recaps as much as I enjoyed writing them and looking back on our relaxing trip! Cayman Islands Days 4 & 5

Hi everyone!!  I have a couple more days of pictures from our recent trip to the Cayman Islands so I thought I would continue the recap today!  Today is quite crazy as I am so busy and didn’t get much sleep thanks to staying up wayyy too late with my sister planning something fun last night and an early morning body pump class today.  

The next few days in the Cayman Islands consisted of a lot of this…. boys trying to get the coconuts out of the trees.

Then cracking them open to get the coconut water out for some serious fruity cocktails hydration.  (which by the way, is no easy task)  I may or may not have broken my bottom permanent retainer eating the coconut… oops!

So proud of the coconuts! 


Okay, this puzzle looks way easier in the picture, but it took us forever!!! I get my love of puzzles from my momma. (She goes to bed at 8pm, but if there is a puzzle in sight, she has been known to stay up until 3 am trying to finish it). 🙂


Near the house that we stay at is a beach called Rum Point.  We would frequently hang out there in the water, on the lounge chairs, and play volleyball.  The boys played probably 100 games. 😉  They made us girls play against other people who we there in two different times and we won both games!  Although my sister and I preferred to sit on the side lines and watch while sipping our drinks. 😉

Wednesday night my husband and I biked over to Starfish point to see the sunset.

Cayman Islands Over the Edge

Happy hump day! How is everyone doing today?  We are halfway through the week, which is always a good thing!  Come on Friday!! Today is actually my Friday so I am very happy!  My best friend is coming into town tomorrow so life is pretty great right now! 

Okay, enough rambling, let’s get right to it!  When we were in the Cayman Islands, the closest real grocery store (not just a convenient store) was about 45 minutes away from the house we stayed at.  We made 2 trips to stock up on food because we planned to cook most meals at the house because with 7 people, it is just easier to not have to figure out driving, cabs (or lack thereof), and it saves a lot of money.  

We were staying at our friends’ boss’s house in the Cayman Islands (so nice of him to let us use it for the week) and he also offered to buy us dinner one night (beyond generous!) so we made a reservation (which we definitely didn’t need) at a nearby restaurant on the beach called Over The Edge Cafe.

I started with the greek salad and got  the tuna with veggies for my entree.  It was all delicious!!

We had such a nice dinner out and it was nice not to have to think about cooking!  And let’s be honest, this was the only time we dressed up and the girls wore makeup the whole trip… this night was needed and so fun!

Incline Treadmill Interval Workout

Good morning!! I hope you all are doing well and your week started off on the right foot!  I am getting back into the swing of things and fighting those post vacation blues.  Thankfully I have a fun weekend to look forward to in a couple days!  

Today I thought I would take a break from my vacation recap (I have so many more pictures to show you guys) and switch gears a bit.  

If you are anything like me, the treadmill (hamster wheel) can get really boring pretty quickly.  Changing up the incline and speed can help fight boredom and create a more effective workout in the process.  I am guilty of getting into my groove (around 6.5) and running 3-5 miles at that pace, but lately I have been making an effort to change things up.  If we don’t challenge ourselves, we can’t expect change.  That is what I keep telling myself.  

I am not a sprinter.  If I had the choice to run 10 miles at my comfortable pace or 10 sprints all out, I would absolutely choose to run the 10 miles without question.  I like running comfortably.  But I do realize that it is important to step out of my comfort zone and pick it up a bit.  I have creating a lot of different treadmill interval workouts lately that include speeds from walking to all out sprinting and inclines from a flat road to a steep hill.  It has really been a good challenge physically, but also mentally.  Usually when I run on the treadmill, I turn on a show and zone out, but with quick intervals, I am forced to focus because a switch is coming every minute or so.  

Today I have a workout for you that I have done a couple times in the past few weeks.  It is a good one.  Please consult your doctor before starting a new workout routine.  Please note that these are the speeds I do, but please be cautious of where you are at and how much your body can handle.  If a 4.0 walking speed is too fast, bump it down to a 3.0 or 3.5 speed.  If 7.0 is too fast or too slow, adjust accordingly and increase each interval from your starting point.  The incline gets very steep for the last few sprints, so feel free to stop increasing the incline whenever you feel you are at your max.  Make sure to warm up and cool down before and after the workout.  If you include a warm up and cool down, the workout should be around 30 minutes.  It will leave you sweaty and feeling very accomplished!  I hope you will give it a try!

Cayman Islands Day 2 on the Pirate Ship

Good morning ya’ll!!  How was your weekend?  I can’t believe it is already Monday… where do the weekends go?  We are back on American soil and I am happy to be back into my normal routine and beyond happy to be back with my pups! 

Today I am going to recap last Monday in the Cayman Islands, which was probably the highlight of the trip.  While we were in the Cayman Islands, we stayed at a house about 45 minutes from Georgetown (the biggest town on the island) so we wanted to get out and explore a little bit one day.  We all wanted to enjoy some adult beverages so we took a cab (so expensive) to town.  My sister and husband found a “booze cruise” on a pirate ship so we were all excited, but intrigued to see what exactly this would be.  The price of alcohol (and food for that matter) was very expensive on the island so we were all pretty excited for an open bar.  😉

We arrived in Georgetown a couple hours before our boat cruise so we did a little shopping then grabbed a drink and some appetizers at a restaurant overlooking the ocean. (My sister and her boyfriend in the picture.  I have 100000 pictures of them after this trip.) 🙂 

We asked the pirate ship organizer on the phone – “how are we going to find you in Georgetown?” and he responded – “it’s a 70 ft pirate ship, you can’t miss it.”  The ironic thing is that we actually couldn’t find it and wound up walking to the area where the boats unload freight and we got in trouble. 😉  We walked down the beach a bit farther and found our boat!  At this point we were a little worried this cruise was for children…. 


But we decided to roll with it. (My sister and I both bought new hats for this trip and ended up buying the exact same hat and we didn’t find out until we both put them on that morning…great minds think alike.) 😉

And then the pirates handed us rum punch and all was okay. 🙂

The pirates made us recite random things and “scrub the deck”.  We were all just wanting to hang out so we were a little concerned the cruise would be like this… 

But then… things got really funny when this guy…

and they held hands when they got ice cold water poured over them!  🙂 I have really great videos of this that I am sure they would not like me sharing with the world. 🙂 They better be nice to me… 😉 


We spent the rest of the day on the boat just relaxing and drinking some more rum punch!


Then we all had to walk the plank….

I enjoyed just hanging out on the plank… the water was so beautiful.

We did a little snorkeling too, but again no pictures of that because my phone would have ended up in the water.  Oh, and we practiced our “titanic” poses.
