Weekend Recap 4.18.16 and Healthy Tuna Bean Salad Recipe

Hi ya’ll!  Happy Monday!! How was your weekend?  I hope it was great, mine was! This weekend my father-in-law and brother-in-law were visiting!  We had a blast despite the rainy weather. 

Let’s first back up to Friday afternoon.  I got in a quick 5 miles on the treadmill after work.

I picked up some strawberries and raspberries at the store this week and they are so good!

Then we celebrated the beginning of the weekend with cocktails on the rooftop!  We picked my brother-in-law up at the airport then headed out for a drink with some friends.

Saturday started with a Body Pump class then we all took a trip out to our boat so my husband could do some maintenance stuff.  The weather was too icky to go on the boat. 😦  Afterwards we stopped by Lowes so the boys could browse… remind me never to go to Lowes with 3 boys ever again.  Two hours later, we headed home.  The boys headed to the Rangers game on Saturday night and my sister and I hung out with the pups plus these two cuties.  

Sunday morning started bright and early with a 5 mile run then we got ready to head to Top Golf.  We had a drink and some appetizers while we waited for our bay.  Top Golf was so much fun and luckily it is covered so even though it was raining, we still got to play! 

Then we lounged around for a bit and played a lot of fetch with the pups! 

We went to dinner at Ragin Crab.  It was good, but soo messy.  Definitely not somewhere you would want to take a first date. 🙂

We grabbed a popsicle from Steel City Pops for an after dinner treat.

This morning started with another Body Pump class followed by a delicious lunch of kale salad with tuna bean salad on two rice cakes.

Healthy Tuna Bean Salad Recipe 

1 can cannellini beans 

2 cans tuna in water 

2 avocados 

Dressing: 

1/4 cup olive oil

1 teaspoon mustard powder

1 teaspoon garlic powder

1 teaspoon chili powder

1 tablespoon spicy mustard

Directions: Mix beans, tuna and avocado together.  Whisk dressing together and pour over tuna mixture.  Serve on a salad, rice cake, or just eat it straight from the bowl!  Enjoy!

I am currently sipping on a homemade iced coffee while I talk to you!  Loving iced coffees lately… just coffee, unsweetened almond milk, and liquid dark chocolate stevia for some sweetness.

Five Things Friday

Friday is here!! Who else is doing the Friday dance with me?  Woo!!  My brother-in-law and father-in-law are coming to visit this weekend so it should be a good one!  Although the forecast is calling for a lot of rain. 😦  Hopefully it holds off!

I have a lot of thoughts circling in my head today so in order to try to organize them, I am going to do a Five Things Friday post where I organize my thoughts in groups of 5! Here we gooooo….

5 Meals I Had This Week

  1. Salads with lots of fresh veggies.  I usually add craisins and lots of nuts to my salads, but I am trying to eat more veggies!

2. More salads with veggies, tofu and avocado.  Avocado makes everything better.

3. Veggie burgers on a salad with avocado (duh!), roasted sweet potatoes and asparagus!

4. Oatmeal with peanut butter, sliced banana, cinnamon, and honey

5. Tuna mixed with avocado and spices on top of a rice cake.  So delicious.  

 

5 Snacks I Am Loving 

  1. Date balls.  I just put dates and almonds (and some with peanut butter) in the food processor then roll into balls and coat with shredded coconut or chopped almonds.  I keep them in the freezer for an easy snack during the week.

2. Fresh fruit.  Currently loving raspberries and strawberries.

3. Apples.  I eat at least one apple everyday.  They are really good with some date balls on the side!

5 Things You Probably Don’t Know About Me

  1. You all know I love my doggies, but surprisingly, when I was younger, I was not a dog person at all.  In fact, I was terrified of big dogs.  Oh, how times have changed. 

 

2. I am a homebody and would be fine not leaving the house for days.

    3. I am left-handed.

    4. I studied abroad in Florence, Italy and I still don’t know any Italian. This is from my apartment in Florence.

    5. I have wanted to be a mom for as long as I can remember.  I was a nanny all throughout college and for 2 years after college and loved it.  There were days when I said “I am never having children” but all in all, the experience made me SO excited to have my own children one day.  My mom has been ready for grandchildren since the day I met Jon. 😉  This is sweet baby Charlie that I watched for 2 years. 

 

5 Things I Am Looking Forward To

  1. Our trip to the Caymen Islands in May
  2. My best friend Rachael is visiting in May and I can’t wait!!!  I have withdrawals when we go too long without seeing each other.  We can sit and watch murder shows until 4am and have the best time. This is us quite a few years ago when we lived at my dad’s lakehouse for the summer and worked at the restaurant at the marina.

3.My cousin’s (Kate) bachelorette party in Dallas.  There will be 10 girls staying at my house.  My husband is getting the boot for the weekend. 😉

4.Visiting our friends in Boston this summer.  I love Boston and Jon has never been so I am really looking forward to it! 

5. A Napa getaway.  My husband and I fell in love with Napa when we visited a few years ago and have been dying to go back.  Since my husband travels so much for work, I got the companion pass on Southwest this year (I can go with him anywhere for free) so we are trying to make the most of it and get in a LOT of trips this year.

I haven’t been cooking or doing anything too exciting this week because I am still trying to get back to feeling 100%.  I have a an appointment for a spinal decompression (I don’t really understand what it is, but it came with a massage groupon my husband bought me) today so I am hoping that helps my back feel a little better.  I will report back about it tomorrow!  

Every once in a while I end up with a ton of screenshots on my phone of quotes or recipes I want to save for later so I thought I would share those with you guys today!

Salads on Repeat After Vacation

Good morning everyone!!  How are you doing today?  I am still trying to get over this stomach issue, but other than that I am feeling pretty good and this week is flying by!

It is no secret that I love to travel.  My husband and I love exploring new places together and going back to old familiar places that bring back great memories.  While on vacation I do tend to eat pretty close to my normal eating patterns so that I don’t feel sick or bloated from a lot of new foods.  I do, however, like to indulge in a lot few alcoholic beverages and some desserts.  It is vacation after all.  But I try to be mindful because I am also not usually doing the same types of hard workouts that I do at home.  As fun as indulging on vacation is, I am always SO ready to get back to my normal eating patterns when I get home.  Have I mentioned that I love routine?  I could eat the same thing for breakfast, lunch and dinner everyday for a week and be happy.  I don’t only because my husband would fire me as head chef if I made him eat the same things every single day.  Marriage is all about compromise. 😉 

You all know by now that I LOVE salads!  In order to keep the hubs happy, I try to mix them up a bit to keep them interesting!  It has been so nice to be back in my kitchen making salads bigger than my head. 🙂 Here are some recent eats that I am loving! 

Romaine lettuce, craisins, chopped almonds, strawberries, leftover grilled salmon and  this raspberry walnut dressing!  So good!

I love fresh corn on the cob!!  It makes an excellent addition (raw) to a salad!  Romaine, fresh corn, strawberries, grilled tofu and zucchini and raspberry walnut vinaigrette.

Terrible picture (sorry!) but a yummy salad with lots of veggies (carrots, cucumber, corn), grilled tofu and zucchini, almonds, and lots of homemade guacamole! (We have managed to keep our cilantro plant alive, which is a miracle if you know me.)

I just needed to show you guys this picture of my grilled tofu because I LOVE grill marks (I know, I am so strange) and I think I have perfected my tofu grilling technique!  I used to put the tofu in a veggie basket on the grill, but lately I have been putting the tofu straight onto the grill and I am loving the way it turns out.  I hate mushy tofu so the extra texture from the grill marks is amazing!

Weekend Recap 4.12.16 and 7 years!

Hi ya’ll!  Happy Tuesday!  I hope your week is off to a good start!  Mine started on quite a yucky note when I started feeling sick on Sunday afternoon and was up sick all Sunday night and still felt icky yesterday.  I am on the mend and slowly starting to feel better so let’s just hope this passes quickly! 

Since I was out of commission yesterday, I will recap my weekend today!  

Well for starters, I lightened my hair last week.  I usually dye it about twice a year, but it has been probably 2 years since I last dyed it.  Yes, I do it myself.  I am way too cheap to get it done professionally and I don’t have the time to keep it up.  I use Revlon Frost and Glow for medium to dark hair.  I follow Jessie James Decker’s youtube video on how to do at-home highlights.  It is so simple and so cheap and since it is the balayage look, you can go for months without doing it again.

Saturday afternoon we had plans to deep clean our boat to get it ready for the season!!  I got stuck with all the dirty work. 😉 This made us both super excited for warm weather!!  We are hoping to sneak in a little lake time next weekend with some family that is coming in town!

Saturday night my husband and I had plans for a fun date night to celebrate his upcoming birthday and our 7th (!!!) dating anniversary!  The pups were not thrilled about us leaving…

My husband said that once you are married, you don’t celebrate your dating anniversary anymore… I told him he didn’t have to buy me any diamonds so then he happily agreed to date night. 😉  We went to Vickery Park for a drink before our dinner reservations.

We went to Hibiscus for dinner.  We have been once before and it was delicious.  My mother-in-law got us a gift card for Christmas so we decided this was the perfect occasion to use it!  Our waitress asked if we were celebrating anything and we told her it was my husband’s birthday and our anniversary and she brought us champagne to toast!  It was such a nice treat! 

We ordered a couple more drinks and got the mussels (it was a special of the night) for an appetizer.  Soo good! 

For our entrees, I got the sea scallops and my husband got the pork. 

Our waitress asked if we wanted dessert, but we both declined because we were so full.  And then she brought this out…

We had such a fun night out together and I can’t believe this guy has put up with me for 7 years!  I’m a lucky girl. 🙂

Last Day in London

Hi guys!  Happy Saturday!! I hope you are enjoying your weekend so far!!  We just relaxed last night and caught up on some shows, but have plans to get out for a bit tonight!

Today I am recapping our last day in London!  It was definitely one of the best days of the trip!  

We started out with a trip to Bachmanns for coffee and a chocolate croissant for my hubby.  He was in heaven!

Next, we headed to Hampton Court Palace for the morning.  We parked the car in the park across the street and took a little stroll.  Thankfully, the weather was beautiful! There were lots of deer that are not scared of people at all.  

The palace is huge!!  It was so fun to walk around all the beautiful courtyards. 

And see all the rooms people used to live in! 

But the highlight for me was seeing the kitchen that was used to prepare food for 600 people multiple times per day!

But the best part of Hampton Court Palace is the gardens! So pretty and they go on and on and on.  

We got to see the palace tennis courts too, which was really neat! 

Afterwards we had plans to see an afternoon rugby game!  We saw the Harlequins play and it was so fun!! We aren’t very familiar with rugby and all the rules, but we do like watching sports so it was fun to see!  I was quite surprised when we got to our seats and realized they were in the first row! 

After the game we headed to a local Indian restaurant near where we were staying.  It was amazing, ofcourse!  I got the vegetable curry again and loved it!

Sunday morning we made the short drive to the airport for our long 9 and a half hour flight back home.  We were so happy to be home and see our puppies!  We had the best time in London and Amsterdam, but it is always nice to be home after a long trip!!

London…Windsor Castle and Foxhills Country Club

Happy Friday everyone!!  I am so excited for the weekend!!  It should be a good mix of relaxation and productivity!

Today I am going to show you pictures from our second to last day in London.  We went the morning exploring my husband’s old grade school (he attended 4th and 5th grade in London) and it brought back really great memories for him.  

Unfortunately the kids and teachers were on Spring Break, but my husband was able to walk past his favorite teacher’s room and see that he is still currently teaching at the school.  The campus is absolutely beautiful!

In front of the tennis courts he used to play on.  

Afterwards we stopped with a quick coffee and lunch then we were off to our next destination.  This is me terrified of my husband driving on the wrong side of the road (and with the steering wheel on the wrong side of the car).  Every time we walked to the car, I went to get on the right side and he went to the left and we had to switch.  We finally got used to it the day we left. 🙂

Our afternoon plans took us to Windsor Castle.  The castle is massive and it is still occupied today.  

We grabbed our headsets and started the tour.  

The chapel on the premise is really pretty.  No pictures allowed inside, but my husband did snap a picture of me lighting a candle for my granny and her boyfriend, Leo.

Friday night we had reservations at Foxhills Country Club for dinner. My husband and his family belonged to the club when they lived in London years ago. 

We arrived early and had a drink in the bar area while we browsed the menu and chatted. 

The food was incredible!!! Probably the best meal of our whole trip!!  I got the cod and my husband got the beef (I think).  We split the salmon tartar for an appetizer and it was soo good!  My husband got the chocolate cake for dessert and loved it. 

After dinner we stopped by a local pub for a quick drink and they had wine on tap! 

This was definitely one of the best days we had in London!  Full of memories from my husband’s childhood and new memories as a married couple!  Have a great weekend!!
