Random Talks and Spiced Rub Salmon

Good morning ya’ll! Happy Friday!!! We made it!  Do you have fun weekend plans?  My husband and I are having a little date night tonight then some shopping tomorrow for our upcoming trip and then hopefully a boat day with friends on Sunday!! It should be a good one! 

Lots of randomness for today and a delicious salmon recipe at the end so feel free to scroll past my ramblings for the good stuff. 🙂

Yesterday I boiled a bunch of eggs that had been in my fridge for a while.  Did you know that older eggs make the best hard boiled eggs?  At least that is what my grandma told me!  For lunch I had two rice cakes with avocado, hard boiled egg whites (I don’t like the yolk), drizzled with olive oil, and sprinkled with salt, pepper, and chili powder.  So tasty and it kept me full for hours!


For a snack I had a Siggi’s vanilla yogurt with fresh strawberries and a dollop of almond butter. 


We took the pups on a nice long walk to tire them out. 

And luckily, it worked!  We are watching two sweet pups right now, Baxter and Kapha.  

So Rover, the dog site we use for dog sitting, sends out emails with random dog facts and tips weekly.  This week they sent a quiz to figure out what dog you are like and what breed is best for you.  I don’t really think these things work very often, but I was shocked when I got Border Collie.  Our dog Callie is a rescue and we know she has some Australian Shepard in her, but seeing this picture makes me certain that she is part Border Collie.  She looks so much like this pup! 


I know this has been circulating around facebook for a while now, but every time I see it, I just about die laughing.  I love little chubby babies. 


Remember that trip to Lowes with 3 boys I told you about a couple weeks ago?  Well I did pick up something I wanted while I was there.  I have been meaning to cook cedar plank salmon for a while (love when they have it on a menu at a restaurant), but just always forget about it.  I followed the directions to soak the board for at least an hour (I soaked it for 2 hours) before putting it on the grill.  The directions say to grill the plank for 3 minutes on one side and then flip it over and put the salmon on the heated side of the plank and grill for 12-15 minutes with the grill closed.  When my husband went to put the salmon on the grill after the plank was heating up, it was on fire!!!  Like really on fire. LOL.  We realized that the grill was supposed to be on low to medium heat and ofcourse, ours was on high.  Oh well, what can you do.  

We decided to just grill the salmon directly on the grill and try again next time.  The cedar board came with a recipe for salmon with spice run so I decided to give it a try!

In case the picture is hard to read, here is the salmon spice rub recipe: 

2 tablespoons brown sugar

1 teaspoon course salt

2 teaspoons chili powder

2 teaspoons cumin 

1/2 teaspoon black pepper 

Note: This spice rub recipe is for 4 pieces of salmon so I halved it because I made two.  


You simply just mix up the rub and spread it all over the salmon fillets.  I decided to serve mine with grilled corn on the cob and asparagus.  


I let the rub soak in for about 30-45 minutes.  


After the salmon is done grilling, drizzle the fillets with honey.  And that is it!  Dinner is served!!  This recipe is so easy and it will definitely be a keeper for us.  My husband said it was the best I have ever made!  Win!!  Sometimes mistakes turn into deliciousness!

Interview With The Next Alicia Florrick

Good morning guys!  I hope your morning is going well!  Only one more day until the weekend is here!  

Today I have a fun post for you.  As you may remember, I started an interview series on my blog where I interview people in different professions/stages of life to learn what it is like to walk in their shoes and hopefully gain a new perspective or some helpful tips! Well today we have an aspiring lawyer, the law student, Morgan Francy (my sister)!


Guys, have I told you how awesome my sister is?  I’m sure you have heard me talk about how she was the most amazing maid of honor ever and how we hang out all the time, but guess what?  There’s more.  She is currently finishing up her first year of law school!  To say she is smart is a huge understatement (this girl is at the top of her class).  She’s pretty, she’s funny, she’s brilliant, she’s in shape, she has amazing hair, she is always dressed to a T, and she still finds time to make other people feel special.  She truly is one of a kind.  I thought it would be neat to interview her for the blog to get a taste of what law school is like and also get some tips on how she gets it all done (and done well) while making time for her boyfriend, her son (dog), Otis, her family, and her 10 million friends. 


Introduce yourself.  

My name is Morgan.  I am from Nashville, TN. I went to SMU for undergrad and stayed in Dallas after graduation and worked for the Dallas Stars for a year.  Then I made the decision to go back to law school and am currently finishing up my first year.  I live with my boyfriend, Max, and my dog, Otis. I don’t have a lot of hobbies right now but if I have free time I am usually at the dog park, hanging out with my friends, watching sports or binge watching Netflix. 


What made you decide to go to law school?

Law has always interested me since my dad is an attorney and I think it is interesting how the law shapes our society and the decisions we make.  I was looking for a career that would constantly challenge me and allow me to use my skills to help others. 

Was your family/boyfriend supportive?

Yes. I think it is really important to have a good support group.  It can be a very isolating world in a sense because you do spend a lot of time alone reading and writing so it is good to have a support system to just vent to or get away with.

Tell us what a typical day is like in law school.  What time do you get up? Go to bed? How long do you spending studying?

I wake up around 7 and I try to leave the house by 7:45.  I spend time in the morning watching TV (sports center) and packing a lunch and snacks for the day and get my books and bag ready for school. Depending on my schedule I typically have 2-3 classes per day starting around 9 or 11.  I function a little better in the morning so I try to get to school around 8 to knock some things out and prepare for class.  Not all professors are the same, but some of them are what you see on TV where they just call you out so I like to reread my notes before class starts and then in between classes I usually just get a little study room in the library and spend time preparing for the next day or week or summarizing notes from that day’s class.  Depending on the day I typically get done with class around 3-5 pm.  Some days I need a little mental break around 5 so I will go home and let Otis out and maybe go to the dog park. And other days I stay at school after class and get another study room in the library and sometimes my friends meet me there.  I typically spend the rest of the night reading.  Max makes dinner and I eat whatever he makes.  I continue reading from 7:30 on until I go to bed around 11:30.  Closer to finals I stay up later and sometimes I go to bed earlier if I am really tired.  After a certain hour I don’t retain information and I function better in the morning so I will choose to get a good night’s sleep. 



How many hours do you spend studying on the weekend?

At the beginning of the semester I would usually do a half day on Saturday and on Sunday and closer to finals, I study pretty much all day on the weekends with a few breaks.

What else do you enjoy doing on the weekends?

Hanging out with Taylor and Jon and friends that I don’t get to see often.  I spend a lot of time with my law school friends so I try to make time on the weekends for my friends outside of law school.  Law school can be a little bit of a bubble so it is nice to hang out with people outside of that world. 


How do you manage to eat healthy in law school?

I don’t (all the time). 🙂  The key to it is planning.  If you don’t take the time to plan in the morning, you are too busy by 3 pm to worry about it and you will just grab whatever is there whether it is healthy or not.  Morning is the best time to plan because you don’t have a lot of stress like you do after class.  And I am lucky to have Max so that is fortunate.  He makes a lot of meals with leftovers so I have leftovers for lunches so that helps.  And I pack a lot of snacks so that I don’t buy something if I am at the library right before dinner because there is nothing healthy at school.

What does a typical day of eats look like for you?

I have a gluten free UDI’s muffin in the morning or honey nut cheerios.  I have a cup of OJ with EmergenC and when I get to school I get a Venti coffee.  For lunch it just depends on what we had for dinner.  I like gluten free pasta because it is easy to take for lunch and a peach cup for dessert.  I typically pack an apple and some trail mix for snacks throughout the morning or early afternoon.  Max makes a lot of taco meat so ill have a taco salad for lunch because it isn’t too heavy.  Then I typically get another cup of coffee in the afternoon before the afternoon classes start.  Then dinner just varies.  Our most common dinners are gluten free pasta, gluten free pizza, or sweet potatoes. We are also big ice cream people.  That is our guilty pleasure.  Then I always sprinkle in Amino Energy throughout the day when I get sick of coffee.

Does Max do the grocery shopping and the cooking?

Yes, but we do run into issues because when he does the grocery shopping I don’t always know what we have in the fridge so it is hard to think of what to eat when one person does the grocery shopping.

Do you take any supplements regularly?

No, but I take EmergenC regularly but that is it. 

Do you do any type of exercise?

Not right now.  I used to so it is definitely doable and helpful in law school, but it is usually the first thing that goes when I am crunched for time. 


What are your tips for managing to get everything done and striving for balance in all areas of your life (school, family, friends, etc.)?

I would say planning is the biggest thing.  Setting out your week and by making a plan. I will stay up later the night before I hang out with a friend or get up earlier to get everything done.  If I don’t have a plan then I will be constantly anxious about when I will get everything done.  And I think recognizing that there has to be down time is important. I struggle with that a lot because you feel like you have to constantly be doing something and it sounds weird, but it is important to plan downtime. 


What is your number one tip for good health?

I would say a good night’s sleep.  Law school is stressful enough and I don’t think your brain functions after a certain point ( I learned this first semester after so many late nights with lots of caffeine). 

What will you be doing this summer after you are done with your first year?

I am working at a big firm here in Dallas for 8 weeks and then doing another one week program with another firm. 

What advice would you give to those thinking about law school or going back to school?

First I would talk to people who are in the profession because I think it is a really hard and long process and for someone who is already working and has a stable life it is a big change.  But when you see people who are in the job you want, it helps to know your goal and understand why you are doing this.  Talk to people who are in school because it can be very different from your job or even from undergrad.  It is important that you know the expectations going into it and what the requirements are to succeed beforehand.  It is a long process, but think about how much more you will know and how much more educated you will be.  You will know information that a very limited number of people in the US know, which is really neat. 

What is the hardest thing about law school or the biggest shock? 

How hard you have to work to do well.  I have always done well in school so I didn’t think I would have to work as hard as I have to.   It has always been a little bit easier for me (school).  Going to class and paying attention used to be enough, but that’s just not enough in law school.  That was a big realization for me. 

Do you have any idea what type of law you want or do not want to practice when graduate?

I am leaning towards transactional work over litigation.  Some people really get a rush from speaking in front of court or fighting against the other party, but I kind of like the idea of collaborating together more so than fighting.

What I Ate Wednesday and Exercising is a Privilege

Good morning and happy Wednesday!  How is your week going?  

I always love seeing what others are eating so today I thought I would link up and show you what I ate yesterday.  I didn’t snap pictures of everything, but I think I got almost everything.  But before we get into my meals, there is something I wanted to discuss with you all.  If you don’t know by now, I love to exercise.  I love it so much, in fact, that I usually exercise 6 (sometimes 7) days a week.  It is my alone time to process my thoughts and get my head on straight.  After a workout, there is nothing I can’t accomplish.  

As a wellness coach, I hear a lot of excuses why clients don’t want to exercise.  

“I don’t have time.” “I’m too tired.” “I don’t have a gym membership.” “I heard exercise was bad for you.”  Trust me, I have heard it all.  

I don’t mean to downplay true issues that arise.  Sometimes an injury pops up, or an unexpected problem, or life just gets in the way. 

One question I get regularly is “how do you find the motivation to exercise so much?”  Exercise has never been an option for me.   It is a habit; it is just a part of my daily routine.  But I think the biggest reason that I don’t find exercise daunting is that I choose a positive perspective when it comes to exercise.  I don’t see exercise as something I HAVE to do.  I see exercise as something I GET to do.  Exercising is a privilege that I (thankfully) have.  There are so many people that don’t have to ability to exercise whether it be due to injury, illness or another factor.  I have two legs and two arms that work and you better bet I am going to take full advantage of them.  

Whenever I am dreading a run or a workout class, I remind myself that I GET to exercise.  Everyone has there own mantras that motivate them, and this one is mine.  Seeing exercise through this lens moves me in a way that no other mantra or thought process does.  I am so lucky that I have the PRIVILEGE to exercise.  And now I am excited for my run tonight! 🙂

6:30am: Coffee, banana and dark chocolate overnight oats (prepared the night before) 


9:00am: Apple and Think Thin Creamy Peanut Butter bar (forgot to take a picture of both)

11:00am: Handful of grapes (sorry, no picture) 

1:00pm: Kale and romaine salad with fresh corn, chopped almonds, and quinoa with balsamic yogurt dressing 


1:30pm: coconut yogurt with mangoes and strawberries 

3:30pm: LOTS of watermelon (unpictured)

6:00pm: handful of almonds while cooking dinner (unpictured)

6:15pm: kale salad with almonds and homemade lemon vinaigrette, leftover quinoa, sauteed carrots and cabbage, and a veggie burger with avocado on top (I have been eating a lot of veggie burgers for convenience when I am in a hurry) 


7:30pm: 2 glasses of sauvignon blanc (unpictured) at Dallas Beer Kitchen while playing bar trivia with a few of our friends (we came in second to last…)! 

As you can see, I LOVE fruit.  I usually don’t have as much as I did yesterday, but hey, it could be worse!  I hope you enjoyed seeing what I eat in a day!  Have a wonderful Wednesday!

Weekend Recap 4.25.16

Good morning!!! How was your weekend?  Ours was one for the books!!  On Friday, I drove to Arkansas with a friend and my two puppies to meet my husband (he was already there for work) at our friends’ house to surprise them for their birthdays (they both had birthdays on Saturday)!!  It was such a fun surprise and we had a busy weekend with lots of plans! 

After we arrived to our friends’ house on Friday afternoon, we had a cocktail on their beautiful porch!

A big group of us went to out to dinner and I got the beet salad, which was delicious!

Saturday morning started bright and early with a run around the neighborhood.  Our friends live in a neighborhood with a ton of hills so I was pretty sore from my run.  I had to ice my shins when I got home last night. 


After we got ready, we headed to Arsaga’s for brunch!  I got the kale salad and two scrambled eggs and it hit the spot!

After brunch we wondered around the college town and did a little shopping at a cute boutique.  I got 3 new casual dresses for our upcoming trip! 

After a little shopping, we came home and took a long walk with the pups and relaxed a bit before heading to Gloss to get our nails done while the boys played golf! 

After our nails were nice and pretty, we headed to pick up a few things from the store to grill for dinner.  We grilled salmon, burgers, and lots of veggies.  We dinner we sang happy birthday to our friends and cut the cake! It was a milestone birthday for our friend Rachel.  How cute is this cake that her fiance got?


They blew out the candles (my friend Rachel and her fiance have the same birthday!! How crazy is that??) and we watched as Rachel opened all her “gag” gifts!  We all had quite a few laughs. 🙂

After dinner and gift opening, a bunch of their friends came over for a party at the house.  It was really fun!!  Then we headed to the bars for a little more fun.  Our first stop was this bar called Shotz.  The bar is known for its shots that are served in ice shot glasses that you throw on the ground after taking the shot.  I don’t do shots, but loved watching everyone else! 🙂  After another bar and lots of dancing, we called it a night.

We headed back to Dallas Sunday morning.  I drove the whole way while the boys slept…. I surprisingly had a lot of energy when we got home so after unpacking, doing the laundry, and taking the pups on a walk, I ran an easy 5 miles on the treadmill and ended up with over 18,000 steps for the day.  I am pretty pleased with that number considering I was in the car for 5 hours! 

I didn’t get a chance to do any grocery shopping yesterday (I avoid on Sundays if possible because it is so crowded) so we ordered thai food for dinner.  These fresh salad rolls with peanut sauce were soo good. 


We were wiped and headed to bed early.  I made it to my Body Pump class this morning so my week is off to a great start!! I hope you guys had an amazing weekend and that your week is just as great!

Happy Birthday to My Better Half

Good morning and happy Friday ya’ll!! The weekend is near!  This week seemed to drag on and on for me so I am looking forward to the weekend!  I totally meant to pop in yesterday, but the day just got away from me, but hey, it happens.

I have some fun posts coming up, but today I have to take a little pause to talk about something a little more important that deserves way more than a blog post, but this will do for now.  It is my husband’s birthday today!  I’ll keep his age a secret but I will tell you, he is showing more and more gray hairs everyday.  That is probably because he has to put up with me, but that’s besides the point. 😉

I know I talk about my husband a lot on the blog, but really, you guys just get to see a small glimpse of him.  He truly is one of a kind and I am so lucky that he chose me.

Family Dinner

Good morning! How is your week going so far?  Mine is going well, but I am exhausted.  Keep the coffee coming!  


Last night we had plans to go out to dinner with my husband’s aunt and uncle that live in the area.  We decided on HG Supply Co as it is a favorite of ours.  Found this shirt in the back of my closet!  Love when I find things in my closet that I haven’t worn in forever! 


From Monday to Friday, HG Supply Co does a sunset toast with everyone in the restaurant to taste one of their infused liquors.  This one was a cucumber vodka.  

I got the Chill Beets bowl with grilled salmon.  It had quinoa, black rice, kale, cucumbers, beets, and avocado with a delicious dressing.  


My hubs got this cookie for dessert and the ice cream was made out of almond milk! 


After dinner we headed to the rooftop bar to check out the views of downtown. 

We ended the night watching a basketball game while Riley played with all our stuffed animals.  He was loving life.

Weekend Recap 4.18.16 and Healthy Tuna Bean Salad Recipe

Hi ya’ll!  Happy Monday!! How was your weekend?  I hope it was great, mine was! This weekend my father-in-law and brother-in-law were visiting!  We had a blast despite the rainy weather. 

Let’s first back up to Friday afternoon.  I got in a quick 5 miles on the treadmill after work.


I picked up some strawberries and raspberries at the store this week and they are so good!


Then we celebrated the beginning of the weekend with cocktails on the rooftop!  We picked my brother-in-law up at the airport then headed out for a drink with some friends.


Saturday started with a Body Pump class then we all took a trip out to our boat so my husband could do some maintenance stuff.  The weather was too icky to go on the boat. 😦  Afterwards we stopped by Lowes so the boys could browse… remind me never to go to Lowes with 3 boys ever again.  Two hours later, we headed home.  The boys headed to the Rangers game on Saturday night and my sister and I hung out with the pups plus these two cuties.  

Sunday morning started bright and early with a 5 mile run then we got ready to head to Top Golf.  We had a drink and some appetizers while we waited for our bay.  Top Golf was so much fun and luckily it is covered so even though it was raining, we still got to play! 

Then we lounged around for a bit and played a lot of fetch with the pups! 

We went to dinner at Ragin Crab.  It was good, but soo messy.  Definitely not somewhere you would want to take a first date. 🙂

We grabbed a popsicle from Steel City Pops for an after dinner treat. 


This morning started with another Body Pump class followed by a delicious lunch of kale salad with tuna bean salad on two rice cakes. 


Healthy Tuna Bean Salad Recipe 

1 can cannellini beans 

2 cans tuna in water 

2 avocados 


1/4 cup olive oil

1 teaspoon mustard powder

1 teaspoon garlic powder

1 teaspoon chili powder

1 tablespoon spicy mustard

Directions: Mix beans, tuna and avocado together.  Whisk dressing together and pour over tuna mixture.  Serve on a salad, rice cake, or just eat it straight from the bowl!  Enjoy! 


I am currently sipping on a homemade iced coffee while I talk to you!  Loving iced coffees lately… just coffee, unsweetened almond milk, and liquid dark chocolate stevia for some sweetness.

Five Things Friday

Friday is here!! Who else is doing the Friday dance with me?  Woo!!  My brother-in-law and father-in-law are coming to visit this weekend so it should be a good one!  Although the forecast is calling for a lot of rain. 😦  Hopefully it holds off! 


I have a lot of thoughts circling in my head today so in order to try to organize them, I am going to do a Five Things Friday post where I organize my thoughts in groups of 5! Here we gooooo….

5 Meals I Had This Week

  1. Salads with lots of fresh veggies.  I usually add craisins and lots of nuts to my salads, but I am trying to eat more veggies!  



2. More salads with veggies, tofu and avocado.  Avocado makes everything better.


3. Veggie burgers on a salad with avocado (duh!), roasted sweet potatoes and asparagus! 


4. Oatmeal with peanut butter, sliced banana, cinnamon, and honey

5. Tuna mixed with avocado and spices on top of a rice cake.  So delicious.  


5 Snacks I Am Loving 

  1. Date balls.  I just put dates and almonds (and some with peanut butter) in the food processor then roll into balls and coat with shredded coconut or chopped almonds.  I keep them in the freezer for an easy snack during the week. 


2. Fresh fruit.  Currently loving raspberries and strawberries. 


3. Apples.  I eat at least one apple everyday.  They are really good with some date balls on the side!

5 Things You Probably Don’t Know About Me

  1. You all know I love my doggies, but surprisingly, when I was younger, I was not a dog person at all.  In fact, I was terrified of big dogs.  Oh, how times have changed. 


2. I am a homebody and would be fine not leaving the house for days.

    3. I am left-handed.

    4. I studied abroad in Florence, Italy and I still don’t know any Italian. This is from my apartment in Florence. 


    5. I have wanted to be a mom for as long as I can remember.  I was a nanny all throughout college and for 2 years after college and loved it.  There were days when I said “I am never having children” but all in all, the experience made me SO excited to have my own children one day.  My mom has been ready for grandchildren since the day I met Jon. 😉  This is sweet baby Charlie that I watched for 2 years. 


5 Things I Am Looking Forward To

  1. Our trip to the Caymen Islands in May
  2. My best friend Rachael is visiting in May and I can’t wait!!!  I have withdrawals when we go too long without seeing each other.  We can sit and watch murder shows until 4am and have the best time. This is us quite a few years ago when we lived at my dad’s lakehouse for the summer and worked at the restaurant at the marina.


3.My cousin’s (Kate) bachelorette party in Dallas.  There will be 10 girls staying at my house.  My husband is getting the boot for the weekend. 😉

4.Visiting our friends in Boston this summer.  I love Boston and Jon has never been so I am really looking forward to it! 

5. A Napa getaway.  My husband and I fell in love with Napa when we visited a few years ago and have been dying to go back.  Since my husband travels so much for work, I got the companion pass on Southwest this year (I can go with him anywhere for free) so we are trying to make the most of it and get in a LOT of trips this year.

Happy Thursday ya’ll!!! I am currently sipping some coffee trying to stay awake after an early morning Body Pump class at the gym!  Have any of you done the new release?  It is good, but hard!  


I haven’t been cooking or doing anything too exciting this week because I am still trying to get back to feeling 100%.  I have a an appointment for a spinal decompression (I don’t really understand what it is, but it came with a massage groupon my husband bought me) today so I am hoping that helps my back feel a little better.  I will report back about it tomorrow!  

Every once in a while I end up with a ton of screenshots on my phone of quotes or recipes I want to save for later so I thought I would share those with you guys today! 

This Shrimp and Lentil-Herb Salad looks so good!! I love lentils, but I don’t cook them much.  Do you?
