Hi ya’ll! Happy Wednesday to you! Well, we have made it to the halfway point of the week so that is something to celebrate, right? If you are in the mood to celebrate, you should do so with this scrumptious dish!
I love fried rice. I mean, who doesn’t? But most times it is filled with lots of extra fat and calories that are unnecessary and leave you feeling kinda icky. Today I’ve got a recipe for you that is so good for you that you can eat as much as you want without feeling guilty! I may or may not have gone back for seconds and thirds. Oops!
This recipe takes a bit of prep work, but I promise you that it is worth the effort!! You could definitely make this even more simple by purchasing chopped veggies or frozen veggies.
What you will need:
- 1 head of cauliflower (Trader Joes now sells cauliflower rice by the vegetables and in the frozen section too to make it extra simple)
- 1 zucchini
- 1 red pepper
- 1/2 white onion
- 1 small package of mushrooms
- 2 large carrots
- 2-3 cloves of fresh garlic
- 4 eggs
- 4 tablespoons of soy sauce (or braggs aminos)
Chop the head of cauliflower just enough so it all fits in the food processor.
Pulse until pretty finely ground with a little bit of texture left. You may have to scrape down the sides and the bottom to get it all moving and ground up.
It should be rice-like consistency when finished.
Next, chop all your vegetables pretty small (try to make them all around the same size). You can use any vegetables you like… I just used what I had on hand.
Saute the veggies and the cauliflower with a little olive oil, salt and pepper. (I sauteed them separately because my pans were not big enough). I sauteed the harder veggies first then added the softer ones. I added a couple cloves of chopped garlic last.
After the cauliflower has begun to brown a bit, crack 4 eggs in a separate bowl and whisk them together breaking the yolks. Slowly incorporate the eggs into the riced cauliflower.
Continually scrape the eggs with a spatula until fully cooked.
Incorporate veggies into the egg/cauliflower mixture and mix it all up!
Next, pour soy sauce into mixture. (more or less depending on taste)
It should look like this at the end!
It’s not pretty, but it sure is yummy so pile your plate high!
I prefer it with sliced avocado on top! This recipe would be great with shrimp, tofu, chicken, or steak!
And a little salt and pepper to top it off!
