Good morning everyone! How are you guys doing? My weekend has been great so far and I’ll keep it short and sweet because I’m off to go for a run before attending a boat show with my husband (not sure how I got talked into that one ;)) before we watch the Super Bowl tonight! I don’t love football, but I sure do like the commercials.
While I love to cook and even plan food for a party, I do not love the process of meal planning each week for my little family. When I make my grocery list, I do think about what ingredients I need for a couple meals, but then the rest is just random things I want and things I see on sale while actually shopping. That is why most of our dinners end up being a hodgepodge of vegetables/salads/protein. While I am completely fine with this, my husband prefers more well-planned balanced meals.
So in honor of trying to please my husband ;), here is our meal plan for the week:
Sunday: Spaghetti squash with pesto and grilled chicken/shrimp
Monday: Tacos (tofu for me, ground turkey for the hubs)
Tuesday: Veggie Cauliflower Fried Rice (recipe to come!)
Wednesday: Grilled salmon with roasted broccoli and sauteed mushrooms
Thursday: Burgers (veggie for me, meat for the hubs) with sweet potato fries
Friday: Out/wing it
Saturday: Out/wing it
Almost all of our meals include a big salad too and some popcorn or dark chocolate chips for dessert!
