Weekend Recap 2.29.16

Good morning everyone!  Ah.. Mondays always seem to sneak up so fast!  We had a very relaxing and productive weekend over here so I can’t complain! Lots to do today so I’ll get right to it!


This morning started off bright and early with a 6am body pump class followed by a big bowl of fresh kiwi, peaches and grapefruit and a bowl of overnight oats (recipe to come!).


There was some dog park action this weekend to wear out the pups (we were watching 4 pups). 

Some rooftop lounging occurred, ofcourse!

I made a big batch of kale and purple cabbage salad with a warm vinaigrette to have throughout the weekend. I love using kale as the base of my salads because I can dress them ahead of time and the kale does not wilt like spinach. 

A lot of my meals this weekend looked like this… eating up the leftover quinoa burgers!

Sunday morning started with a 5 mile run while catching up on “How to Get Away With Murder.”  Do any of you guys watch this show?


After my run, we had to run out to our boat (we keep it at the marina about 20 minutes from our house) to do a couple things to get it ready to be put in the water in a couple weeks!  I watched as my husband did all the work 😉

As we waited for the marina workers to get back from lunch (we needed to renew our boat slip and lift agreement), we stopped into Bass Pro Shop to waste some time.  My husband was in heaven… me, not so much.  I did enjoy browsing the boat toys.. I think we may need a few new ones for this summer. 🙂

The rest of our Sunday looked a lot like this…. me + 4 dogs on our small couch.  


Riley was lonely so Piper went to keep him company. 🙂  Melts my heart. 

Butterball had a little too much fun! 😉


And sweet Penelope is just as cute as can be. My husband made sure she was all tucked in.


My new favorite snack/dessert.  Dark chocolate chips and chunks, craisins, unsweetened coconut, and raw almonds. Sweet and salty = delicious!

Delicious eats lately

Hi guys!  Popping in on this low key Sunday morning to share some delicious eats that have been happening in my house lately that haven’t made it to the blog for one reason or another.  I’ll keep the words short because I am off for a short run before we make our way our to our boat to do some maintenance to get it ready to put in the water in a few short weeks!! (Praying for boat weather soon!!)

First let’s start with some yummy snacks!

Green smoothie and chocolate chia seed pudding with lots of toppings!


Greek yogurt with raw honey and fresh blueberries. 


Craisins and almonds are a favorite mixture of mine!


I love edamame as an appetizer when I am getting dinner ready. 


And now some delicious meals that have been happening around here!

Throw some eggs on top and it makes ever meal better! Kale salad, brown rice with veggies and avocado with fried eggs on top.

Roasted butternut squash, apples and pecans on top of red quinoa.

Sauteed or roasted, I love my veggies!

We love Mexican night in our house!  Tacos or rice bowls with all the toppings!

Salad with rice crackers and olive tapenade (my favorite!).


I love fish!  Salmon, mahi mahi, and tuna are my favorites.

And you guys know I love my veggie burgers.

Quinoa Veggie Burgers

Hi guys!  Hope you weekend is off to a good start!  I took an early morning body pump class followed by a walk with the pups so my Saturday has been great so far!  Before we get to the recipe today, I thought I would show you some pictures of the last 2 days around here!

My morning smoothie today was spinach, banana, flaxseed, pineapple, raspberries, blackberries, and coconut water.  This was such a good one!  The base of my smoothies always seems to be spinach, flaxseed, and banana and then I rotate the frozen fruit between berries, pineapples, mangos, kiwis and peaches and I rotate the liquid between plain water, coconut water and orange juice.  

Butterball is back so you know it’s a good day! 


We are currently watching Penelope and Piper, too.  They are such sweethearts.

Without further ado, the quinoa veggie burger recipe!  I love to make my own veggie burgers because the ones at the store can be full of fillers, fat, and ingredients I can’t even pronounce.  Everytime I make a batch of quinoa, I always end up with a bunch of extra quinoa and usually end up making veggie burgers with it.  I like to freeze them individually for a quick, weeknight meal or they can be stored in the fridge for up to 5-6 days.  This recipe was posted to rayandtaynutrition’s instagram awhile ago and I adapted it this week because of the ingredients I had on hand.  This recipe is so simple and you can make a lot of swaps depending on your preferences. 

This week I combined cooked quinoa, nutritional yeast, sauteed mushrooms and zucchini, lemon juice, garlic powder, chili powder, paprika, salt, pepper, flaxseed, and 2 eggs.  I am not good when it comes to measuring, but you just want to make sure the mixture will hold together.  If it seems to wet, add more nutritional yeast and flaxseed; and if it seems to dry, add more lemon juice.  Refrigerating the mixture for at least 30 minutes is important to help it stick together when grilling or baking.  


My favorite way to serve the quinoa veggie burgers is on a big salad topped with avocado!


I topped this one with a raspberry pecan vinaigrette I found at the store. It was delicious!

I’m back, domain change, and Friday favorites

Good morning ya’ll!  Happy Friday!! How is everyone doing?  I so excited for the weekend to relax and just get ahead on a couple things.  You may have noticed… I bought my domain (tastytrialsandtravels.com)!! I am so excited about it!  Things are back up and running and I am back to regular blog posting today!  

So in honor of Friday Favorites, I thought I would show you guys some of my favorite pictures from the last week! 

But first, the most important part!  Last night we went to the Jessie James Decker concert at the House of Blues.  I have always loved her music, but loved her even more after watching her reality show a couple years ago.  (Fun fact: she inspired me to dye my own hair a few years ago and I have been dyeing it by myself ever since.  She has a great youtube tutorial.)  


She brought her cute little girl on stage for a song. 


Her show was really good!  She interacted with the crowd a ton and just seems so genuine. 


And the reason my husband was happy he came… 


We had a blast!

Sunday night we went to Louies (it has been on Diners Drive-ins, and Dives) and I got the grilled salmon and my husband got the pizza.  Never disappoints! 

Last weekend my husband decided he wanted to make a fence with vines up it to block the air conditioner on our roof. 


So we headed to Lowes and got the supplies.  We didn’t like the selection of flower pots so my husband built some to go under the fencing.  He planted English Ivy that we are hoping will grow up the fence and disguise the air conditioner.  

We are known for not being able to keep small plants alive so we will see what happens with this ivy.  


Doug loves to shake!  It is the cutest thing ever! 

That sweet face had to go home a couple days ago and we miss him already.

Playing catch up

Hi guys!  I hope your week is going well!  Mine is off to a good start minus all the technical issues I am having uploading photos to my blog.  I think computer shopping is on the agenda tomorrow.  It is much needed, but I was hoping to wait until after a few upcoming big trips to buy a new one.  Ah, what can you do.  When it’s time, it’s time.


Until then, I just have a couple pictures for you.  Hopefully by tomorrow I will be able to upload the many, many pictures I took over the weekend. 

Friday evenings are for rooftop lounging, sunset watching and champagne drinking.  Life is good.  


Nothing beats a fully stocked kitchen after a big grocery haul.

On the way to the OAR concert on Sunday night with my hubby.  I’m not the biggest OAR fan, but it was pretty fun and the venue was really neat. 



Ya’ll, I am kinda in a workout rut right now.  I am really into Body Pump and running on the treadmill right now, but besides that, I don’t branch out much.  Do you guys have any favorite at-home workouts or group workout classes you love?  Where do you find your workout inspiration?

Weekend Recap 2.22.16

Hi there!! Good morning and happy Tuesday to ya!  I hope you all had a nice weekend and are getting back into the swing of things.  The reason for my lack of a post yesterday was because my blog is acting funky.  I’m not sure what is wrong but only a few photos are uploading and I’m still trying to figure out what is wrong.  I have a few photos for you, but hopefully I’ll be back tomorrow with the rest from our fun weekend!!

My sweet tooth is in full force…

Morning ya’ll!  Happy Saturday!! I hope your weekend is off to a fantastic start!  I’ve had a relaxing morning with a body pump class and some lounging around.  Not sure what the rest of the day will consist of, but I know my husband has some projects in the works. 


I don’t know what it is, but I have had the biggest sweet tooth lately.  Don’t get me wrong, I like my sweets (chocolate), but I can usually resist temptation and keep the sweet snacking to a minimum (a few days a week).  There is nothing wrong with having a sweet treat every day, but for me, I feel my best when I don’t indulge daily because usually a handful of chocolate chips leads to another and another and another…you get the point.  🙂

Today I thought I would show you some of my favorite “healthier” options for when your sweet tooth is in full force.  Next time you have a sweet tooth, try one of these options before reaching for that cookie! (My mom wanted me to show you guys her Valentine’s cookies… she’s so cute). 


One of my favorite easy ways to satisfy a sweet tooth is dates.  I love them plain, but they are also delicious with a little peanut butter or almond butter on top!  Another bonus is they are super easy to travel with if you need a snack at work, on a plane ride, or on a roadtrip.  

This picture does not do this sweet treat justice.  Chocolate chia seed pudding.  I followed the same recipe as my regular chia seed pudding just added a couple tablespoons of dark chocolate cocoa powder.  

The topping choices are endless!  I prefer unsweetened coconut, dark chocolate chips, and chopped almonds. 


The last one is another play on the 3 ingredient chocolate truffles.  I customized the fillings and toppings to have a lot of variety and choices. Dark chocolate was always the base.


Some I filled with almonds, coconut and even peanut butter.


Then topped them with a little more dark chocolate and some toppings.  Sea salt is my favorite! 

Just freeze and they are ready to go!  The peanut butter filled ones were the favorite among my husband, sister and my sister’s boyfriend.

Flashback Friday via Rayandtaynutrition

Morning ya’ll!! Happy Friday!! How are you doing today?  Are you guys ready for the weekend?  We don’t have much on the agenda over here, but that is just fine by me! 


You may or may not know that my friend Rachael and I started an Instagram account (rayandtaynutrition) a while ago following our yummy and nutritious eats!  We both kind of let it slip a bit with my wedding and Rachael starting a health coaching business with her sister and life just got crazy busy!

I still post on our page occasionally and still love connecting with other like-minded individuals (which I love doing through my blog as well), but wanted to show you some of my favorite recipes and food pictures from the past year on our Instagram page!  Sometimes I lose track of my recipes and forget about them so this way I can bring them out of hiding and share them with all of you! One of my favorite juice recipes!

This is another favorite!  I really need to get out the old juicer more often… it is just quite the pain to clean.  

I always have fresh cut up fruit on hand in my fridge.


As soon as I get home from the grocery store, I wash my fruit so it is ready to go when I need a snack!


This watermelon is making me crave summertime.  I can eat a whole watermelon by myself in one day.  🙂


We hosted a challenge for everyone to go vegan for 1 month.  Although I eat this way often, it was a challenge and definitely made me more aware of the non-vegan choices I make.  Today, I am all about moderation.  🙂

Then we hosted a 3 day raw vegan challenge.  Now that was hard.. mostly because I like to “cook” dinner.  It is always fun to have a challenge to try to  test your will power though!

Out and about in Austin, TX

Hi guys!  Happy Thursday!!  Are you all ready for the weekend?  Well it is almost here!  Before we head back to Dallas, here are some pictures from the rest of our time in Austin!


Yesterday the pups and I headed out to a nearby park down by the water for a long walk.

It was the most beautiful day so we just walked and walked and walked for almost 2 hours.

Story time: For our 4th dating anniversary, my husband planned a trip to Austin, TX (I had always wanted to go) while we were living in Cincinnati, OH.  He surprised me at dinner the night before our plane was set to depart.  I was in total shock as I am very hard to surprise and usually end up finding out before the actual surprise.  It was such a fun trip and one of the days we took a boat cruise that pointed out all of Austin’s history.  On our walk yesterday, the pups and I stopped to take a picture of where my husband and I got on the boat 3 years ago (I think). Such good memories.


After the hubs was done working, we walked around downtown for a bit with the pups and stopped to have a drink at a local bar/restaurant.  


The pups enjoyed watching people walk past with their doggies. 

After a drink, we went to a restaurant called Red’s Porch for dinner.  We made sure to choose a place where we could sit outside with the pups.  


They were so happy to tag along. 

I got the spinach salad with blackened salmon on top and it was amazing.  So so so good.  My husband got the roasted chicken and said it was the best he has ever had. 


This morning started off bright and early at the gym.  The treadmills were all taken (again) so I did the elliptical for 15 minutes before running a couple miles on the treadmill followed by some weights.  Great way to start the day! 

Off to make the drive back to Dallas!  See you all tomorrow!

Rooftop lounging and a roadtrip

Good morning and happy Wednesday to you all! I hope your week is going well so far!  Mine sure is!  This week is a little different than normal with a roadtrip thrown in the middle, which is a nice little break from the usual routine. 


Lately there has been a lot of this going on…. 

The weather in Dallas has been absolutely amazing… in the 70s this week.

Lots of lunches on the roof.  Yep, another wrap.  I’m obsessed.  And olive tapenade with rice crackers.

And smoothies.  Lots of smoothies.  This one had spinach, flaxseed, orange juice, banana, pineapple, mango, and kiwi.

Got in a quick 3.5 mile run after work yesterday before hitting the road for Austin, TX with the hubs and the pups.

By the time we made it to Austin, we were pretty hungry so we just picked up Chipotle to take to the hotel. So yummy.


This morning started bright and early at the gym with the elliptical (all the treadmills were taken) and weights.  I always come prepared with lots of snacks so I made a simple breakfast in the room with 2 rice cakes, peanut butter and banana! 

The pups and I are off to go explore a nearby park while the hubby is at work (we all tagged along on his business trip).  Have an amazing day!!
