3 ingredient chocolate truffles

Happy Friday everyone!!  How are you doing today? Ready for the weekend? Is there snow where you are?  No snow in Dallas today, but it is cold!!

If you are stuck inside this weekend and craving something sweet, I have the perfect treat for you!  I made these truffles the other day and they did not disappoint!  My husband loved them too! The best part is that they only require 3 ingredients, which means not much effort or mess to clean up!

Do you guys have snapchat?  I found this recipe on the tastemade story on snapchat and took a screen shot.  The original recipe calls for maple butter, but I replaced it with what I had on hand (peanut butter) and it worked just fine!

First step is to melt some dark chocolate (microwave for 30-60 seconds stirring occasionally).  

Then you spread the melted chocolate into molds (I had this tray on hand, but you could easily just use ice cube trays)

Just spoon a little chocolate into the mold and use the back of the spoon to push the chocolate up onto the sides of each mold.

It doesn’t need to be perfect so don’t worry!  Pop the mold into the freezer for at least 10 minutes until the bottom layer of chocolate is frozen.

While the chocolate is setting up in the freezer, put a handful of dates in a bowl.

Then boil some water (amount does not matter, just enough so that it will cover the dates).

Next, pour the boiling water over the dates and let them soak for at least an hour.

After at least an hour and the dates have plumped up a bit, strain the water and add the dates to the blender or food processor with a couple tablespoons of peanut butter (you can use any nut butter you want).  Blend. 

Using a teaspoon, spoon small amount of date/peanut butter mixture into the molds on top of the frozen chocolate mixture. 

Next, melt more dark chocolate and spoon onto the top of the molds to cover date mixture. 

Pop into freezer for a couple hours (I froze mine overnight).  Then flip over the tray and the truffles should come out with a little tap.  

These are seriously so good and will instantly satisfy any sweet tooth!  I like to keep mine in the freezer (I like them really cold), but you can store in the fridge or room temperature for a few days!

  1. These look delish! I love dark chocolate. We are supposed to get hit by the winter storm tomorrow too! Hopefully not too bad though, but I wouldn’t mind classes getting cancelled Monday 🙂 hope you have a great weekend!

  2. Cant wait to make these…they look delicious! Dark chocolate is my favorite in all the land 🙂 The latest forecast for where I live in PA says 12-18 inches coming tonight tomorrow and sunday morning….eek!
