Dog park fun and healthy meals

Hi guys!  One more day until the weekend!!  Is anyone else ready for Friday?  I sure am!  I was up bright and early for a class at the gym at 5:45 AM… it never gets easier waking up at 5 AM, but it is always worth it and makes my day so much better!

Yesterday it was 65 degrees in Dallas.  Yes, 65 in January.  It is very strange, but I will take it.  We had to take advantage of the warm weather and head to the park with the pups! So we loaded up the car (2 humans + 5 dogs = a very exciting car ride).

The usual green smoothie for breakfast yesterday!

Dinner a couple nights ago was roasted acorn squash with red quinoa, sauteed kale, onions, and garlic (seasoned with lemon juice, balsamic, chili powder, salt, and pepper).

I simply just roasted the squash in the oven, sauteed the veggies on the stovetop, and cooked the quinoa in vegetable brother.  Then put it all together!  So simple, healthy, delicious and filling!  

The makings of last night’s dinner.  Sweet potatoes chopped, oiled, salt and peppered, and ready to roast in the oven!  Fresh green beans washed and edges trimmed ready to be cooked (sauteed with onions and garlic). 

Paired with salmon my husband grilled!
