Taco night and a Rebellious Doggie

Good morning, yall!! I hope your weekend is off to a fantastic start!  I am off to my favorite Body Pump class to start the weekend on a good note then we have some last minute Christmas shopping to finish.


Can you guess what we had for dinner Wednesday night?


I don’t know about you guys, but Mexican seems to be our dinner of choice a few times each week.  We used to make taco/rice bowls every once in a while, but since moving to Texas and finding amazing Mexican restaurants, we have been more inclined to perfect our taco/rice bowls for the best flavor!

My Mexican plate included leftover cilantro brown rice, grilled corn, black beans, sauteed onion and red pepper, lettuce, broiled tofu (marinated in olive oil, salt, pepper, chili powder, lemon juice, garlic powder, and balsamic vinegar) and homemade guacamole (avocado, chopped onion, minced garlic, salt, pepper, cilantro, and lime juice).  


My husband likes to use corn tortillas, grilled chicken, and Mexican cheese in addition to the above ingredients.  Taco/rice bowls are so versatile and I think that is what makes them so good.  Add or subtract ingredients to please your cravings!

You can’t go wrong with a glass of red wine on the side 😉


Thursday started bright and early with a Body Pump class after dropping my husband off at the airport for a work trip.  My favorite way to start the day!


Followed by a delicious and filling breakfast of two rice cakes, mashed avocado, 3 eggs over easy (lots of chili powder on top) and mixed fruit on the side!

And a quick morning walk with the pups!

And the easiest lunch ever… leftovers!

Funny story… So, I have really bad chronic back pain and I use this massage chair a lot.  I use it on the floor so the pressure is harder.  Everytime I get up, without fail, one minute later, I find Riley on the massage chair with a toy nearby.  The chair is not on and I don’t know why he likes it so much.  Maybe because it is heated and still warm from when it was on or maybe it is just his way of getting my attention to play fetch with him… either way, it always cracks me up.

Another funny Riley story… On Thursday I did some Christmas shopping (dog toys included) and put the bags in the living room for wrapping Thursday night.  After cooking dinner, I looked over to find this…

I then put the toys back in the bag and tried to tell Riley that he can’t have them until Christmas 😉

Not one minute later, I find this… 

This process continued about 10 times until I finally wrapped the toys… I know I could have moved them to where he couldn’t reach, but it was really fun to watch him snoop through my shopping bags to find his toys.  This pup LOVES his toys.

Finally tired after all his shenanigans.

When the hubs is out of town, an easy dinner it is.  Kale salad and spaghetti squash! yum!

Sweet Treats

Hi there! Well, it’s almost Friday!! We are getting there!!  

To hold you over until the weekend, I have some tasty treats for you today.  I don’t know about you, but my husband and I love chocolate.  I am obsessed with dark chocolate, but my husband… he doesn’t discriminate.

Right around the time dinner is over each night, my husband gives me that look and I know just what he is thinking.  Is there any chocolate in this house?  I may or may not hide it from him… I’m really nice, I know 😉


My husband’s number one request is chocolate drizzled popcorn. 


I buy the smart pop kettle corn and simple pop it, lay it on a tray lined with aluminum foil, melt some dark chocolate chips, and use a fork to drizzle the chocolate onto the popcorn.  I then pop it into the freezer for about 3-5 minutes until it sets up (so the chocolate doesn’t melt all over your hands) and then put it in a bowl and dig in! 

I like my popcorn plain! 


Next up is a favorite of mine that is very adaptable.  

When it comes to dessert, I like to feel like I am indulging without actually over-doing it.  That is where this next recipe comes into play!

Healthy chocolate bark/chocolate fudge.


I have yet to really measure out the ingredients or mess up this recipe. That is why I love it!

Chocolate bark: Melt a couple tablespoons of coconut oil and a couple teaspoons of honey in a bowl, then add a couple tablespoons of dark chocolate cocoa powder and mix.  Line a plate with foil, spread mixture onto foil, pop in freezer.. freeze for at least 10-15 minutes or until it is set.

Chocolate fudge: Melt a couple tablespoons of coconut milk fat (if you open a can of coconut milk, skim off the top thick layer … that is the part you want for this recipe) and a couple teaspoons of honey in a bowl, then add a couple tablespoons of dark chocolate cocoa powder and mix.  Line a plate with foil, spread mixture onto foil (this mixture will be thick like brownie batter), pop in freezer for about 5-10 minutes until set. 


The best part about these recipes is that they are so adaptable to whatever your taste buds desire. 

Easy substitutions: walnut oil for coconut oil, maple syrup for honey, regular cocoa powder (or cacao powder) for dark cocoa powder.

Easy additions (add on top of mixture or into wet mixture before freezing): chopped peppermint candies, chopped pecans, walnuts, pistachios, dried cranberries, shredded coconut, pretzels, sprinkles… the list goes on!

Back to reality part 2

Happy hump day everyone!  It is so hard to get back into the groove of things after a vacation.  

We had so much fun in California, but it is nice to be home and back to a routine.  

Here’s a look at some yummy meals/snacks over the past 2 days!

So I had to try the tuna again.  I used a stove top grill pan this time and only grilled it for 2 minutes on each side on high heat and it turned out better!  The marinade for the tuna is minced garlic, olive oil, lemon juice, fresh thyme, salt and pepper) Super easy.  


We had the tuna with my favorite kale salad with a warm cranberry vinaigrette (sauteed onions in olive oil, add salt pepper, handful of dried cranberries, juice and zest of one lemon, a tablespoon of honey and 3 tablespoons of red wine vinegar and 3 chopped garlic cloves) and cilantro brown rice with sauteed mushrooms, onions and garlic.  


A yummy salad from Crisp we had for a quick lunch after our flight.  It is called the Killer Kale. Yum!  It’s kale, red onion, tomato, walnuts and a lemon Tahini dressing.  

Quick, healthy breakfast of oats, flaxseed, cinnamon (cooked with water) topped with half a sliced banana, peanut butter, and drizzled with honey! So tasty and keeps me full for hours!


Leftover kale salad and grilled tuna for lunch today! I love making extras for lunches throughout the week.  


So I know I am in the minority here… but I actually like to cut fruit.  


I know most people cut their own fruit because it is expensive to buy it pre-cut, but I seriously enjoy cutting fruit… even pineapples, melons, and grapefruit.  I know, I am strange, but for some reason, it is therapeutic to me.  Hey, my husband appreciates my weirdness 🙂

And all ready to go for the week!

Simple dinner of leftover kale salad with avocado, black bean veggie burger, and baked sweet potato fries!  So delicious!

And you know a post wouldn’t be complete without a walk with my pups.

California Days 4 & 5

Happy Monday, ya’ll!  We are headed home from California today.  Here’s a look at the rest of our Saturday and Sunday!


We relaxed most of Saturday afternoon after our long morning hike (we were exhausted and my husband is still not feeling great).  Saturday night we made it out to Balboa Village in Newport Beach for Dinner. 


We looked up restaurant suggestions on yelp and found a moderately priced seafood restaurant with great reviews right on the water.  When we arrived, we were surprised that the restaurant was IN the boat station… My husband’s exact words, “Um are we eating IN the boat station?”  🙂

The restaurant we had dinner at is called Harborside Restaurant and Grand Ballroom and it was delicious.  It exceeded our expectations and it was very reasonably priced! My husband got us 2 glasses of wine from the bar while we waited for our table (we made a reservation, but waited about 10 minutes for a window seat by the water) and the total was $9 for 2 glasses of wine.  WIN!

There were so many great options on the menu. My husband started with the crab cake and thought it was so good.


For our entrees, I got the Grilled Swordfish (I had this almost every night for dinner on a recent vacation to Spain) and Jon got the Coconut crusted Salmon.  We both thought our dishes were amazing!

The best part about this restaurant though was watching the boats drive past during dinner.  And a big plus, during the holidays all of the boats are decorated with lots of lights.  These pictures are horrible and do not do these boats justice, but you get the point 🙂

After dinner, we walked along the boardwalk (which reminds me of my summers at the Jersey Shore) and did a little shopping before stopping in a local bar for a quick drink before heading back to our hotel.  

He loves me, I swear 😉


Sunday morning started with breakfast at the hotel then some lounging around.  Late morning, I made my way to the hotel gym (I love working out in new places when I travel) to get in a quick workout.  

I warmed up with 25 minutes on the elliptical with hill intervals and then came up with this quick, but effective workout.  Let me know if you give it a try 🙂


After resting most of Sunday, we headed to the Ritz Carlton in Dana Point to grab a drink and watch the sunset at 4:43pm (some friends suggested we do this and we are so thankful they did!).  

The sunset was stunning! And the views were just beautiful from all angles.

We enjoyed our wine while watching the sunset.

It was really breathtaking.

We drove about 15 minutes to our dinner destination in Laguna Beach.  Some old favorite songs came on Pandora… do you guys like these songs?

We ate at C’est La Vie and it was really good.  We had the tuna tartar appetizer to start then I had the Salmon and Jon had the Seafood Linguine for entrees.  Both were yummy! 

Since it was still pretty early, we decided to walk to a nearby restaurant (Brussel’s Bistro) for one more drink and dessert.  


We both got wine and Jon got the chocolate molten lava cake.  YUM!

That wraps up our time in California!  We are heading home now! Can’t wait to get back to our pups and our home!

San Diego Days 3 & 4

Hi guys!  It has been a busy, but really fun two days in California.  We made our way to Orange County yesterday afternoon. 

Friday morning we woke up bright and early (thanks to the time difference) and I headed to the gym while Jon worked from the hotel.  Here is my sad attempt at taking pictures while running on the treadmill… 

Late Friday afternoon, we started our drive to Orange County.  It was quite a beautiful drive with very scenic views, which made it fly by.

We switched out our rental car (my husband has been here all week for work) and we got upgraded to a bigger size…. we got this…. 


Lucky us 😉  I will say… the minivan is really spacious… my husband likes it a little too much 🙂

And ofcourse, our daily snapchats from my sister that keep us laughing all day. 

Friday night started with a complimentary happy hour at our hotel.  The glasses were tiny, but I was happy 🙂

We went to a really yummy sushi restaurant for dinner and had plans to go to the ducks game afterwards, but my husband is a little under the weather so we opted for some sleep.  We slept for 10 hours… it was glorious.

Today we woke refreshed and ready for some activity.  We had breakfast at the hotel then headed to a nearby hiking trail for an “easy” hike.  

This was the sign at the beginning of the hike… 


It was a little chilly when we started, but we warmed up pretty quickly and it ended up being perfect weather for a hike.  

We walked and walked and walked some more 😉

The trail is really long and you can actually walk all the way down to Newport Beach… we didn’t quite make it all the way there.

We ended up hiking for 2 hours out and back… needless to say we were pretty exhausted by the end with all the hills!

We definitely do miss the beauty of hills being in Dallas.  

We have some fun plans for tonight so we are resting up at the hotel for now.  I hope you all have a wonderful Saturday!!

San Diego Days 1 & 2

Good Morning!!!  I am blogging from the beautiful state of Cali today so I can’t complain!  I hope everyone is having a great Friday and has some fun weekend plans ahead!  Now for the good stuff!

When I arrived in San Diego, I was greeted by this lovely message on my phone…. ha! I was really hoping I was not on the wrong flight 😉


My uncle picked me up from the airport and we had time to kill before picking up my aunt from the airport.  We found a cute little cafe by the water for lunch with some pretty great views.  

My aunt and uncle have the cutest boxer named Lucky.  He is quite the handful, but so sweet.  Lucky and I took a lot of walks!  I was missing my pups back home.

Wednesday night I got to meet my cousin’s baby, Gabe.  He is such a cutie.  He has endless amounts of energy and his laughs are the cutest!

So then this happened…. and I was really excited!! Until I realized it was not the real Carrie Underwood 😦


My sister always sends me so many fun snapchats of the pups while I am away.

On Thursday, my aunt took me to Coronado (one of my favorite places) to have lunch and take a walk along the beach.

Ofcourse, Lucky got to join too 🙂

We forgot where we parked the car, so we got in some extra steps!

We always have the best time with these two!

Thursday night, we attended a work dinner with Jon’s coworkers and today we are off to orange county!

My mom and I are trying to find some cute holiday desserts to bring to a Christmas party.  I think these look soo cute!

Up Up and Away

Good morning!! I am coming to you from up in the sky flying to San Diego!  I am meeting my husband out there (he’s out there for work) to visit some family and then this weekend we will go to Orange County.  I am excited!  For now I will leave you with some pictures from yesterday.

Afternoon walk with the pups…I really really love Dallas and I do not miss the snow one bit! 🙂

And a yummy easy dinner of brown rice, roasted zucchini and carrots.  Hit the spot.  I was low on food and didn’t want to have stuff left in the fridge when I left town so I just made due with what I had.  Not every dinner is glamorous 😉

So I kinda have a double bubble addiction… I try not to eat much sugar, but I can’t say no to double bubble.  


And this little missy likes to sleep in bed with me when her daddy is gone. 


Dropped the pups off with Aunt Morgan, Uncle Max, and cousin Otis this morning.  I know they will have so much fun and be so tired when we get back.  We are so lucky to have them nearby to watch our doggies and take some great care of them.  

Then I was off to the airport and it was time for takeoff!

Bachelorette Party Weekend

Hi friends! So today I am getting back to my wedding festivity recaps.  I suppose I should go in order from the proposal to the wedding, but I would rather just recap what is on my mind at the moment. 

When we first got engaged, I already knew who my bridesmaids were going to be.  This was something I had thought about quite a bit and while I have a lot of really great girlfriends, there are 4 that are on another level.  We are more like sisters than friends.  And it is a huge plus that they all know each other and get along too.  

My sister Morgan (maid of honor), cousin Kate, best friend Lissa and best friend Rachael.  


After proposing to my girls, the bachelorette weekend planning started! 😉

We knew we wanted to do a fun weekend somewhere since we all live in different places (Dallas, Nashville, and Long Island).  I had never been to New Orleans and have always wanted to go so the planning begun!  



Let me just say, my sister was the most amazing maid of honor ever.  She planned the whole trip, including activities and surprises every day so that we wouldn’t get bored or waste time trying to figure out what we wanted to do.


She rented this beautiful condo a few minutes from Bourbon street and the girls decorated the whole thing.  It was the sweetest gesture.  My sister even sent the landlord a huge box of decorations because she couldn’t fit them all in her suitcase.  (So sneaky!!)

My sister made the most thoughtful gift bags (yes, plural) for all the girls and we all just could not believe the effort and thought she put into all of them.  Every gift had a cute homemade, personalized tag.  (She is for hire, girls ;)).  The picture below is my cousin’s because I didn’t snap a picture of mine, but you get the idea.


The whole trip was so thoughtfully planned and it made for such an amazing time.  We went out to dinner, we went on a private boat, went to a drag queen show, went to a pool party, and more.  

The boat day was so fun.  Our captain for the day was Captain Vegas and he was amazing!  So inviting and let us be loud and obnoxious 😉  He even had his doggy on the boat, who we all loved!

My girlfriends are the best! I just love them so much.


We also played a million games all weekend.  The girls had so many fun games for me that had us all laughing the entire weekend.  This one in particular was hilarious.  While on the boat, my sister asked me a series of questions she had previously asked Jon.  If I got it wrong, I had to take a dare out of the pile (below of some of them) and if I got it right, I had to pick a dare for one of the girls.  Then, when we went out at night, we had to complete our dares.  I can’t even explain how funny it was.  Some of my favorites were: convince someone you are a sex therapist, convince someone you are a celebrity, slow dance with a guy at the bar, convince a cute guy you just got out of prison… the list goes on an on.  Definitely a highlight of the trip and made it really fun to have something to do when we were out at night.

My sister even planned a bridal bootcamp for us one morning because she knows I love working out.  The girls were troopers… the matching monogrammed tanks definitely helped!

I could not have asked for a better trip with better friends.  It was the best trip of my life with my best girlfriends.  I was so overcome with joy and happiness the whole weekend because of the level of thought and planning my sister put into making this trip so memorable for me.  It was truly so special.  I may have come home without a voice 🙂

I love these girls more than anything! They are the best!

New Orleans is such a fun city that I would definitely recommend to anyone planning a bachelorette trip.  If you are looking for a tame, relaxing getaway, look elsewhere! lol  New Orleans is loud and fun at all hours of the night.  The people are super friendly and the food is yummy too!

Weekend Recap 12.7.15

Welp.. it’s Monday again.  Weekends always seem to fly by, but I do have a short week so I can’t complain!  I hope you all had a wonderful weekend… I certainly did!  Let’s get to it! Linking up with Katie over at Healthy Diva Life for MMIM (Marvelous in My Monday) to share weekend fun!!  Thanks for hosting, Katie!

Our weekend consisted of a LOT of walks!  Our pups are always waiting for our next walk and the beautiful weather this weekend provided many opportunities for walking.

You may notice an extra little face in the doggie pictures.  That is because we were watching an extra pup for the weekend.  Her name is Scout and she is such a cutie.  She loves to play and cuddle.  My husband, who prefers bigger dogs, even liked her.  


Friday night was a relaxing one with some Christmas movies and wine.  My favorite kind of night. (Channeling my inner Olivia Pope with these huge wine glasses for any of you that love Scandal as much as I do :)). 


And a very green dinner with leftover spaghetti squash with pesto, kale salad, homemade guacamole, an steamed broccoli.  I love leftovers.


Saturday morning started bright and early with a Body Pump class and a light breakfast of grapefruit and kiwi.  Favorite way to start the weekend!

I received this snapchat from my husband while I was gone… he cracks me up.  


Saturday afternoon I forced brought my husband Christmas shopping with me.  It was a mad house so we didn’t get too much done.  Next, we stopped at a local bar for a quick drink before dinner at home.  I have to bribe my husband somehow to go shopping with me 😉

Next we did some cooking at home for dinner.  I have been wanting to try to make tuna steaks at home for a long time and Saturday night was the first time.  Anytime there is tuna on a menu at a restaurant, I get it.  I just love it so much.  We looked up a simple recipe (marinate the tuna steaks in lemon, garlic, thyme, olive oil, and salt and pepper), stopped to get tuna steaks on our way home, then threw them on the grill.  So easy.  They were good, even though they were a little too well-done for our liking… better luck next time.  Brown rice and sauteed spinach with roasted garlic on the side.  

Sunday started with a long walk (ofcourse) and some snuggle time.  OH the cuteness…


Then a yummy, easy breakfast.  Smoothies are my go-to breakfast when I want something fast, don’t want to cook, or want to take something to go.  I love that I can fit a ton of nutrients in one drink.


My go-to smoothie recipe is very simple: a few handfuls of spinach, a couple teaspoons of ground flaxseed, frozen mixed berries, a banana or two, and water.  Combine all ingredients and blend! SO simple and delicious! 

After breakfast I hopped on the treadmill for a quick run.  It is hard to stay motivated to workout on the weekends, but I always feel better when I make the time! I just turn on a show on my ipad and zone out.  


Sunday afternoon, I attended a required observation for Therapy Dog visits.  Riley and I are in the process of becoming a Therapy Dog team… more on that later 🙂

Sunday night we went to dinner with a couple of Jon’s coworkers and their significant others.  We tried a new restaurant and it did not disappoint.  My husband said it was the best meal he has had in a long time!  If you are in Dallas, definitely give this place a try!
