Welp.. it’s Monday again. Weekends always seem to fly by, but I do have a short week so I can’t complain! I hope you all had a wonderful weekend… I certainly did! Let’s get to it! Our weekend consisted of a LOT of walks! Our pups are always waiting for our next walk and the beautiful weather this weekend provided many opportunities for walking.
You may notice an extra little face in the doggie pictures. That is because we were watching an extra pup for the weekend. Her name is Scout and she is such a cutie. She loves to play and cuddle. My husband, who prefers bigger dogs, even liked her.
Friday night was a relaxing one with some Christmas movies and wine. My favorite kind of night. (Channeling my inner Olivia Pope with these huge wine glasses for any of you that love Scandal as much as I do :)).
And a very green dinner with leftover spaghetti squash with pesto, kale salad, homemade guacamole, an steamed broccoli. I love leftovers.
Saturday morning started bright and early with a Body Pump class and a light breakfast of grapefruit and kiwi. Favorite way to start the weekend!
I received this snapchat from my husband while I was gone… he cracks me up.
Saturday afternoon I forced brought my husband Christmas shopping with me. It was a mad house so we didn’t get too much done. Next, we stopped at a local bar for a quick drink before dinner at home. I have to bribe my husband somehow to go shopping with me 😉
Next we did some cooking at home for dinner. I have been wanting to try to make tuna steaks at home for a long time and Saturday night was the first time. Anytime there is tuna on a menu at a restaurant, I get it. I just love it so much. We looked up a simple recipe (marinate the tuna steaks in lemon, garlic, thyme, olive oil, and salt and pepper), stopped to get tuna steaks on our way home, then threw them on the grill. So easy. They were good, even though they were a little too well-done for our liking… better luck next time. Brown rice and sauteed spinach with roasted garlic on the side.
Sunday started with a long walk (ofcourse) and some snuggle time. OH the cuteness…
Then a yummy, easy breakfast. Smoothies are my go-to breakfast when I want something fast, don’t want to cook, or want to take something to go. I love that I can fit a ton of nutrients in one drink.
My go-to smoothie recipe is very simple: a few handfuls of spinach, a couple teaspoons of ground flaxseed, frozen mixed berries, a banana or two, and water. Combine all ingredients and blend! SO simple and delicious!
After breakfast I hopped on the treadmill for a quick run. It is hard to stay motivated to workout on the weekends, but I always feel better when I make the time! I just turn on a show on my ipad and zone out.
Sunday afternoon, I attended a required observation for Therapy Dog visits. Riley and I are in the process of becoming a Therapy Dog team… more on that later 🙂
Sunday night we went to dinner with a couple of Jon’s coworkers and their significant others. We tried a new restaurant and it did not disappoint. My husband said it was the best meal he has had in a long time! If you are in Dallas, definitely give this place a try!
