A warm walk on Thursday afternoon (65 degrees) in December..I’ll take it! Someone needed a little stretch after that long walk! 😉
I am obsessed with roasting squash this time of year! There is just something about a warm meal with squash. And I don’t discriminate against different types… I love them all! My favorites are: acorn squash (pictured left), Spaghetti squash (pictured right), and butternut squash. I just cut them open, drizzle with extra virgin olive oil, add salt and pepper and roast at 400-450F for 45minutes-1hour (times and temperatures differ depending on the oven… squash is ready when tender to the touch with a fork).

Roasted acorn squash stuffed with roasted broccoli, brussel sprouts, and garlic. SO good!
Spaghetti squash with homemade pesto, sauteed mushrooms, onion, and garlic and with a side of kale salad with a warm vinaigrette dressing (olive oil, red wine vinegar, sauteed onions and garlic, craisins, honey, lemon and chopped almonds).

Favorite way to cook brussel sprouts: 1. chop off end of brussel sprouts, peel off outer layers, cut in half or fourths if really large. 2. place in a bowl. 3. drizzle with extra virgin olive oil, balsamic vinegar, salt and pepper. 4. toss and roast in oven at 400F for 25-30 minutes. Delicious every time!

I love all those types of squash too! I need to pick up more next time I’m at the store. Lately, I’ve been really enjoying my couch time on the weekends. When it’s chilly outside, that tends to be my routine.
