My husband and I absolutely love Thai food. It is our favorite take-out food and we occasionally try to recreate recipes at home (with some success). One of my favorite dishes to order from a Thai restaurant as an appetizer is garden rolls. I just love them so much. I have been known to make a whole meal out of them, too :).
The thing I love the most about garden rolls is that they are so versatile and adaptable. You can add any veggies you want, any protein (or leave it out), and any sauce your heart desires. I have made so many variations of this recipe, but today I will share my latest garden roll trial!
I could eat these every meal of every day. They are just so good. There is something about the crunchy vegetables with the chewy rice paper that is just so darn good.
The latest batch of garden rolls included broiled tofu (marinated in olive oil, balsamic, lemon juice, garlic powder, chili powder, pepper, and salt), sliced carrots, zucchini, avocado, and lettuce.
The avocado makes the rolls creamy and is such a nice addition.
I will occasionally make my own peanut dipping sauce that looks something like this one. But often I just eat them plain! They are that good!
Garden rolls do take some time to assemble (chop veggies, roll up rice papers), but they are so worth it.
My favorite fillings include: carrots, cucumber, zucchini, peppers, avocados, tofu, shrimp, crab, cabbage, lettuce, rice noodles, basil leaves, and sprouts! Feel free to substitute and modify them to appeal to your taste!
