Weekend Recap

And just like that, it is Monday again.  At least this week is a short one with Thanksgiving on Thursday.  We are heading to my in-laws on Wednesday and praying for no travel delays/issues.  Until then, here is my weekend in a nutshell.  

Friday night started off on a fun note! We attended the Dallas Mavericks game with some friends!  We had horrible, cheap seats, but it was fun for the experience! 

Saturday morning started with a Body Pump class (my fav!) followed by a yummy breakfast of two rice cakes topped with smashed avocado and 3 eggs over easy (with lots of chili powder).  Such an easy and delicious meal.


Saturday afternoon we took a long walk with our pups (+1 we are dog sitting) in the chilly, windy weather before heading out for an early Thanksgiving dinner with some family in Dallas.


I made this recipe: quinoastuffing and it was a big hit! 


I also made my grandma’s stuffing (which is just a basic stuffing recipe) and it was a hit as well!  My husband’s aunt is an amazing cook and we had quite the spread.  It was so delicious and we left with full hearts and full bellies.  So fun to spend quality time with family eating, drinking and playing games!

Sunday was a lazy one… just the way we like it.  It started off with a huge bowl of fruit –> banana, mango, and pineapple. SO good.  


Jon installed a new faucet in our kitchen (much needed as our old one was leaking).  And I snapped pictures of the sweet pups hanging out and acting innocent ;).


I am off to get some rest for an early wake up call tomorrow, but will be back soon with my favorite chia seed pudding recipe!!
